2 Level 1 & 3 Sake Courses 1 The WSET Level 1 & 3 Sake Courses The WSET School London at the WSET s head office in Bermondsey Street London is the WSET s flagship training provider and as such offers the full range of Level 1 qualifications. All courses at WSET s School are taught by WSET Certified Educators and are qualified as a minimum to Diploma level. Who are the courses for? The courses are ideal for anyone wishing to be introduced to sake in an interactive, structured and concise manner. They will also suit those wishing to start a career, or in their first job, in the wine business or hospitality sector and provide the basic product knowledge and skills in the service of wine. All courses will lead to WSET Level 1 Award qualifications. What courses are available? There are four courses available at this level, they are: WSET Level 1 Award in Sake This course is a good starting point for the exploration of sake styles, food and wine pairing and making the most of wine by learning about the correct storage and service conditions for a variety of wine styles. The course includes sake tastings and a food and sake pairing workshop. The course is of 6 hours duration and is available as a one day course. WSET Level 3 Award in Sake This course is a good introductory course for the sake enthusiast or those wishing to start a career in the spirits or hospitality sector. Students will be introduced to spirit styles, spirit production and cocktails. The course includes the tasting of spirits. Available as a one day course. Courses are suitable for staff training for front of house staff in the hospitality sector, or for those involved in wine or spirits retail and business. Fees, more detailed course content and dates for each course, are found on the following pages in the course synopsis. When are the Examinations? The examination will take place as the final session of the day. You will not have to attend any additional days or evenings for the examination. What s included in the fees? Fee includes study material, samples, tuition, examination and provision of service equipment during the course. Study materials are issued at time of booking for Level 3 courses but only available on the day of the course for Level 1 and not available in advance. How do I pay? Payment must be made in full at the time of booking by one of the following methods of payment: Cash, cheque, debit/credit card Invoice (credit account holders only). Payment by invoice will only be accepted when supported by signed declaration from the account holder. Those companies wishing to set-up a credit account must do so a minimum of 30 working days prior to the course start. Places on courses will not be reserved during the account set-up time. Companies wishing to set up an account should contact UK Development on or ukdevelopment@wset.co.uk The WSET operates a Bursary Scheme which is designed to help potential WSET students who would otherwise be unable to fund a course at the WSET School London. Documentary evidence of financial hardship will need to accompany any applications for funding, and bursaries will be awarded to fund between 25% and 75% of the cost, depending on the degree of financial hardship. Applications for funding under the WSET Bursary Scheme should be submitted by to: bursary@wset.co.uk. All applications for funding under the WSET Bursary Scheme are subject to approval, and at the discretion of the Trustees of WSET.
3 Level 1 Awards in Sake 2 The WSET Level 1 Award in Sake The WSET Level 1 Award in Sake is a focused introduction to this fascinating and growing beverage category. You will learn how sake is made, and the Japanese terminology used for the main categories of sake. The course also includes practical demonstrations of the effects of different service temperatures and food pairings. Afterwards, you need never again be confused about the difference between a 純 米 and a 大 吟 醸! Course Synopsis Minimum age requirement 18 at time of booking Level 1 Award in Sake Entry requirements None Subjects studied Synopsis Sake Tasting Taste and describe Sake using the WSET Level 1 Systematic Approach to Tasting. Sake Service Learn about different vessels for serving Sake, and about how different temperatures can enhance or spoil the taste of Sake. Social Responsibility A guide to responsible drinking Sake Production Learn what Sake is made from and how it is made Categories and Learn about junmai, ginjō, nigori, unpasteurised, sparkling and aged styles of Sake sakes, how they are made and how they taste. Sake labels Learn how to recognise the Japanese symbols for junmai, ginjō and daiginjō Number of Sakes tasted 8 Sakes will be tasted as part of the course Duration of course 1 day inclusive of examination Modes of study Day Release Examination WSET Level 1 Award in Sake. 30 multiple choice questions to be answered in 45 minutes. A mark of 70% will be required to pass. Certification All students will be issued with a certificate suitable for framing and a lapel pin. 4 Level 3 Awards in Sake 3 The WSET Level 3 Award in Sake This fascinating and diverse beverage category is as interesting and complex to study as any wine or spirit and will enhance knowledge of the world of alcoholic beverages available to consumers. Students attending this course will learn about the various production methods and their impact on style, quality and price. Students will also taste a wide diversity of styles, many of which are rarely available outside of Japan to reinforce their learning, build their tasting skills and ability to assess Sake. This course combines classroom and online study. There is no prior learning in the subject required to enter the programme, however, students will be required to complete a monitored online study programme which will commence two weeks before attending the classroom based element of the course. All the study materials for this course are available online. Course Synopsis Minimum age requirement 18 at time of booking Level 3 Award in Sake Entry requirements None Subjects studied Synopsis Sake Tasting Taste and describe Sake using the WSET Level 3 Systematic Approach to Tasting. Sake Production Every stage of production from selection of rice to the finishing options before bottling will be covered and how each option impacts on style, quality and price will be explained. Sake Labels Acquire the knowledge to translate general Sake labelling terms. Service & Sale Explore the impact of service vessels and temperatures on Sake and how the of Sake enjoyment can be enhanced by the appropriate service of this beverage. Study Materials All study materials will be available online 2 weeks prior to course commencement. Duration of course The course is in two parts: 1. Two weeks online study prior to course, this will consist of study materials and tests to be completed prior to the classroom attendance. This will take approximately 20 hours of study. 2. Four days classroom attendance with the exam on the morning of the final day. Examination The examination is in two parts: 1. A blind tasting of two sakes 2. A written theory examination Both parts require a pass grade in order to be awarded the Level 3 Award in Sake. The examination is 2 hours and 15 minutes. Cancellations Cancellations of confirmed places are accepted up to 10 working days prior to the start of the course. An administration fee of plus the full cost of the study materials supplied will be deducted and the remainder of the course fee refunded to the payee. Transfers of a confirmed booking either to another course or applicant can be made up to 10 working days before the course start date on payment of a admin fee plus the cost of any additional study materials which may be applicable. I understand that all WSET School London courses are subject to minimum numbers and WSET reserves the right to change tutors, reschedule, cancel, close or combine courses if necessary. Transfer requests made within 10 working days of the examination date will incur the admin fee and cost of examination paper which will have been ordered via WSET Awards. Course fees will be refunded in full if the WSET School London changes a course date or cancels a course if enrolments do not reach the required minimum numbers notification will be made in the 10 working days prior to the planned start date of the course. Please note all transfers are subject to availability on alternative course/examination dates. Levels 3 course materials will be posted to a student s home address on confirmation of payment of fees. The pack is bulky and requires a signature please indicate an alternative delivery address if necessary. It is essential that a daytime telephone number is provided on your booking form. Please note that your addresses will be sent to our distribution centre to enable your materials to be tracked by you to ensure delivery. If you do not wish your to be sent, to this secure third party, please contact WSET School London before booking to arrange another method of receiving materials. It is important for the student to provide a complete and accurate delivery address and make sure someone is available to receive the package, at that address, at the prescribed time. Any materials returned to our distribution centre, having not been successfully received by the student, will automatically result in an additional cost of return being charged.
