2 Level 2 Award in Food Safety in Catering The Chartered Institute of Environmental Health certifies the Level 2 Award in Food Safety in Catering. The award provides a recognised national standard and will benefit anyone working in a situation where food is prepared, cooked and served. It is relevant to all catering operations such as pubs, clubs, hotels and guest houses, restaurants, day nurseries, fast-food outlets and care and nursing homes. The course comprises 1 full day of lectures, videos and group exercises. At the end of the course there is a short written test. The qualification focuses on eight key areas: The Law Food safety hazards Refrigeration, chilling and cold holding of foods Cooking, hot holding and reheating of foods Food handling Principles of safe food storage Cleaning Food premises and equipment Training can be provided in languages other than English if required, or taken as an oral test. Please contact us for details. The course is being offered to Gloucester based businesses for 47 per candidate, and 59 per candidate for all others. Refreshments are included, although lunch is not included in this price. A booking form is attached. Please complete and return with payment to reserve a place.

6 Additional training Safer Food Better Business (SFBB) coaching From January 2006, all food businesses are required to have a Food Safety Management System (FSMS) in place. In smaller caterers this requirement is fulfilled by using a Safer Food Better Business pack. The business must be able to show what they do to ensure the food they serve is safe to eat. If you would like some training on the Safer Food Better Business pack, contact the Food Team on for more information. E Coli training The Food Standards Agency issued new guidance to prevent the spread of E Coli 0157:H7 in This applies to all food businesses handling raw and cooked food.
