4 1 Introduction Welcome among people requiring more from their coffee machines than JUST ability to make good coffee. Congratulations! You have selected a machine that combines efficiency, saving of energy and the worldwide acknowledged Egro quality. We wish you good speed. 1.1 Copyright protection Egro Coffee Systems AG reserves the right to make any technical changes to products described in these instructions without a prior notice in order to continuously develop and improve the machine. Produced and printed in Switzerland. 1.2 Purpose of operating instructions These instructions are specially drawn up for employees operating, servicing, maintaining and repairing the machine. The instructions describe the functions and operation of your machine. All operating persons must carefully read and understand these instructions before starting their work at the machine. Operating instructions should be stored near the machine. A failure-free functioning of the machine is guaranteed provided that all these instructions are followed. In the event of disregard, especially concerning the chapter Important Safety Regulations, the device may present a hazard for operating and servicing personnel. Additionally, damages to the device or surrounding devices may arise. No liability will be assumed for damages arise through disregard of these operating instructions. 1.3 Warranty Warranty and ex-gratia payments offered by Egro Coffee Systems AG shall be valid provided that your coffee machine is installed and maintained on a regular basis by an Egro contract partner. Any changes or installation of components not approved by the producer will terminate the warranty. 1.4 Symbols Different symbols are used in these operating instructions. Meaning of symbols is described below: Danger This symbol is placed at safety instructions of special importance. Following of these instructions is essential. Disregard of instructions may result in injuries to user. It concerns your own safety! Attention This warning symbol is placed at safety instructions of special importance. It means that the relevant instructions should be strictly followed in order to prevent damages to the machine. This symbol is placed to important product notes. It means that they give relevant notes or additional information about the system Page 3

5 1.5 Quality assurance Egro Coffee Systems AG applies the QA-system based on EN 29001/ISO Sources of danger (example) Danger Product temperature at dispenser nozzle is about 82 C for coffee, 98 C for hot water and 120 C for steam. Danger of scalding! 1.7 Important safety instructions (example) Attention Do not dry towels on the machine; air perforation slots must be free. It may hinder the internal air circulation and lead to damages through overheating. 1.8 Conventional use The Series 90 is a full automatic coffee machine. Coffee drinks are made of fresh coffee beans and fresh water heated in the machine. The machine is designed for use in professional gastronomy environment. The machine is intended to be used as well in household and similar applications such as: - staff kitchen areas in shops, offices and other working environments - farm houses - by clients in hotels, motels and other residential type environments - bed and breakfast type environments A precondition for faultless functioning of the machine is professional connection to water and power supply and sewage system. These operating instructions must be read prior to commissioning the coffee machine together with additional devices! 1.9 User This appliance is not intended for use by persons (including children) with reduced physical, sensory or mental capabilities, or lack of experience and knowledge, unless they have been given supervision or instruction concerning use of the appliance by a person responsible for their safety. Children should be supervised to ensure that they do not play with the appliance Page 4

7 2.2 Main switch The main switch (1) is located behind the sloped cover behind the cup tray on the left. At the models ( ) the main switch is a key switch (2). 2.3 Mode switch A key switch with 12 positions for changing the mode is located on the right of the keypad. 9 2.5 Keyboard elements Display The display is the LCD-window on the right above the keypad. During operation texts and notes are displayed explaining the process flow. Also failures can be identified with the help of relevant messages. In these instructions display texts and messages are presented as follows Example: Please select :34 Machine is ready for operation Stop key This key is also called key 0. The stop key is used for following functions: Cancelling of a product being dispensed Deleting of a pre-selection Programming Starting of various cleaning programs Product keys Every product key can be programmed individually. During installation the Egro technician assigns every key a specific product according to your requirements and wishes. Keys 1 to 10 Coffee products Keys 11 to 13 Different steam programs Keys 14 to 16 Hot water program The symbols below the keys 1, 2, 3, 4, and 5 refer to use of these keys in the key position 3 (Programming). Please refer to section 7 "Programming" Page 8

12 3.2.1 Adding milk Add water in the heating tray and milk in the milk container prior to initial operation Procedure: Open the cover and remove the milk container (1), add ca. 0,5dl water in the heating tray (2). Place a plastic bag (3) in the milk container; fasten the four bag holes to cover holders on the sides. Place back the milk container and add milk max 5 l. Reinstall and close the cover. Danger Do not exceed the specified water amount! If heating tray is overfilled the water will overflow when milk container is inserted. Danger of short circuit! The water in the heating tray is necessary for heat transmission. When there is no or not enough water in the heating tray the milk may possibly not heated or not heated enough. 3.3 Product selection Shortly press the desired product key. Wait until the product is supplied. No pre-selection is available Page 11

13 4 Operation Coffee machine 4.1 Preparations Open the water supply shut-off valve Switch on the main switch Check the content of the beans hopper Fill in the beans hopper remove the cover Add beans Close the cover 4.2 Switch on Switch on the main switch The coffee machine starts the switch-on program during which the system is heated up. Heating/Flushing is displayed. Heating up takes about 10 minutes. As soon as the system has reached the necessary temperature the following will be displayed: Please select :34 The coffee machine is now ready for operation. The products available in mode 1 or mode 2 have been adjusted by the service technician. Danger After switching on hot water is dispensed from coffee or hot water dispenser nozzles. Danger of scalding! Page 12

14 4.3 Product delivery Machine is ready for operation when Please select is displayed. Please select :34 In order to obtain a drink (coffee, milk drink or hot water) shortly press a relevant product key Bean coffee Place a cup(s) under the dispenser nozzle Shortly press the desired product key The following is displayed. 15 4.3.2 Grinded coffee (manual dosage) Alternatively the product keys may be programmed for use with grinded coffee (e.g. caffeine free). Such drinks can be obtained semi-automatically as follows: Press product key Insert coffee powder is displayed. Open the flap; fill in grinded coffee Close the flap Coffee is brewed Product Supply Milk products The machine enables to obtain various milk-coffee products. A precondition is a machine with relevant equipment. We differ following products: Hot milk with and without coffee (available with Milker only) Milk foam with and without coffee (available with Milker or Cappuccinatore) Supply of milk foam by keystroke (possible manually with Milker or Cappuccinatore) Use only milk (UHT or pasteurised milk) with a fat content of 1,5% to 3,5% Milk Supply (only Milker) Place a cup(s) or glasses under the milk Supply nozzles Shortly press the desired product key on the Milker. Depending on the product hot milk is dispensed Page 14

If supply duration = 0 is assigned to one of the keys such key works as an On/Off key. 17 4.3.5 Steam (if applicable) To the three steam keys three different product temperatures can be assigned. If the end temperature = 0 is assigned to one of the keys the steam will not be automatically switched off. The steam function is activated by pressing the relevant steam program and with the help of the steam cock. With the steam cock the steam amount can be adjusted as well. When steam is flowing the relevant LED is blinking. Additionally, the program number, the desired and the actual temperature of the product are displayed if enough space is available. The steam program can be changed anytime by pressing another steam key. Steam Immerse the steam nozzle in the container Press the required steam program 2 times if LED is not burning or 1 time if the LED is burning. Turn the steam cock until the required amount of steam is reached The product is heated up to the adjusted temperature Steam supply can be stopped by closing the steam cock. The steam program can also be stopped by pressing the relevant key. When heating up a liquid with steam make sure that the steam Supply nozzle is fully immersed in the liquid. 18 5 Special functions 5.1 Pre-selection During supply of a coffee drink, other coffee products can be pre-selected. Pre-selection can be adjusted between 1 and 16 in the product menu, thereby pre-selection = 1 means that only one coffee per keystroke can be selected. For self-service as well as for advance payment (e.g. coins) the pre-selection is set on 1. Coffee beans are grinded for a pre-selected coffee as soon as the previous brewing process is running and the grinding position is free. Example of the display: Coffee Presel. Coffee 2: 3 Coffee No 4 has been prepared by 40 %, coffee No 2 has been pre-selected 3 times: 5.2 Cancelling of a selected product Product Supply can be cancelled anytime through activation of the stop key. When a coffee has been pre-selected the pre-selection is cancelled first and then after pressing the stop key one more time, the product being dispensed is deleted. 5.3 Switching off It is recommended to switch off the machine for longer operation pauses (nights, weekends etc.) Switching off the machine through main switch Switch off the main switch or the key switch Switching off through keyboard Insert key Turn the key in Pos 1 Standby is displayed 5.4 Automatic start If this function has been programmed by your service partner during commissioning, your machine will start automatically after the adjusted time period, provided that following conditions are fulfilled. Daily cleaning in accordance with the description (see 8.1) must be completed by the moment of the machine switching off automatically (Standby). Only then the machine can start automatically next day at the adjusted time Page 17

19 6 Operation modes Mode is an operation mode of the machine. The machine behaves differently in every mode or has different functions. The machine has 11 different key positions in total. The modes 4-11 are available for the service technician only and can be reached only with a special key. 6.1 Mode switch Key switch with 12 settings (0 to 11). It is installed in the top-right corner of the keyboard. Various key configurations allow one user to access all the functions or only some of them. Settings 0: Settings 1: Settings 2: Settings 3: The machine is switched off but is still heated. Display: STAND-BY. The machine is in the standard mode. This means that coffee, tea and steam are available regardless of any token, coin, or external registration systems which might be connected. The machine can be operated via interfaced token, coin or external registration systems. The machine can be operated without restriction if no such system is connected. Counter reading/programming by owner. The owner can read the daily total or the grand-total counter and can adjust the coffee powder, cup volumes, etc Page 18

20 7 Programming In mode 3 (Programming) the following functions are available for the operator: Counter: Reading off the daily total data (pieces and amount) Deleting daily total data Reading off overall total (pieces and amount) Adjustments: Deleting of counters cannot be undone! Product price Water volume (cup filling amount) Grinded coffee amount Pre-Infusion Tea time (filling amount) and price Steam temperature (product end temperature) Price and time for external products (Milker) Date and time. Waiter pen assignment 7.1 Meaning of the Buttons in Programming In mode 3 (Programming) the key 0 (STOP) as well as product keys 1, 2, 3, 4 and 5 are used for moving in menu tree and insertion of adjustments. 22 7.2 Adjustments All procedures require selection of the key switch position 3. The following values (parameters) can be adjusted separately for every product. The product can be identified through product number that equals the key number. Products 1 to 10 are coffee, 11 to 13 steam and 14 to 16 hot water. In following examples the product number 4 is mentioned. 28 7.2.6 Programming Waiter pens This function is needed when using or making amendments to waiter pens. Turn the key to pos. 3, Daily total is displayed Menu: Configuration 1 Parameter: Function: Waiter code Here the waiters number (the number on the waiter pen) and the code of waiter pen can be inserted or amended. 29 7.3 Counters There are two integrated software counters in the machine. Both of them store the number of items and total sum for every single product. The daily counter saves the number of items and the total sum for every day separately provided that it is reset after reading out. This can be done by operator anytime: at the end of a day, once per week or at irregular intervals. The total counter is a permanent counter that can be reset (deleted) by a service technician only. Reading out the data of the total counter is possible anytime. When using waiter pen (when this option is available) the total sums of every single waiter pen are stored. 32 8 Maintenance In order to meet the hygiene requirements of the coffee machine as well as the food regulation the Series 90 must be cleaned in accordance with the following instruction. 8.1 Daily cleaning The daily cleaning comprises following items: o Coffee cleaning o o o o o o o o Milk cleaning Cleaning of cappuccino nozzles Bean container (automatic dosing) Waste container Drip grid Drip tray Housing Cooling device Automatic cleaning program For cleaning the inside of coffee machine (brewing chamber, sieves, hoses) an automatic cleaning program is used. The cleaning tab is inserted in the manual dosage flap. The automatic coffee cleaning program must be activated once a day at the minimum. For cleaning only Egro cleaning tablets can be used In machines with Cappuccinatore option a hose from drip tray to coffee nozzle must be placed, so that the small drip tray under the Cappuccinatore is not filled with flushing water. (see pict. 1) Page 31

33 The cleaning program is activated through the stop key. Depending on the model the procedure differs slightly. For machines with automatic dosing the tab is inserted in the slot behind the dosing device. Following the stop key must be pressed. Milker cleaning duration approx. 20 min. Selection Free is displayed. Machine is ready for operation. If the running cleaning program is cancelled by switching off the machine, the cleaning will be repeated when the machine is switched on again. This guarantees that no cleaning agents remain in the machine that could worsen product quality Automatic milk cleaning Components in contact with milk must be cleaned once a day at the minimum. During the flushing program no other functions of the machine can be activated. The cleaning program with cleaning agent cleans the milk supply lines such as pumps and hoses. The cleaning program for the Milker starts automatically together with the cleaning of the coffee machine. However, it is possible to start cleaning of the Milker independently from the cleaning of the coffee machine, e.g. when the Milker is not needed until the end of the business day, and is therefore cleaned earlier than the coffee machine. After cleaning always the flushing program ( or ) must be activated Procedure (Coffee machine + Milker simultaneous cleaning) 1. Remove and dispose of bags with milk residues. 2. Add 2-3 litres warm (not hot) water with 0,5 dl special cleaning agent in the milk container. 3. Start the coffee machine cleaning program as described under Cleaning programs for coffee machine and Milker run fully automatically (duration: ca. 20 minutes). After that both devices are switched into standby mode (heating off) Page 32

34 Flushing program In order to remove all residues of the cleaning agent the machine must be flushed thoroughly before the next start of the Milker. If the coffee machine and the Milker were cleaned together previously and the Milker switched on at the moment of switching on the coffee machine the text "MILKER FLUSHING" reminds that the Milker must be flushed. In all other cases the flushing program must be started manually. 1. Add 2-3 litres cold water in the milk container(display Milker flushing) 2. Press shortly any key on the Milker, flushing starts (duration ca.2 minutes). When pressed again, flushing can be cancelled or started again. 3. When the water has been flushed, press the STOP key on the coffee machine. 4. Place a new bag in the container and fill in milk, or switch off the coffee machine and the Milker Procedure (only Milker cleaning) 1. Add 2-3 litres warm (not hot) water with 0,5 dl special cleaning agent in the milk container. 2. Turn the key switch of the coffee machine to pos. 3, Daily total... is displayed 3. Press the product key 4 on the Milker for ca 2 seconds. 4. Turn back the key switch of the coffee machine. 5. The cleaning program for the Milker runs fully automatically (ca 20 minutes). After that Milker heating is switched off (Standby). In case of longer stops Milker must be switched off! Flushing program 1. Add 2-3 litres cold water in the milk container (Display Milker flushing) 2. Turn the key switch of the coffee machine to pos. 3, Daily total... is displayed. 3. Press alternately Milker keys 1 + 2, until the whole water has been used. 4. Turn back the key switch of the coffee machine. 5. Fill in milk (see 3.3) 6. Milker is ready for operation As long as the message "MILKER FLUSHING" is displayed the coffee machine cannot heat! This message must be accepted by pressing the STOP key on the coffee machine Page 33

35 8.1.3 Manual cleaning of milk supply lines of the Milker Danger Prior to removing the foam nozzle set the main switch to "0". The device is ready for operation even if the foam nozzle has been removed. Danger of scalding through the exiting hot milk. 1. Lift off the cover (1). Release and remove the milk hose (2) and pull out the milk container (3). Clean all details with soap and rinse. Clean the heating tray (4), remove possible water residues. Place back the milk container (3) and the milk hose (2) Page 34

36 2. Remove the chrome cover (1). Press the locking head (2) and remove the foam head (3) by twisting it. 3. Pull forward the coffee dispenser nozzle (4) and demount the foam head (5). 4. Pull out the labyrinth resistor (6). Place all details in the prepared cleaning liquid and leave in for ca 30 minutes, rinse afterwards in clean water Page 35

37 5. Remount and reinstall all details. Place a new plastic bag in the container and install the floaters and the suction hose Manual cleaning of Cappuccinatore and milk suction hose 1. Prepare cleaning agents as described on the package. 2. Demount foam head. 3. Pull off the air valve, demount Page 36

38 4. Remove and demount intake socket, hose and foam head. 5. Place all details in the prepared cleaning liquid and leave in for ca 30 minutes. Clean the steam Supply nozzle. 6. Rinse all details in clean water Page 37

39 7. Remount and reinstall all details. Then immerse the suction hose in a container with clean water and activate the foam key for ca 10 seconds. Turn the adjustment knob so that an optimal foam quality is achieved Page 38

40 8.1.5 Manual cleaning of cooling box Open the door (1) of the cooling box. Remove the suction hose with coupling unit (2) inside the door and the milk container (3). Clean the suction hose together with the coupling unit and milk container with cleaning agent and then rinse well in warm water. Reinstall the suction hose together with the coupling unit and milk container (Suction hose must not be kinked). Close well the door of the cooling box Storage and Supply of milk sets highest requirements to hygiene. A first-class quality of drinks can only be achieved when strict cleanliness is kept. The device must be cleaned on a daily basis! Attention The device must never be immersed in water! Do not clean by a water hose, pressure air or steam! Damages to the machine, danger of electric shock or short circuit is possible when installing the machine Cleaning of bean container Due to hygiene requirements the bean container and the cover must be cleaned with a regular cleaning agent inside and outside on a daily basis. No solvents, acidic or scraping agents must be used! Cleaning of waste container, drip grid and drip tray Due to hygiene requirements the waste container, drip grid and drip tray must be thoroughly cleaned several times a day with a regular cleaning agent. First of all the milk residues should be fully removed from drip grid and drip tray. No solvents, acidic or scraping agents must be used! Cleaning of housing Due to hygiene requirements the housing must be cleaned once a day with a regular cleaning agent. No solvents, acidic or scraping agents must be used! Page 39

41 9 Service-messages The following display messages refer to maintenance activities. 9.1 Display message Waste container full The waste container is full. Therefore, all coffee functions are disabled temporarily. Empty and clean the waste container. When pulling out the waste container Drawer full is displayed. The waste container can be inserted only if emptied. After the waste container is put back the message is deleted. The coffee functions are enabled again. This message does not apply for machines with an integrated waste removal Removal of waste container 1. Open the cover towards front side 2. Pull out the waste container and empty, clean and put back the container Page 40

42 10 What to do when... Often malfunction is connected external reasons. Check your machine on the basis of the list below before contacting the Egro customer service. When... nothing is functioning anymore instead of coffee hot water is dispensed only no coffee products are functioning instead of milk foam only steam is dispensed Error ** (* a number) Check whether... the power supply is functioning the fuses are in order the power plug is inserted correctly the main switch is switched on the bean containers are filled the sliders of bean container are open the milk container is not empty the milk hose is fully immersed in the milk container the milk foam nozzle is not dirty there is no obstacle in the water supply of the house the malfunction message is still displayed when you switch off and on the machine from the main switch. If the malfunction cannot be removed write down the Error** number and contact the Egro customer service. Danger Do not open the machine! There are no components inside the machine that can be adjusted by the user. Danger of life through electric shock, scalding and squeezing danger! Page 41

45 12 Installation and commissioning Danger Installation and commissioning must be carried out by an Egro service technician or trained Egro representative in consideration of all local installation regulations Installation The Series 90must not be installed rooms were water hose or high pressure cleaning equipment is used! The distance from rear panel of Series 90to the wall must be at least 4 cm (air circulation). Leave enough space on the top to be able to fill in coffee beans. Do not install near heat sources, keep enough distance (heat distortion from coverings of devices). Do not close air perforation slots! Place the Series 90 on a stable basis! Unevenness can be adjusted by screw feet. Make water supply connections Before the water supply hose a water tap and a backflow preventer (by the customer) must be installed in an accessible manner. When lengthening the supply hose a taste neutral cloth covered hose should be used. The diameter should not be less than the one of the delivered supply hose. Prior to connection the water supply line and hose must be flushed so that no filth particles reach the Series 90. Test all connections for leaks Water preparation By water hardness of more 5 dkh or. 9 fkh (German or French carbonate hardness degree) water softener must be used. After water softener the residual hardness of water should be approx 5 dkh or 9 fkh. Water softeners regenerated by cooking salt are not suitable for coffee machines with steam boiler! Especially connection of such machines to house water softening device should be avoided. Attention No warranty will be assumed for water leading components if these instructions are not followed Page 44

46 12.3 Connection of water drain The drain hose should slope towards drain. The supply and drain hoses must not be deviated or squeezed Electrical connection Electrical connections must be made by an authorized electrician only An electrical switch (power switch) and/or a power socket must be installed in an easily accessible place in upstream direction. The switch must effectively separate the Series 90 and all poles from power supply. Thereby the contact opening must be at least 3mm. Follow the data on the type plate when making electrical connections! Should the connecting line of the device be damaged it must be replaced by producer or its customer service or a person with a similar qualification to avoid hazards. 13 Consumable supplies Spare parts and reparation works are delivered and carried out by your Egro technician only. Consumable supplies can be directly ordered on the basis of the list below. Always indicate the order number!
