History & spelling Whisk(e)y has a fascinating history dating back over 2000 years. The word whisk(e)y derives from the Gaelic uisge, a shortened version of uisge beatha meaning water of life, also known as aqua vitae in Latin. Whisk(e)y was originally used as a medicine for both internal anaesthetic use and as an external antibiotic. Distilling techniques were brought to Ireland and Scotland sometime between 1100 and 1300 by monks. Since wine was not easily obtained in these countries, barley beer was distilled into liquor which in turn became whisky. Today, whisky is a global spirit full of diversity and flavour. The spelling of whisky or whiskey differs based on where the spirit is produced. Traditionally American and Irish producers prefer whiskey with an e, and in Scotland, Wales, Canada, and Japan they prefer whisky without an e. So why two different spellings? Going back to around 1870, Scotch whisky was deemed to be of very poor quality. When exporting their products, American and Irish producers wanted to differentiate themselves from this and so they added the e to mark the distinction between the two. Today, Scotch whisky is one of the world s finest spirits, but still keeps the original spelling. In 1968 the Bureau of Alcohol, Tobacco, Firearms and Explosives issued a directive that states the correct spelling in the United States is whisky. However most, but not all American producers, use the historic spelling whiskey. A handy little trick to remember this easily is that major producing countries with an e in their name spell it whiskey (America and Ireland). Those without the e spell it whisky (Scotland, Canada and Japan). 4

Scotland Whilst many countries now produce whisky, only whiskies produced in Scotland can be called Scotch. Malt Whisky - Whisky producing regions are as diverse as the wine regions of France; their location, climate and crafts of the region impart certain characteristics on the flavour profiles of malts. Highlands - By far the largest region, the Highlands has wide variations in flavours; the west coast has maritime influences with central areas driven by heathery, honey flavours. Lowlands - South of an imaginary line running between Dundee and Greenock, there is a softer landscape to the Highlands is which reflected in colour and flavour. Little or no peat is used here, resulting generally in a light, floral flavour profile. Islands - Dominated by the island of Islay and its eight distilleries, the area is rugged, windswept and barren, generally producing peaty maritime aromas. Speyside - Set in the Highlands between Aberdeen and Inverness, the classic Speyside flavours are honey, vanilla and fresh fruit. Blended Scotch - Made up of grain whisky and a variety of single malts. Grain based whiskies were once perceived as a cheap alternative to single malts but we now know blending requires an immense skill. It is likely that newer drinkers introduced to whisky will try blends first. Whisky & food Bespoke food and drink matching is becoming more popular across all drinks categories and has expanded from wine into beer and beyond. Pre-conceptions that whisky is too intense and strong in alcohol to work with food are being broken down and increasingly outlets pair whiskies with specific foods to enhance the flavour of both. So whilst in the past whisky and food matching has been confined to Burns Night suppers or Scottish themed menus, it is more frequently appearing on food menus as a pairing suggestion. Whisky offers a vast array of different flavours and styles from smoke, spice, peat, floral, vanilla, dried fruit and many more which can work with a variety of food types. The key is to ensure that the whisky should not overpower the food. The Highlands Scotland A large region with malts that vary greatly in character. Ranging from dry to sweet and some even have a touch of smoke and peat.

Glenmorangie Formerly called Morangie Farm, William Matheson founded the Glenmorangie distillery in 1843. Named after the land he loved, Glenmorangie meaning Glen of Tranquility was born. Made purely from Scottish barley and water from the Tarlogie Springs its exclusive water source. Glenmorangie is distilled in Scotland s tallest stills and uses only first and second fill casks to mature its whiskies, ensuring a rich and creamy flavour and finish. Dalwhinnie Founded by Grant, Mackenzie and Sellar in 1898. Its name derives from the Gaelic for meeting place. It is incredibly remote, but close to the centre of the Highlands. Oban Oban is the frontier between the West Highlands and the Islands; the meeting place between land and sea. Made using only the finest barley, malted to the distillery s own particular specification. Old Pulteney Established in 1826 and situated in the town of Wick. The history of the distillery is entwined with the history of the Wick fishing industry which is reflected in the packaging and all creative communications. The Highlands 14 15YO Strength: 43% JDE: 00010493 Big, crisp, dry and very aromatic nose with hints of heather and peat. Light to medium in body, smooth, soft and lasting flavours of heather, honey-sweetness and vanilla followed by deeper citrus fruit flavours and hints of malted bread. The Lowlands Scotland Whiskies from the Lowlands tend to be soft and light in character. They often display very malty, grassy characteristics and subtle delicate aromas.

Auchentoshan Pronounced Ock un tosh un, meaning corner of the field in Gaelic. Founded in 1823, and producing the only fully triple-distilled malt in Scotland. This is a light and subtle whisky from a stylish, contemporary brand with younger adult appeal. An extremely versatile single malt, it can be enjoyed in many ways. The Lowlands 16 12YO JDE: 00022139 Golden honey in colour with a nose of crème brûlée, a burst of citrus and the signature Auchentoshan nuttiness and green leafiness. Smooth and sweet on the palate with hints of tangerine and lime and a finish of ginger, slightly drying with a pleasant lingering nuttiness. Glenkinchie One of the few remaining Lowland distilleries; founded in 1825 and later purchased and restored by an association of whisky merchants and blenders from Edinburgh in the 1890s. Haig With a family history of distilling going back to 1655, John Haig opened the Cameron Bridge grain distillery in 1824. Today the newest member of the family is Haig Club, the David Beckham endorsed single grain whisky. 12YO Strength: 43% JDE: 00020953 Vanilla, cut flowers with a toasty note. America Whiskey arrived on the American continent with the Irish and Scottish immigrants they were forced to adapt it in many ways including the use of new raw materials. Over the years, a new kind of whiskey gradually evolved. Today, there are few (if any) similarities left between American whiskey and its cousins, the Scottish and Irish whiskies. For example, no smoke is used to dry the corn or rye. Because of this, it often has a fuller, stronger and sweeter taste than its European counterparts. The most common varieties within North American whiskies are: Bourbon - America s national spirit. There must be at least 51% corn in the selection of grains for distillation with no caramel colouring. Tennessee - these are essentially bourbons which undergo the Lincoln County Process, developed by the famous Jack Daniel s. This involves filtering the spirit through sugar maple charcoal. Rye - made with a mash bill that must feature at least 51% rye. The result of this is a more spicy whiskey with lots of complexity. Synonymous with the cocktail, the classic whiskey mixes are all based around the rustic spirit; the Manhattan, the Old Fashioned, the Sazerac. Less common are: Wheat - these differ from bourbon in the mash bill. It is distilled from a minimum of 51% wheat. There is only one straight wheat whiskey in America: Bernheim. The wheat content offers a sweet, mellow character. Corn - distilled from a mash bill of at least 80% corn - usually not aged in new charred oak barrels (the custom with bourbon) therefore not referred to as straight whiskey. Rest of the World As consumers are drinking more whisk(e)y and becoming more adventurous, other countries have entered the market place using innovative techniques and challenging the traditional methods of production and maturation. We have selected a few of the key producing countries: Japan - Japanese malt whisky is based on the Scotch model being double-distilled in pot stills. However, they have made certain innovations of their own, such as maturing their whiskies in rare, slow-growing Japanese oak. Japanese whisky is an interesting comparison between Scotch and Bourbon, Scotch in style but matured in temperature conditions closer to Kentucky. Ireland - It is argued that whiskey was invented in Ireland and the idea taken to Scotland in medieval times. There is evidence of this migration but the true origin of whisk(e)y remains unclear. Ireland s distilling industry is quite different to Scotland s, with a handful of distilleries producing the many different Irish brands according to different recipes. Wales - Penderyn is the only distillery in Wales and was established in 1999 in the foothills of the Brecon Beacons. Producing just one cask a day, Penderyn produces smooth, easy-drinking malt whiskies. A single still is used in production, making this different from most Scottish and Irish counterparts. Irish whiskey is worth over 54 million in the UK on-trade, up 7.6% on last year. Whiskies from other countries including Japan are growing by 50% in volume terms year on year. *

Suntory The Yamazaki distillery was the first in Japan, created in 1923 by Shinjiro Torii. Sited near Kyoto in the lush hill country, the water source is noted for its purity. Jameson In 1780, John Jameson created his triple-distilled, smooth Irish whiskey. A pot still style Irish whiskey blended from a combination of pure pot still and grain Irish whiskies. Scotch Whisky & Water Adding a touch of water will enhance the aroma and flavour of the whisky and bring out its hidden characteristics. Ingredients: 1 malt whisky, spring water to taste Glass: Rocks Ice: No Garnish: No Method: Add the whisky to the glass and serve with a small jug of spring water for the customer to pour to their taste. Godfather A simple and elegant after-dinner cocktail. Ingredients: 1 whisky, 1 amaretto Glass: Rocks Ice: Cubed Garnish: No Method: Add the whisky and amaretto to the glass with ice and stir briefly to mix. Scotch Old Fashioned A true classic! Ingredients: 2 whisky, 1 dash bitters, 1 bar spoon brown sugar, 2 3 orange peels Glass: Rocks Ice: Cubed Garnish: 3 orange peel twist Method: Muddle the orange peel, sugar and bitters in the bottom of the glass to extract oils from the orange peel. Add 1 measure of whisky and ice and stir. Repeat this process and continue to stir until sugar is dissolved. Garnish with a twist of orange peel. 49

American Finished Drinks Manhattan A true classic first created at a party held in Manhattan by Winston Churchill s mother. Ingredients: 2 whiskey, ½ sweet vermouth, 1 dash bitters Glass: Martini Ice: No Garnish: Maraschino cherry Method: Fill Boston glass with ice, pour in the whiskey and sweet vermouth. Add a dash of bitters and gently stir for 30 seconds. Add more ice if needed and stir for a further 30 seconds. Fine strain into pre-chilled martini glass and garnish with a maraschino cherry. Mint Julep A sharp and refreshing Kentucky classic from the 1800 s. Ingredients: 2 whiskey, 1 bar spoon sugar, 6 peppermint leaves Glass: Rocks/julep tin Ice: Crushed Garnish: Mint sprig Method: Add all ingredients to the glass and half fill with crushed ice. Cover the top of the vessel with a napkin in your hand to stop leaking and stir vigorously for 5 seconds. Add more crushed ice to almost fill the vessel and repeat stirring process. Finally top the drink with a mound of ice and a sprig of mint to finish. Whiskey & Cola Garnish with orange wedge for an exciting new taste experience! Ingredients: 1 whiskey, cola Glass: Rocks/highball Ice: Cubed Garnish: Orange wedge Method: Fill glass with ice and add the whiskey. Top the glass to a half inch below the rim with ginger ale and garnish with a squeezed lime wedge. Japanese Whisky on Ice In Japanese history, ice was a noble commodity and a symbol of power. This history has been inherited by today s bar culture. Ingredients: 1 Japanese whisky Glass: Rocks Ice: Cubed Garnish: None Method: Add the ice to the glass and pour over the whisky. Whiskey Sour A classic and versatile whiskey cocktail. Can be made with almost any whiskey. Adding egg white can really enhance the drink adding a smooth fluffy texture. Ingredients: 2 whisk(e)y, 1 fresh lemon juice, ½ sugar syrup, 1 egg white (optional) Glass: Rocks Ice: Cubed Garnish: Lemon wedge Method: Add all the ingredients to the Boston glass and fill with ice. Add shaker and shake vigorously for 15-20 seconds. Strain into a rocks glass filled with ice and garnish with a lemon wedge. 51
