2 Special products have a unique history. Whisky from over 120-year-old oak casks. The Locher brewery is steeped in history and tradition, and has been owned and run by the Locher family for five generations. Based in Appenzell, they have been producing beer and spirits for their customers for more than 100 years. Here in the heart of the undulating Appenzell landscape, their quality products are carefully brewed to traditional recipes and cared for until they are ready for consumption The history of the Locher family and their brewing expertise started in the early 18 th century in nearby Oberegg. In 1886 the Locher family took over the brewery in Appenzell that still houses the brewery and distillery today. The Locher AG brewery begins to produce whisky. The Appenzell Säntis Malt s unconventional appeal arises from its unique storage in historical oak wood beer casks and the fact that it is made with pure spring water from the Alpstein mountains. The Locher brewery launches its first single malt products on the market, going down in history as a pioneer of Swiss whisky production. To ensure the highest quality of their products, the Locher AG brewery begins to use raw ingredients from the Swiss mountains the highest altitude plantations in Europe / The Säntis Malt Dreifaltigkeit is selected as the European Whisky of the Year 2010 by whisky pope Jim Murray. The Locher brewery is declared as the Whisky Distillery 2011 by the Swiss whisky guide. Fantastic results for the Säntis Malt. All entries at the world s most important competition, the IWSC in London, won awards. The Alpstein 2013 special edition even won a gold medal. And the good news for all connoisseurs and fans is that the Appenzell Säntis Malt story will go on and will continue to attract attention in the future.

6 PRODUCTION From the ingredients to the whisky Whisky is beer s big brother. The first steps in their production are the same. Whisky is originally a grain (in Europe generally barley), to which water and yeast are added. The paths of beer and whisky only diverge at a later point in time. The Säntis Malt produced by the Locher brewery is made of barley malt. This is a barley extract obtained by softening, germinating and drying in the same way as for beer. As a traditional company the Locher family were in the possession of historical oak beer casks which have served for decades and some for more than a century to store beer. Over the years these casks have inhaled the scent of the beer and absorbed its varied aromas mixed with the tang of North European hardwood. These oak casks still retain the spirit of the malt that the Locher brewery roasts. The old beer casks pass on their ancient memories to the spirit of the roasted malt. It is precisely because there aren t many original beer casks left that Säntis Malt is so unique. If whisky is produced in accordance with traditional Scottish recipes, peat is burned for drying. The smoke it gives off lends the barley malt its characteristic aroma. The barley malt is combined with water in the the mash tun, heated and then placed in the fermentation tank. In contrast to beer, no hops are added to the wort. However, yeast is also added to the liquid. This ferments the maltose to produce alcohol and other by-products. This takes around 120 hours. A beer-like liquid, the wash, is then produced. Practically all whisky-related terminology is English, which is hardly surprising in light of its origins. The wash has an alcohol content of six to eight percent. Up to this stage the manufacturing process is only slightly different to that of beer. This then changes. While beer is only matured, the journey of whisky has only just begun. The wash is then taken to the distillery. The traditional pot still, a copper vat, is used for single malt whisky. This vat has a voluminous belly with a long column that becomes narrower towards the top. This is called the swan s neck. The wash is then heated in the still. The fact that alcohol starts to boil at a temperature of 78.3 C and water at 100 C is taken advantage of. The product produced after this initial distillation process is called low wines. It contains around 25% of alcohol and the mixture is not particularly tasty. It contains too many unwanted contaminants. For this reason the liquid is distilled a second time, and in Ireland sometimes even a third time. This requires all the skills of the master distiller. He has to separate the wheat from the chaff,as not everything that drips from the still is suitable for drinking. The foreshots and the tail must be separated from the hearts. This removes low-quality alcohols and fusel oils. Only the hearts can be used to produce high-quality whisky. The master distiller must therefore pull the lever at just the right moment. The job is then practically finished. But a long time must pass before the whisky can actually be tasted. For our product to earn the designation single malt whisky it must be matured for at least three years. This is anchored in law. The whisky is normally matured in oak casks that have already been used. Sherry or bourbon casks are particularly popular as they lend the whisky a very special aroma. Before the whisky is bottled it is normally mixed with water from the distillery s own spring. The alcohol content is then diluted to the required strength of 40 to 52 volume percent.
