We hope you enjoy this months updates on the Cookhouse, Butcher Shop, Ranch and Employee Spotlight. Enjoy! Cookhouse & Butcher Shop Happenings Beef Tongue On occasion, beef tongue will make an appearance in our Butcher Shop grab n' go case, and when it does, it goes fast! With the Cookhouse now open and our smoker up

and running, the chef's have decided to start using it more frequently in the kitchen. Many are probably familiar with the cooking method of boiling and serving it spread on toast, in gravies or smothered in sauces. Pickled tongue is also another popular way it can be served. Although these are great ways to eat tongue, our chefs decide to explore the way tongue is prepared and served based on Mexican Cuisine. You may recognize the word "lengua" which is the Spanish translation for tongue. In restaurants, taco trucks or during your travels through Mexico or other Latin American countries you might have seen tongue offered in tacos, burritos and other popular dishes. To make our version of these Mexican favorites, we started off with fresh Five Dot tongue that is seasoned to perfection. They are then placed in the smoker for up to eight hours. This method provides excellent flavor and a melt in your mouth texture. Once cooked the tongue is sliced and served in a multitude of different ways. You may recognize the dish below as you have seen it on our Facebook and Instagram. These tongue tacos were served with cabbage-cilantro salad, salsa verde, and braised radish on a grilled corn tortilla. If you actually got to eat these tacos, consider yourself lucky as they were gone in a flash! They were sold old within minutes of being advertised.

Our most recent tongue special has been the Beef Tongue Torta. The beef tongue is served on a Model Bakery toasted bread roll with avocado, salsa verde, cabbage salad with cilantro-lime dressing served with pickled radish and house made tortilla chips. If you are a beef tongue newbie and are curious to try it, this is the best way! We promise after your first bite you will be hooked! Have other ideas for a tongue dish? Ranch Happenings Solar Panels Last month we highlighted our haying operation and the different crops we are currently managing in the Willow Creek Valley. This area is prime ground for growing hay crops as the soil is fertile and there is a well established system of waterways, canals and small ditches that are ideal for irrigation purposes. We have a team of irrigators who spend their summer days managing the water to prevent run off and ensuring each field is receiving the optimal level of moisture. In addition, we use several pumps to bring the ground water up to the surface in order to fill the canals and ditches. Until recently, these pumps were run solely on diesel fuel and electricity. It was decided by Five Dot management this was not the most sustainable option and changes needed to be made. After extensive research and planning a large setup of solar panels were installed. These solar panels decrease our dependency on fossil fuels and use the suns rays to power the pumps.

Some may argue that these solar panels are an eye sore as they can be seen from the road, however we feel the benefits of the panels outweighs the aesthetics. Employee Spotlight Kaitlin Swickard In case you are not familiar with the Five Dot Ranch history or need a refresher, here is a very brief recap. The Swickard family has been farming and ranching in California since 1852. Fast forward 107 years to 1959 and the 5th generation of Swickard agriculturalists purchased the Five Dot Ranch in Susanville, California. Fast forward again to the 21st Century and the ranch is still owned and operated by the Swickard's and other extended family members. As of June 2015, another family member joined the mix on a full-time basis, Kaitlin Swickard. Kaitlin is the youngest daughter of Todd and Loretta Swickard and is part of the 7th generation of Swickard ranchers in California. This spring, Kaitlin graduated with honors from California Polytechnic University, San Luis Obispo (Cal Poly), receiving a Bachelor's of Science degree in Agriculture Business. Upon completion of her degree, she also received one of three Agribusiness Manamegent Club Emerging Leader Awards in recognition of her effort to develop leadership skills, a professional network and professionalism. During her time as a Cal Poly Mustang Kaitlin was President of the Agribusiness Management Club, a member of the Cal Poly National Agri-Marketing Association team who won the 2014 National Championship held in Jacksonville, Florida and was the lead on organizing and putting on the annual Ag Showcase, a career fair hosted by the Cal Poly College of Agriculture. Outside of Cal Poly, Kaitlin worked as the Mail Order & Customer Service Representative at Cattaneo Bros., a San Luis Obispo based beef jerky and sausage company. Needless to say, Kaitlin was a busy gal! Kaitlin has worked on the ranch throughout her childhood and during school breaks up until this point. Her experience ranges from gathering cows to taking orders in the Cookhouse. This go around Kaitlin will enter Five Dot on a full time basis and will act as lead of marketing and promotional materials, assist in meat sales and work closely

with account holders. "I have always had a part in the family business growing up from moving cattle, irrigating, working in the office, and more recently working in the restaurant. I am excited to now be working for Five Dot Ranch full time and working closely with my parents. I can hopefully use what I have learned in school and through my extensive academic experiences and extracurricular activities to better the operation. My parents and family members have worked extremely hard to get our business where it is today and I am excited to be able to help more and take advantage of the business opportunities they have created for my siblings and I."
