2 Short introduction The Kormoran Brewery is a small regional brewery specialized in brewing traditional and natural beers, prepared with the use of ingredients delivered by the local suppliers. To a large degree, we ve been responsible for sensitizing the consumers to the dainty beers brewed with passion and in accordance with the tradition of our trade. The Brewery is recognizable for its boldness in terms of trying new things as well as its unique offer of special beers, such as the Kormoran s Travels and the PLON series, which contributed to the rebirth of Polish hop farming. The feedback we receive from our customers is a confirmation that we follow the right path. Our beers are getting more and more popular, they ve been awarded with the most prestigious prizes both in Poland and Europe our products were appreciated at the European Beer Star and the Global Craft Beer Festival. We hope you ll enjoy the result of our effort, the effort of a group of beer enthusiasts working under the Kormoran s wing. In the end, we have only one goal to achieve to provide a delightful composition of unique flavours and aromas from around the world so that your senses can experience them anytime and anywhere. 3 Beers brewed with passion The unique taste and healthful effect of our beer is achieved thanks to the use of traditional recipes, natural ingredients and the small scale of production, which is not typical of contemporary breweries anymore. We don t use artificial extracts, enzymes or taste enhancers. Each of the Kormoran Brewery s products is individually brewed, and the time of maturing is dependent on the amount of extract added. We don t try to improve nature we respect its balance, which is taken into account in the process of beer maturing. We re certain that both the time devoted to the meticulous selection of the best ingredients and the natural process of brewing influence the unique taste, colour and delicacy of the product appreciated by our beer-loving customers.

4 Travel memories are usually immortalised on postcards and photographs but also with the help of flavours. Every place in the world has its own flavour and aroma. Great many of those places are famous for a certain type of beer. The world with Kormoran s Travels series resembles a souvenir from the visited places. It s a selection of unique beers with the characteristic features that reflect their style and places of birth as well as the traditions of our own region. It s our way of contributing to the cultivation of centuries-old brewing traditions. Go ahead and encounter the most characteristic beer flavours of the world. 5 Weizenbock Weizenbock (Wheat Bock). Extract 16,5% Blg., alc. 6,6 % vol. Weizenbock is a dark wheat beer which combines the strength and the character of bock. The extract level of 16,5% Blg. brings its strength and concentration. Although it contains as much as 6,8% of alcohol, it s still refreshing and frothy, which is typical of wheat beers. It s suitable for desserts as well as for slow sipping in the rainy autumn evenings. Weizenbock is a great combination of the fruity and spicy flavour of wheat beer with the caramel and bread taste of bock beers. Finally, there comes its beautiful colour, thick head and the aroma of figs, raisins and dried plums, making the taste of alcohol hardly noticeable.

6 American IPA American India Pale Ale. Extract 16,0 % Blg., alc. 6,0 % vol. American IPA is delightsome thanks to the stunning hop aromas that bring up the images of citruses, flowers, pine forests or tropical fruit. It s a hazy gold beer with the noticeable shades of orange. Cold hopping makes it slightly opalescent. The long-lasting head consists of small bubbles. You can find amazing accents of hops used both in the beer s taste and aroma. Its bitterness of 85 IBU and the hop content provides a well-balanced malt base for this beer. Although its malty and sweet taste, it s not caramel-like, rather unquestionably drinkable. It draws heavily from the new hop varieties.

7 Witbier Witbier (Bier Blanche). Extract 12,5 % Blg., alc. 4,6 % vol. Witbier is characterised by its pleasant and light cereal aroma with the distinct herb notes, especially coriander and orange peel. This pale yellow beer is opaque thanks to the use of the unmalted wheat. Looking at it through the glass, it makes an impression of being actually white (as the name bier blanche suggests). The longlasting head is white and creamy. The beer s flavour is slightly tart with a distinct sweetness of citrus peel and coriander. Everything s well-balanced, making you bring back the summer memories. The hop bitterness, similar to the Hefeweizen beer, doesn t influence the refreshing aroma of fruit and spices. The beer is very fizzy, which in combination with its character, makes it a fantastic refreshment.

8 Coffee Stout Coffee stout. Extract 14,5 % Blg., alc. 4,8 % vol. Coffee stout is another beer in the Kormoran s travels series. It brings to mind a cup of coffee with cream, a dash of sugar and a distinct chocolate aftertaste. The sweet aroma of the stout is a blend of roasted cereal, coffee and dark chocolate. The beer is recognizable for its dark, almost opaque colour with ruby reflections. The long-lasting fine froth calls up associations with a beige layer of foam on the morning Italian espresso. Its flavour follows the same pattern the mild roasted feel of coffee and low fermentation direct your thoughts to one of the best cafés in the world. Our coffee stout is a peculiar combination of the laid-back English brewing, the elegance of Italian coffee and the sweetness coming from the Polish malt.

9 Rauchbock Smoked bock. Extract 16,5 % Blg., alc. 6,5 % vol. Smoked bock (Rauchbock) is a specialty and a brewing delicacy associated with the surroundings of Bamberg. It s quite strong and copper- or ruby-coloured while the long-lasting froth is white or cream-colored. The beer s flavour combines a full bouquet of cereals with an aftertaste of caramel. A generous addition of the smoked malt provides the beer with a slightly earthy and smoky tone with a touch of natural wood. The beer s aroma is a mixture of smoke, bread crust, caramel and a delicate herbal note of European hop.

11 The PLON (Crop) series is a result of the efforts to achieve the highest quality of Polish hop and the establishment of our own plantation in Back then, it was a sign of high regard towards the Polish planters whose crop had been devastated by the flood. Now, it is harvest time in our personal hop garden. The first harvest in 2013 overlapped with the celebration of the 20th anniversary of the Kormoran Brewery and the first batch turned out to be a huge success. The way was blazed by the Green PLON, an India Pale Ale brewed with the use of the fresh, wet hop cones of a single variety Sybilla. Soon, the family was enlarged by the following beers: the Brown PLON, brewed on the dried Sybilla hops; the Red PLON, brewed on the dried Marynka hops; and finally the Blue PLON, a lager brewed on a mix of the dried Sybilla and Marynka hops. The name PLON (Polish for crop) was used in the Warmia and Masuria region to denote the annual harvest festival an event where people celebrated the fruits of the soil as well as their hard work on the land. Let our own crop be such moments of joy. Why not raise a toast with a pint of PLON to the Polish hop because PL is ON.

12 PLON zielony Polish IPA. Extract 16,0 % Blg., alc. 6,2 % vol. The Green PLON resembles an India Pale Ale but it s produced on a single variety of the Polish hop Sybilla. The beer is genuinely exceptional since it s brewed only once a year and hopped with the use of fresh, wet hop cones.

13 PLON brązowy Polish IPA. Extract 16,0 % Blg., alc. 6,2 % vol. Similarly to the Green PLON, Brown PLON it s an India Pale Ale brewed on a single variety of the Polish hop Sybilla. The only difference is the use of dried hop cones instead of fresh ones.

14 PLON czerwony Polish IPA. Extract 16,0 % Blg., alc. 6,2 % vol. Analogically to the other beers in the PLON series, Red PLON it s an India Pale Ale brewed on a single variety of the Polish hop. In this case, we hop it with the use of dried Marynka hop cones.

15 PLON niebieski Lager. Extract 16,0 % Blg., alc. 6,2 % vol. As opposed to the Green, Brown and Red variants, Blue PLON it s a bottom fermentation beer a filling lager brewed on dried Marynka and Sybilla hop cones.

17 Let s take a short walk down memory lane Not so long ago and not so far away, that is about a century ago in the Daum s breweries located in the Warmia and Masuria district, there was a brilliant brewer named R. Hoffmann. He was the most trusted employee who devoted 44 years of his life to the production of beer and the industrialisation of local brewing. The facilities he managed were being fitted with machinery, laboratories and bottom fermentation equipment. Without any exaggeration, we see him as the father of our first brewing revolution. His most beloved child was EDELHELL a Pilsner-like lager beer, a real brewing achievement of his times. The beer turned out to be a huge success and gained wide recognition, even outside East Prussia. It was also awarded with international prizes. A genuine inspiration for Hoffmann s successors Well, as you already know, we like to try new things. We picked up the gauntlet and attempted to improve the recipe which seemed to have no place for such betterments Yet, here it is! The usual bitterness hop was used for aroma while the usual aroma hop was used to bring out bitterness. The result is astounding! We ve brewed an exceptionally mild and velvety lager, and the lack of filtration has further enriched its features. The lager has been reinvented! Let the Warmian Revolution begin

18 Warmińskie Rewolucje Lager, unfiltered. Extract 12,5 % Blg., alc. 5,2 % vol. Warmińskie Rewolucje (Warmian Revolution) it s an unusual variety of lager brewed with the reversed hopping. What s that? The bitterness is extracted with the aromatic Sybilla hop, and the aroma is obtained with the use of the bitter Marynka hop. Furthermore, we employ the process of cold hopping. Due to lack of filtration, the beer retains every single nuance of its aroma and flavour. All of that results in an exceptional beer with a herbal aroma of the Polish hop and a refreshing citrus aftertaste. It s mild and as drinkable as it can be thanks to the perfect balance between the delicate malty taste and its medium degree of bitterness. Who would have thought that the lager can be so subtle and velvety!

19 Porter Warmiński Baltic Porter, unfiltered. Extract 21 % Blg., alc. 9 % vol. Baltic Porter is most often called the treasure of Polish brewing. The strength of our porter lies in the long-term maturing (at least 21 weeks). During that time, the beer becomes stronger and clearer, it gains proper flavour and smell. Thanks to such a long time spent in the cellar, it doesn t require filtering. Finally, we achieve an exceptional mellow taste, deep colour and a fantastic aroma of the beer. The uniqueness of this porter has been confirmed by a number of awards in international competitions: first prize in the Christmas Porter Tasting in Moscow (twice) and the gold medal in the most prestigious European beer competition the European Beer Star 2012.

20 Marcowe Oktoberfest/Märzen, long matured. Extract 14,5 % Blg., alc. 5,8 % vol. March Beer is an icon of the European brewing. It s known for its remarkable gold colour, malty flavour and a thick white froth. It s brewed only once a year in the spring (hence its name) and matured for the entire summer, only to be enjoyed in the autumn. It s a remnant of the old tradition of raising a toast to the harvest festival and the beginning of brewing season. The exact same tradition was also cultivated in the Warmia region. Therefore, every time this beer is brewed, we thank for the harvest and raise a toast to the future success. In order to emphasize the traditional approach to the process of brewing, we employ the method of decoction mashing, leave the beer unfiltered and let it mature for a long time. Of course it s time-consuming and more laborious but we accept no compromise flavour is everything!

21 Świeże Unpasteurised lager. Extract 12,5 % Blg., alc. 6,2 % vol. Świeże is a truly unpasteurized beer! Our fellow countrymen who emigrated to the Ruhr contributed to the development of the so-called Dortmunder beer. Its taste was the last vestige of their homeland. Just like its predecessor, Świeże is pale and slightly sweet. The long stage of maturing (in the temperature close to 0 C) comes after brewing and fermentation. Hence its flavour which is a delicate composition of malt and hop, high clarity and an adequate amount of carbon dioxide. The lack of pasteurization makes it possible to retain all the Świeże s qualities. Such beer is highly drinkable, particularly after a hard day s work.

22 Orkiszowe Spelt light hybrid beer, unfiltered. Extract 12,5 % Blg., alc. 5,1 % vol. This extraordinary hybrid beer is full of opposites. When the use of wheat in the brewing process became popular, we decided to choose spelt instead, which is the kind of wheat of exceptional qualities. The process of fermentation of this beer is also unique. It s the bottom fermentation at the first stage, resulting in the extraction of the clear and delightful taste and smell of spelt. Then, it s top fermentation at the second stage, in which the characteristic qualities of wheat are obtained. This way, the beer receives its natural opacity and a bit of sediment at the bottom (as in wheat beers). All that comes in a bottle since we leave the beer unfiltered.

23 Orkiszowe z miodem Spelt light hybrid beer with natural honey flavour, unfiltered. Extract 14,5 % Blg., alc. 5,1 % vol. A mixture of an extraordinary spelt beer and a bit of Warmian honey is a step forward in the development of our spelt beer production. The spring multiflorous honey, a symbol of the natural wealth of our region, enhances the flavour and stresses the delicacy of the beer. Every sip takes you to the flowery and bee-buzzing fields of the Warmia region while the well-balanced flavour triggers a picture of gold wheat fields in your mind. As a result, the beer is both fresh and mild. One of the most important features of this beer is the combination of the sour wheat taste with the sweetness of honey. Absence of bitterness is turned into an advantage.

24 Kormoran Jasny Pilsner, well-hopped. Extract 12,5 % Blg., alc. 4,9 % vol. Perfect choice for those who enjoy a genuine hoppy flavour. The most important feature, making this beer unique is the amount of hop used in the process of production. During its composition, we relied on five traditional, continental varieties of hop. Three of five of them are of Polish origin, i.e. the bitter Marynka, the bitter and aromatic Sybilla and the aromatic Lubelski hop. We decided to enrich the sensations that come from Polish hopsm with the most popular varieties that come from our neighbours: the Saaz hop from the Czech Republic and the German Tettnanger hop. The unique composition of aroma and flavour is enriched with a subtle sponge cake undertone coming from low-fermented malt base.

25 Kormoran Jasny Niefiltrowany Pilsner, well-hopped, non-filtered. Extract 12,5 % Blg., alc. 4,9 % vol. It s not only an unfiltered variant of the standard Kormoran Jasny beer but it also has a stronger hop aftertaste! Thanks to the lack of filtering the beer is unclear, with a distinct bitter taste intertwined with the malty aroma. There s some citrus flavour noticeable as well, which makes it slightly similar to the IPA beers. The composition of hops is identical as the filtered version, i.e. Marynka, Sybilla, Lubelski, Saaz and Tettnanger.

26 Kormoran Ciemny Dark oat beer. Extract 12,5 % Blg., alc. 4,5 % vol. The composition of this low-alcohol oat beer combines the lager malt with five kinds of dark-coloured malts, including three different caramel malts, burnt malt and roasted malt. Then, oat flakes are added to complete the selection of ingredients. Due to its low fermentation, the beer has a low alcohol level but its taste remains rich and complex. Its composition embraces caramel, chocolate and coffee flavours, enriched by the mild hop aftertaste. Long and peaceful fermentation and maturing result in the full harmony of a velvety beer flavour you can savour for a long time.

27 Krzepkie Strong lager, long matured. Extract 14,5 % Blg., alc. 7,4 % vol. This strong lager is suitable for those chilly autumn and spring days. All you have to know about this beer is that its pure taste is sweetish and well-fermented, but not bland. Its light colour has the power of making you reminisce about the sunny summer when days start to become shorter. It can also warm you up on the first days of spring. Due to its mildness, it s perfect for feasts. As usual, however in this case in particular, please mind the amount you drink since it s the strongest lager we ve ever made.

28 Wiśnia w Piwie Light beer with natural cherry juice. Extract 14,5 % Blg., alc. 5,2 % vol. What s the secret of the cherry beer s success? We add a bit of natural cherry juice to the light beer, pour in some sugar in order to break the sourish aftertaste of cherry and leave it in the cellar. The process of maturing is long enough to let the flavours find their place, resulting in a fantastic composition. What we get is a light, mouth-watering and refreshing beer. Its exceptional taste has been appreciated not only by the experts who awarded it with a silver medal at the European Beer Star in Nuremberg, but also and above all by our customers. 29 Śliwka w Piwie Light beer with natural plum juice. Extract 14,5 % Blg., alc. 4,4 % vol. If the fruit used in the production of this beer were to be bottled, there would be at least 9 plum varieties in each bottle, including the common plum, the Łowicka common plum and the mirabelle plum. Similarly to other beers with fruit juice, the secret of the plum beer s success lies in the natural juice and the duration of maturing. Simply open the bottle and enjoy a full bouquet of fresh fruit immersed in beer. Fill your glass, look at the world through its deep colour and finally take a sip! You ll experience a refreshing, slightly sourish taste wandering among the sweetness of ripe plums. Somewhere in the malt base of the beer, there s an aftertaste of hop bitterness. It s one of those things you just can t forget

30 Jabłko w Piwie z miętą Light beer with natural apple juice and mint. Extract 14 % Blg., alc. 4,5 % vol. Refreshing, brewed in a traditional manner and long-matured beer with the selection of natural apple juices added. While the beer is maturing, mint leaves provide it with an even more refreshing quality. The juice we add to the beer is squeezed out of the green Antonovka apples this variety is hard and sour. Naturally, we also use other varieties, such as the sweet and sour Lobo, Idared, Cortland and an early variety of Vista Bella. Together, they all make up the light and refreshing beer. Moreover, these traditional flavours may be a perfect way to reminisce about the summertime when there s wet autumn outside.

31 Miodne Dark beer with natural honey. Extract 15,5 % Blg., alc. 5,7 % vol. Dark beer with locally produced honey. Rich coffee and chocolate flavour and a mild hop finishing, accompanied by the delicacy and sweetness of the multiflorous honey. We are proud to announce that the bee-keeper we co-operate with lives in the Warmia region and the tradition of beekeeping in his family dates back to The beer has been quickly appreciated especially among female beer lovers. People say it s probably the best dark beer with honey in Poland. Fill the beer mug with this brown and ruby liquid and let yourself be enchanted by the harmonious aroma of natural honey and burnt malt coming through the beige head. Yet, it s only the foretaste of what s waiting for you under the froth

32 Irish Beer Strong dark beer. Extract 14,5 % Blg., alc. 6,5 % vol. Irish Beer is the veteran of our offer. Although it s a bottom fermentation beer, its composition is based on British brewing traditions. It s a blend of light stout s flavour of roasted barley, while the inspiration for creaminess and delicate sweetness came from mild beers. The combination of all these features, so characteristic for beverages from the Isles, in a bottomfermentation, Warmia-brewed beer makes this beer as Irish as it gets despite the fact it s brewed by Kormoran. We ve enjoyed this taste for quite a long time It s one of our most awarded beers it won prizes at, among others, The Polish Beers Festival or the Chmielaki Krasnostawskie consumers beer competition.

33 Świąteczne Dark beer, seasonally spiced. Extract 16,5 % Blg., alc. 6,1 % vol. It s quite a peculiar tradition to brew special varieties of beer for the Christmas and New-Year period. These are strong dark beers enriched with spices, such as clove, cinnamon or ginger That s the flavour of our Christmas beer. If we were to name it in a similar manner as we did with the other beers we offer, we would go for gingerbread. It s a perfect match for the Christmas dishes and baked delicacies. Its spicy flavour and aroma reflect the atmosphere of Christmas. It tastes great when enjoyed next to the Christmas tree or given out as a present for your loved ones.

34 Szoko Dark beer with chocolate flavour. Extract 16,5 % Blg., alc. 5,8 % vol. The story behind this beer was long and turbulent. Its creation was expressly suggested by the customers, especially the Internet users. Their opinions contributed to the development of this dark beer with dark chocolate flavour which stimulates your senses. It s a mellow composition of sour hop flavour and the sweetness of chocolate and caramel. It might prove unsuitable for conservative beer lovers, it s rather aimed at those who search for new and surprising sensations. There s no better way to find whether you ll like it than to have a sip!

35 Podpiwek Warmiński Malt and hop drink. Extract 12,5 % Blg., alc. max 0,5 % vol. This home-brewed-like beverage is a refreshing drink, rich in vitamins and minerals. It s perfect for slaking thirst as it supplements both micro- and macro-elements. It s also a fantastic energy booster that can be used after physical effort. It cheers you up and makes you feel better. We produce it in the process similar to the one we use to brew beer. The only difference is the employment of the stuck fermentation which limits the amount of alcohol produced by yeast so that it stays below 0,5%. Home-brewed-like beer is a great companion on scorching summer days. As a recommendation, let s quote E. Cyfus from the Pages of My Warmia : I personally recommend searching the local shops for a ready-made home-brew drink produced by the Kormoran Brewery. It s as good as my grandma s, mother s or aunt s.
