2 About The School Don Ignacio Culinary Arts School & Restaurant is an educational institution grounded on the classics yet on the cutting edge of academic, culinary, and service philosophies. Students will develop a strong sense of professionalism to prepare them for success in any market or segment of the industry of their choosing. Don Ignacio Culinary Arts School Enables Students To: Demonstrate and combine a solid knowledge of cooking and baking. Establish and maintain high standards of sanitation complying with international standards. Demonstrate a solid knowledge of food preparation, presentation and service techniques used in basic culinary arts, baking and pastry. Exercise problem-solving techniques to modern culinary demand. Work as team leaders or team members. Plan and present a grand buffet. Exhibit working knowledge setting up and operating a restaurant, baking or pastry facility. Extend and adapt the classroom experience to any need or demand of a constantly changing industry. Develop a career portfolio.

3 Our Academic Programs ASSOCIATE OF SCIENCE DEGREE IN CULINARY ARTS (16 months) Students learn the theory, practice, and art of cooking. The comprehensive curriculum combines theory, techniques, efficiency, and teamwork ensuring a solid and fluent program. CULINARY ARTS DIPLOMA WITH CONCENTRATION ON RESTAURANT OPERATIONS (12 months) This program has been designed to provide the theoretical foundation and technical skills necessary to succeed in the food service industry with application to the restaurant environment. BAKING AND PASTRY DIPLOMA (12 months) Students are immersed in techniques, such as: pastry dough production, basic pastry creams, basic cake production and bread production. As students grow more confident, they build upon skills they have mastered in earlier classes to create increasingly complex cake and dessert dishes and eventually, full dessert menus. CHEF FOR A DAY Join our chefs for a day of cooking and learning while experiencing the flavors of the world.

4 International Exchange Programs Through our partnerships with other leaders in gastronomy, culture, and education; after graduation; students at Don Ignacio Culinary Arts School have the opportunity to continue their education. INSTITUT PAUL BOCUSE Lyon, France The Paul Bocuse Institute, recognized as the leading gastronomy school in France, chose the USIL s Culinary Arts School and the Universidad San Ignacio de Loyola Hospitality Management Program as the exclusive Peruvian members of the Paul Bocuse Institute - Worldwide Alliance in Peru. Thanks to this exclusive alliance, graduates from Don Ignacio Culinary Arts School will be able to specialize in a 16-week gastronomy program or to study Restaurant Management in a 4-month program in this prestigious culinary school. HOFMANN HOTEL MANAGEMENT SCHOOL Barcelona, Spain The agreement with the Hofmann School enables our graduates in Culinary Arts to benefit from traineeships in a wide variety of programs offered in Barcelona. APICIUS INTERNATIONAL SCHOOL OF HOSPITALITY Florence, Italy Our graduates will be able to study in this school, for one or more semesters, different courses in the areas of culinary arts, baking and pastry, enology, hospitality management and food publicity. WALT DISNEY WORLD RESORT - CULINARY TRAINING PROGRAM Orlando, USA The Culinary Training Program enables our graduates from Don Ignacio Culinary Arts School to work, for 12 months, in the exclusive hotels of Walt Disney World in Orlando, Florida.
