The collaborative chocolate

During our entire life the chocolate industry has been making money on our shoulders considering us as raw material suppliers only. But we have the know-how and expertise. We actually are the ones who make everything possible! No cacao, no chocolate Furthermore we care for the land where we grow cacao with love and effort to ensure the future of chocolate. After many years of working in the Fair Trade chocolate industry, Eric Garnier (France), Christoph Inauen (Switzerland) and 35 organic cacao farmers from the Alto Huayabamba valley (Peruvian Amazon) joined hands and founded Choba Choba - a chocolate brand in which farmers have a direct stake in the company and its success. CHOCOLATE Revolution CHOBA CHOBA TURNS THE CHOCOLATE BUSINESS UPSIDE DOWN. oday, its common practice for cacao farmers to sell their produce at very cheap prices to the chocolate industry. While the know-how and expertise of the farmers is poorly rewarded, the industry makes huge profits. At Choba Choba farmers are not merely raw material suppliers, but they actually run and own the entire chocolate brand together with Eric and Christoph. The price for cacao that Choba Choba pays to the farming families is not defined by the international commodity market, but by the farmers themselves (bottom-up pricing). Furthermore, the families receive 4% of the company s turnover in direct payouts and in the form of shares. This way, by 2020, they will go on to own at least 33% of the company. Only by completely turning the power relations upside down, putting the farmers into a leading position, can we generate a real impact for the cacao farmers and their ecosystems.

TREASURE Traceability is at the heart of the Choba Choba project. Our chocolates are not made with Peruvian cacao, but with the best varieties grown by the communities of Pucallpillo and Santa Rosa. Each chocolate creation is linked to a single farmer. We want to create a deep and direct connection between chocolate lovers all over the world and the communities of the Alto Huayabamba Valley. OF ALTO HUAYABAMBA WITH CHOBA CHOBA THE ALTO HUAYABAMBA VALLEY BECOMES YOUR CACAO FARMER S MARKET. he Alto Huayabamba valley is located in the heart of the Upper- Amazon, the birthplace of cacao. This biodiversity rich ecosystem is the home of endemic species as well as unique cacao varieties. The 35 families involved in Choba Choba not only grow some of the finest cacao in Peru but they also commit themselves in preserving their environment through organic farming, agroforestry systems and by developing reforestation and conservation programs within this precious biosphere reserve. These environmental efforts to protect the exceptional terroir of the Alto Huayabamba valley combined with the know-how of the farmers allow Choba Choba to create small batches of unique and exquisite dark chocolate creations, traceable to one single farm.

In the Alto Huayabamba Valley only, we can count dozens of different cacao varieties, each with specific flavor profiles: jasmine, vanilla, coconut, dried fruits, citrus, coffee FLAVOUR UNIVERSE CHOBA CHOBA MAKES YOU DISCOVER PURE CACAO FLAVOURS oday more than 70% of the chocolate covertures are produced by only 2 multinational companies, blending different cacao varieties from different origins. The result is that more and more chocolates just taste the same. Choba Choba was created to fight against this standardization of flavour. Each cacao variety is unique, with unique flavors and should be considered as such when a chocolate is crafted out of it. Every two months, we select one specific variety and produce a small batch of exclusive and limited edition chocolates. Each production is absolutely unique, and highlights the vast range of tastes displayed by the many cacao varieties of the Alto Huayabamba valley.

FARMER S KNOW-HOW Just like wine, cacao is a subtle combination of terroir, variety and know-how. This expertise begins in the field itself, not only by taking care of the plant while growing and harvesting cacao but also by mastering the art of fermenting and drying the beans. Choba Choba farmers are highly skilled in these practices, knowing the particularities of each cacao they grow and harvest, always on the edge of improved techniques, adapting them to each cacao variety to preserve its specific flavors. At Choba Choba, we believe that farmers are at the heart of this complex and amazing journey that transforms cacao into chocolate.

CHOCOLATIER S CRAFTSMANSHIP Choba Choba is proud to partner with Max Felchlin, considered as one of the finest chocolatiers on the planet, with over hundred years of experience in the tradition of chocolate making. Every two months, we ship our latest cacao variety from the Alto Huayabamba to Felchlin where our unique dark chocolate creations are crafted. In a specially adapted roasting process, the chocolatier slowly and gently roasts our cacao beans in very small batches, in order to preserve all the specific aromas of each variety. After grinding, we add organic cane sugar and organic cacao butter, that s it. Choba Choba is thus able to offer a pure dark chocolate that accentuates the flavor of a specific variety. In a long conching process, through hours of movement of aeration, aromas (such as floral, fruity, spicy, nutty,..) can fully develop.
