Whether you re looking for a short course or a full qualification to establish your culinary career, you ll be learning from the best in the business. Leading industry trainers Our team of industry teachers, including award-winning chef and Black Hat recipient Brendan Hill, will keep you up to date with the latest food trends. We also work closely with a large network of restaurants and highly regarded chefs to give you the best possible chance for employment. Specialist facilities Our Geelong City Campus is home to a number of specialist training kitchens, equipped with the latest sustainable cookery equipment. In fact, The Gordon Culinary School is known as an industry leader in sustainable service for the cookery and hospitality industry. We also own and operate the Davidson Restaurant, where you can practise your skills, and experience the buzz of a real working kitchen. Professional Series Each year we run a popular Professional Series for experienced cooks and chefs. This series of short courses is presented by well-regarded chefs from the Geelong region, who share their advanced techniques such as molecular gastronomy, sous vide and cold smoking, and chocolate and sugar work. 5 I was a stay-at-home mum who had been out of the workforce for 26 years. I have always had a passion for food but my experience was limited to being a home cook. I chose The Gordon because I could study on-campus and gain a qualification to become a qualified chef. Going back to study was so much fun because I had the desire and the passion to succeed. The facilities were fantastic, teachers were all very experienced, and I loved learning something new every day. I am currently employed as a chef at the Flying Brick Cider House after undertaking work placement during my studies. I am now running and responsible for my own section which I am very passionate about, and continue to learn about new foods and techniques every day. As a chef, you have to be passionate about food, be prepared to take criticism, work hard and long hours, and most importantly be a team player. But the rewards are great. In 2016, I am returning to The Gordon to study my Certificate III in Patisserie while working at the Flying Brick. This is my dream job. Di Harris Certificate III in Commercial Cookery, 2015 I am currently completing my apprenticeship at the Tinamba Hotel in Gippsland. From childhood I enjoyed being in the kitchen, so I feel extremely lucky to pursue a career doing what I love. The high level of training I received at The Gordon, and the relationships I formed, has given me confidence in the workplace along with confidence to set goals in what I want out of my career. The biggest highlight to date has been receiving an International Culinary Scholarship as the winner of the Fonterra Proud to be a Chef event in I will use the international scholarship to develop my creativity and knowledge of food to the highest extent. In the next five years I plan to move closer to Melbourne to gain further experience in high standard restaurants. This will be a step towards the ultimate goal of opening my own place in the town I grew up in, utilising the great local produce we have on offer from the area. If you love food and cooking, being creative and working in a team then this could be a career for you. What will I learn? Learn all facets of working in a professional kitchen including: How to prepare and cook appetisers and salads, poultry and game, seafood, meat, hot and cold desserts, pastry, cakes, and yeast goods. Master the basics like stocks, sauces, soups, vegetables, eggs and pasta dishes. Learn about the industry through team work, food safety, hygiene, and organising supplies. Be taught by some of the best in the business, in our specialist training kitchens with state-of-the-art equipment. You ll also develop real skills and experience working in the Gordon s professional venues: Cafe on Track and the Davidson Restaurant. What are my study options? You can choose from three delivery modes: On-campus full-time: you can expect approximately hours of class attendance each week plus a work placement in industry. On-campus part-time: you will attend one day per week plus a work placement in industry. Apprenticeship: you will be employed in the industry and undertake study with us part-time over seven weeks per year for block release, or one day per week for day release. The Gordon also offer flexible arrangements incorporating workplace and workshops to meet your needs. This course will equip you with all the skills expected of a cook, along with the knowledge to manage a dynamic and innovative kitchen environment. What will I learn? As an experienced cook, you will refine your current skills and knowledge including selection, preparation and cooking of different foods and techniques. You ll also cover workplace hygiene procedures and receiving and storing supplies. What will I learn? Training with some of the best pastry chefs in the business, you ll learn the art of preparing and producing: Yeast goods Pastries Bakery products for patisseries Marzipan work Petit fours Gateaux Tortes and cakes Sugar work and specialty chocolate items You ll train in our specialist training kitchens with state-of-the-art equipment, and develop real skills and experience working in our professional venues: Cafe on Track and the Davidson Restaurant. This course equips you with a pastry chef qualification, along with additional management and leadership skills to operate at a supervisory level. What will I learn? 10 Patisserie Course in Chocolate and Sugar (From SIT40713 Certificate IV in Patisserie ~) Campus Mode Duration/Attendance Intakes Apply via Geelong City On-campus PT: 10 wks On demand Direct application Do you have a passion for creativity in the kitchen, with a love of all things sweet? Learning from one of the best pastry chefs in Australia, our highly regarded teacher Brendan Hill is keen to share his wealth of experience. What will I learn? Gain hands-on experience and learn to create stunning sugar pieces and tackle the most difficult of chocolate techniques. You ll prepare a large range of handmade chocolates and pralines, along with chocolate decorations for desserts, gateaux and special occasion cakes. In the sugar work component, you ll learn to make numerous sugar decorations for desserts, specialist techniques, and designing and creating centrepieces. Attendance You can expect to attend one day per week over 10 weeks. 11 Retail Baking FDF20510 Certificate II in Retail Baking Assistance Campus Mode Duration/Attendance Intakes Apply via Geelong City On-campus FT: 10 wks On demand Direct application Are you looking to enter the baking industry, or get a taste for the baking trade before undertaking an apprenticeship? This 10-week course is endorsed by the Bakery Association Victoria. It is designed to give you the core skills and knowledge for the industry, and increase your opportunities to gain an apprenticeship. What will I learn? The course covers the basic skills of food safety and the production processes used in a bakery. You will learn the skills of sweet and savoury pastry making including puff pastry, tarts, pies, croissants, danishes and the fundamentals of bread baking. The course also includes some routine baking functions, customer service, and general preparation and cleaning skills. 16 Apprenticeships and Traineeships Apprenticeships and traineeships are a great way to combine paid work with structured training. They allow you to gain a nationally-recognised qualification along with great industry skills to set you up for your chosen career. How do I start? To become an apprentice or trainee, you first need to find an employer and sign a Training Contract through an Australian Apprenticeship Support Network Provider. What does The Gordon do? We will work with you and your employer to develop an Individual Training Plan. We also help deliver and assess your training both in the workplace, and on-campus at The Gordon. Need help?
