WHITE WINE S A U V I G N O N B L A N C A N D B L E N D ( s a w v e e n y o n b l a h n k ) LIGHT TO MEDIUM BODY WITH MEDIUM HIGH ACIDITY This dry white wine grape offers distinctive flavors of citrus fruit, melon, fig, herb and occasionally hints of grassiness. Typically light, crisp and fruity, it thrives as the white wine of Bordeaux and is used to produce the delicious Pouilly-Fumé and Sancerre of the Loire Valley. Famed for its success in California, New Zealand and Chile, this White Wine is best blended with Sémillon. Although wonderful with food, it is also the ideal selection for an aperitif. WHITE WINE R I E S L I N G ( R E E S E l i n g ) LIGHT TO MEDIUM BODY AND RANGE FROM DRY TO SWEET The taste of Riesling, the most aromatic grape variety, begins in the olfactory nerves. With primary fruit aromas of nectarine, apricot, honey-crisp apple, and pear, the Riesling correspondingly contain the whiffs of honeycomb or even a chemical aroma similar to trails of petrol or gas. Nevertheless, the distinctiveness of the scent is much favored by wine enthusiasts. Riesling is of high acidity, resembling lemonade or that of a tart fruit juice. WHITE WINE P I N O T G R I S / P I N O T G R I G I O ( P E E - n o h G R E E / P E E - n o h - g e e - o h ) LIGHT TO MEDIUM BODY WITH MEDIUM HIGH ACIDITY Known to be of identical palates to the Pinot noir variety, the fruity wine obtained its name from its grayish-blue fruit ( Gris representative of gray in French). The Pinot Gris of Alsace contains a crisp relish, in a more aromatic swirl of full embodiment, with additional complex flavors of tree fruits and hints of almond. Pinot Grigio, produced throughout Italy, contains a dry tone with neutral flavour, and a similar crisp character. WS87 Willm Réserve Pinot Gris, Alsace, 2013 France 420 WS83 Danzante Pinot Grigio IGT, Venezie, 2014 Italy 240 WS87 Akarua Pinot Gris, Central Otago, 2013 New Zealand 390 14
WHITE WINE G E W Ü R Z T R A M I N E R ( g u h - v u r t s - T R A H - M E E - N E R ) MEDIUM TO FULL BODY AND RANGE FROM DRY TO SEMI SWEET Gewürztraminer has the dubious dual distinction of being the easiest grape variety to recognize and the most difficult to spell. Highly aromatic with swirls of flowers, peach, exotic lychee and even spice, there is no mistaking a Gewürztraminer s aroma. These wines range from the crisp, fruity and dry style to the lavish, honeyed sweet styles found in the vendange tardive (late-harvest) wines. CT89 W. WHITE WINE C H A R D O N N A Y ( s h a r - d o h - N A Y ) MEDIUM TO FULL BODY, MEDIUM ACIDITY AND DRY The Chardonnay, perhaps the most diverse and planted white wine grape in the world, is habitually enjoyed by more than just the upper class society. WHITE WINE V I O G N I E R ( v e e - o h - N A Y ) MEDIUM TO FULL BODY, HIGH ACIDITY AND DRY Known for producing textural, aromatic wines with pronounced stonefruit flavors; apricots and steel are the variety s classic flavour associations. With hints of herbal, Viognier wines comprise the aromas of chamomile, lavender, thyme and even a trace of pine. In the sweeter, aged embodiment, the potentially overpowering herbality is softened by honeyed notes. RED WINE P I N O T N O I R ( P e e - n o h N O - a h ) LIGHT BODY, SOFT WITH HIGH ACIDITY Known for its delicacy and difficulty to grow in various soils, the seductive, often temperamental grape of all great red Burgundy is now planted with varying success almost everywhere. The variety also lends itself well to the apassimento process (of air-drying grapes) used to make the famous Amarone wine, typically of rich, dry flavours. RED WINE M E R L O T ( m a r e - L O H ) MEDIUM BODY, MEDIUM ACIDITY The precise flavors that Merlot imparts to a wine are not easily grouped. It is a grape used for producing wines of a particular texture, rather than a particular taste, relying on organoleptic properties other than just flavor and aroma. Smooth, rounded and easy-drinking are common descriptions of Merlot wines. The variety usually is used to soften wines made from more tannic varieties like Cabernet Sauvignon or Malbec. RED WINE C A R M É N È R E ( C a r - m e n - Y A I R ) MEDIUM BODY, MEDIUM ACIDITY The Carmenère grape, with rich history dating back to the late 1800, originated from France, with Chilean growers mistakenly identifying its nature to be of Merlot, resulting in flawed labellings. As vineyards were revisited in the early nineties and DNA testing were carried out, the grapes were relabelled, shifting the focus of Carmenère to be the backbone of many Chilean wines, for its good, plumy fruit, and firm structure, similar to the Cabernet Sauvignon. RED WINE T E M P R A N I L L O ( t e m p - r u h - N E E - o h ) MEDIUM FULL BODY, MEDIUM HIGH ACIDITY Most often associated with Spain, Tempranillo is the backbone of wines made in the well-known regions of Rioja and Ribera del Duero. On the scale of light to heavy, Tempranillo lands towards the light side, with higher acidity and lower alcoholic level, perfect for food pairing, and a common character for Old World wines (from regions with a long documented history of wine production). RED WINE G R E N A C H E ( G r u h - N O S H ) PROFILE: FULL BODY, HIGH ACIDITY AND TANNIC Grenache (also referred to as Garnacha) is known as the world s workhorse grapes, but it can also be one of the world s most elegant red wines. Winemakers across the globe, from California and Australia to France and Spain cultivate this varietal and achieve very different expressions in the process, but one thing these wines share is an innate affinity with grilled meats pairing.
