2 Welcome to the New Zealand School of Food & Wine Founded by Celia Hay in 1995, the New Zealand School of Food & Wine has been educating the next generation of chefs, restaurant & café owners, wine professionals and food lovers. Located in Auckland s viaduct, NZSFW offers small classes with an emphasis on hands-on practical experience. PATHWAYS TO FURTHER STUDY Graduates can return to NZSFW to study the Certificate in Cookery or the Professional Wine (Sommelier) programme. The New Zealand School of Food & Wine is the only WSET authorised provider in New Zealand offering a 12 week classroom based teaching programme. WSET is the qualification awarding division of the London Wine & Spirit Education Trust and accredited by the British qualifications authority. These qualifications are essential for students wishing to study for the Masters of Wine. This intensive programme offers the hospitality professional or wine enthusiast an international qualification that provides a thorough understanding of the principle wines and spirits of the world and key factors influencing style, quality and value. Each week you will learn about international wines from all major wine producing countries such as France, Spain, Italy, Chile and Australia through tastings and selfdirected study. You will study the principles underlying food and wine matching. There will be a visit to well-known local vineyards where you will learn about viticulture and wine making practices from highly respected wine makers. The programme includes practical hospitality workshops. 5 Short Wine Courses Our short courses are ideally suitable as professional development for those currently working in hospitality or for the wine lover who has a passion for more knowledge. NZSFW Certificate in NZ Wine - 10 days This popular two week introductory course offers you the opportunity to study about wine, viticulture, wine making, and matching food with wine. It focuses on the main wine varietals grown in New Zealand and the styles of wine that have built their reputations. You will look at the European traditions that have influenced New Zealand winemakers as well as the winemaking process. You will learn how to taste and evaluate wines and the principles that underscore food and wine matching. A day trip to visit three respected local vineyards is included in this course. Graduates receive the WSET Level 1 (Foundation) Award, NZSFW Certificate in Wine and NZQA unit standards. Starting Dates 28 Jan May September 2014 Cost: NZ$1,125 Includes WSET text books, exams and day trip to Waiheke Island. WSET Level 2 (Intermediate) Award This intensive programme explores the wines & spirits of the world. It is perfect for people who are passionate about wine as well as those working in the industry who wish to gain more knowledge and a well respected international qualification. You will learn about the major wine growing regions from around the world, understand their grape varieties and styles of wine as well as interpret their labels. This course also covers how to apply the principles of food and wine matching, give basic guidance on appropriate selection, storage and service of wines and spirits and understand the principles of wine tasting and evaluation. This course requires an additional 30 hours of self study and concludes with a WSET multiple choice examination. Graduates receive the WSET Level 2 (Intermediate) Award in Wine and Spirits. The Certificate in Cookery programme concentrates on the principles of French cuisine and provides a thorough grounding in the culinary arts. For 16 weeks you will be immersed in cooking, eating and thinking food, ingredients and wine. Speed, accuracy and consistency are characteristics that you will develop and as your confidence grows you learn to correct mistakes, adjust seasoning and enjoy experimenting with flavours. Each week has a specific theme. The programme commences with basic knife training and moves to stock making, soups and classical sauces. Baking is as important element with breads, pastries, cakes, tarts, and sponges. Other sessions include ice creams, sorbets, custards and meringues. Butchery skills such as boning and filleting of beef, lamb, chicken and fish are also covered. A Mediterranean workshop teaches pasta making and you are able to invite a friend to sample a Mediterranean meal that you have designed, costed and cooked. Asian ingredients are also introduced and integrated into the menus. Menu planning and costing helps you develop an awareness of food costs while learning how to create a well balanced menu. During the programme you will work individually to design menus for specific occasions and within a set budget. This helps your understanding of the skills required to succeed in a hospitality and culinary environment while further developing your general knowledge of cookery. Wine is an important component of the programme and your understanding of its relationship with food is exciting and stimulating. You will learn how to evaluate wines and be introduced to the wine making process. A one day vineyard and winery tour is included in the programme. You will also cover the principles of matching wine with food. * New Zealand students receive a subsidy from the New Zealand Government. 7 Restaurant & Café Management Learn how to set up your own business & gain the specialist skills you need to have an exciting career in hospitality. Module 1: Setting Up What you need to know about the physical set up of a restaurant, bar or café. This includes basic costings. Module 2: Operations Management Covers the principles of small business management. You will learn about practical operational procedures as well as set-ups, point of sale software and equipment. Module 3: Accounting, Inventory & Software The computing component demonstrates how to use Microsoft Excel to create templates and spreadsheets for a host of applications including budgets, ordering, cash flows and profits and loss statements. The accounting component demonstrates how to identify business costs and adjust prices accordingly to make a profit. Module 4: Customer Service, Staffing & Team Leading You will learn about customer service expectations, how to take orders, deal with complaints. We will also cover staffing-interviewing, hiring and training. The group will analyse how organisations build teams for assembling a front of house staff. Module 5: NZSFW Certificate in Wine & WSET Level 1 Award in Wines This qualification provides a straightforward introduction to wine. You will learn how to taste and evaluate wines and the principles that underscore food and wine matching. You will learn basic product knowledge and skills for the storage and service of wines. We cover the main wine grape varieties, wine styles and food and wine matching basics. Module 6: Coffee & Barista training The course will cover basic espresso understanding, the machine and its components, dosing, tamping, extracting and basic maintenance as well as texturing to be able to prepare difference espresso based beverages. You will learn about the origins of coffee, the different coffee varieties and the terminology used in the coffee industry. Module 7: Marketing & Advertising Learn about marketing concepts, social media and branding strategies to ensure your hospitality business success. Module 8: Food Safety & Licence Controller Qualification (LCQ) This module will cover the requirements for you to obtain the Food Safety and Licence Controller qualifications in order for you to apply for your General Manager s Certificate. (To earn these qualifications you must return for assessments). Module 9: Business Plan & Mentoring This module covers how to write a business plan in order to set up your own business. 8 Other Courses 3 Day Cocktail & Mixology Over 3 sessions you will start with classics such as Margarita, Cosmo, Mojito and Martini and progress into mixology and start to create your own drinks. You will learn new skills and tricks of the trade that will build your confidence at making and presenting cocktails at home or at work. Run in our premises in the viaduct, you will get a feel for the industry. A certificate of attendance will be awarded at the completion of this course. Session Times: 6:30-9:30pm 3 Wednesday Evenings Cost: NZ$295 Dates on website Cooking 101 This introductory cooking course starts with basic knife skills and vegetable cuts, classic mayonnaise and vinaigrette to create delicious salads. On day two, you will bake chocolate muffins and cheese scones, vegetarian quiche and a batch of bread to cook off on day three when we cover cooking with eggs - poached and scrambled eggs and making hollandaise for eggs benedict. You get to take home what you have made - if you don t eat it first! Bring along some containers. Session Times: 4-7pm Please view our website for dates. 3 Wednesday Evenings Cost: NZ$295 Essentials of Cooking Fine Food at Home Through a well-structured programme, you will be able to develop skills to make you a confident cook in your own kitchen. The recipes are fast, classic and interesting. They are well suited to cooking at home for dinner or for a special dinner party. You will receive a workbook with recipes and explanations of techniques and tips, NZSFW apron and a certificate of attendance on completion at the conclusion of the course. It is designed to give you the practical knowledge to prepare espresso coffees in a café environment. The course will cover espresso recipes, terms and techniques. You will learn about the different coffee roasts, grinds, storage of coffee and how to clean a coffee machine. A certificate of attendance will be awarded at the completion of this course. 11 LCQ: Sale of Liquor To work as a duty manager in charge of a business that sells or supplies alcohol, you must hold the LCQ or General Manager s qualification. NZSFW offers a comprehensive one day seminar to lead you through the Sale of Liquor Act. Assessment will take place on the following Tuesday.
