Introduction The Underground Cookery School was set up in the summer of 2003 to offer a fun and relaxed way to learn how to cook. With our experienced brigade of fully trained chefs, our classes take you through the whole cooking process, from choosing ingredients to understanding things like textures and consistencies. Our classes are for everyone, from total beginners to budding masterchefs the aim is to improve your cooking skills from whatever level they re at, and for you to enjoy it! Without taking ourselves too seriously, we ll show you all the tools of the trade like knife skills, pasta making, butchery and presentation, So you ll know how to give even the simplest dish a dash of professional flare. When you next go shopping you ll have the confidence and inspiration to see delicious meals in front of you.
Matt Kemp Despite working in some of London s top restaurants like The River Café, The Ivy and Pont De La Tour, Chef and Patron Matt Kemp considers himself self-taught. He started following recipes from an early age. And like everyone, started with pretty mixed results: I ruined everything I tried to cook for the first time! But I always learned from my mistakes. With his home grown experience he also knows what it's like to be hopeless in the kitchen, and has a few tricks up his sleeve for when things go wrong. Hence the school's motto; Everything is salvageable!. Training under 3-star chef, Michael Guérard, in France gave Matt the best technical training in the business. And he now offers classes that are both hugely informative and great fun.

Team Building & Private Client Sessions There s honestly no better team activity than rushing around in a kitchen. Our corporate group sessions are informal and great fun. They re also completely flexible: you choose how many people, when to start and when to finish. With help from us you also choose what to cook and what else you d like to do. Our afternoon or evening sessions normally begin with Prosecco, canapé and music to get everyone in the mood, followed by a two-hour cookery session, including various dietary options. And as the best way to cook is with a glass in your hand, there ll be plenty to drink as part of any package. Everyone is encouraged to have a laugh and get hands-on at their own pace, with our team there to make sure there s not too much burning or curdling going on. That way when your meal is served, it's to a very good brasserie level. We also run morning or full-day events. After a wholesome breakfast you can either cook, use our fully equipped meeting facilities or take on the Underground Cookery Challenge, followed by a delicious canapé lunch. Our main aim is that, when people get home, they tell their friends and family they had a great time and real laugh not just another work do.
There Is No Love Sincerer Than The Love Of Food
The Underground Cookery Challenge Take on the Challenge and your party is split into teams. Each is given a cash budget and a list of ingredients. They then have to source their products and ingredients from market traders and retailers, come back and cook our recipe. Oh, and all against the clock. The champion team voted by our own Underground chefs will get our famous gold medal (the bottom team, our wooden spoon). And everyone gets the chance to tuck into the delicious meal they ve collected and cooked.

Drinks, canapé and music get the fun started, before everyone prepares a delicious three-course meal, with plenty of laughter and more drinks along the way.
