You will be able to replicate them at home surprising all your family and friends! The course will include the preparation of a traditional Italian dessert as well. The cooking school begins with the visit of the orto, our kitchen garden, to select fresh ingredients. LA CUCINA ITALIANA PIZZA EXPERIENCE Pizza has become a global phenomenon, but there is nothing like learning how to make it the Italian way. In this lesson, you will learn the secret of making a delicious traditional pizza from scratch. You will start by learning how to prepare the dough and end by exploring a selection of toppings with ingredients from buffalo mozzarella and prosciutto, to fresh Tuscan sausage and local mushrooms. Each pizza will be cooked in La Canonica s brick oven. The course also includes the preparation of a traditional Italian dessert to end the meal in a sweet way. The Chef begins the class by taking you to visit the orto, our kitchen garden, to select the fresh ingredients. Begin with an introduction to pizza making, with information on the best tomato sauce and cheese to use, and an overview of toppings. Enjoy making the dough and shaping the pizza. Learn how to make a traditional Italian dessert, the best way to end the perfect pizza meal. Discuss with the chef the different styles of pizza that are found in Italy, while your pizza bakes in our brick oven! Savour everything you prepared with your own hands.

LA CUCINA ITALIANA TUSCAN MEAL EXPERIENCE In this lesson you will learn not only how to prepare a three-course meal, but also pick up tips on how to play the perfect host by getting everything ready a day in advance. Once you know what can be prepared beforehand and the best way to store it, it is easy to make a delectable Tuscan meal. The Chef begins by taking participants to the orto, our kitchen garden, to select fresh ingredients. The Chef will present and explain to you the menu as well as how to make a meal ahead of time. You will begin preparing a three-course meal and learn how to store it until it is ready to be served. You will learn how easy it is to get your pre-prepared meal underway just before guests arrive and sit down to enjoy it with them. The class will end with a delicious meal that you have prepared with your own hands.

Castiglion del Bosco s commitment to the preservation of rural Tuscan s architectural heritage and landscape has been conveyed into the kitchen. The idea is to try to transmit a memory s cuisine, to lead you through an adventure designed to uncover age-old tastes (sapori) and techniques (saperi). Imagine a form of culinary archaeology, aimed at bringing to light the roots of Tuscan identity. However, it is also about rediscovering the pleasures of conviviality, the unhurried rhythms of family traditions at the table. You will begin preparing your meal and learn how to store it until it is ready to be served. You will learn how easy it is to prepare your meal, thanks to grandmother s secrets. The class will end with a delicious meal that you have prepared with your own hands.

THE ART OF VEGETABLE GARDENING Cradled in the Tuscan countryside, Castiglion del Bosco s orto or vegetable garden is an oasis of peace, taste, beauty and tradition. Around 180 varieties of fruit, vegetables and aromatic herbs are grown here using organic methods, to guarantee our restaurants fresh, natural produce that has taken the shortest possible route between the garden and the table, which allows us to propose a range of authentic, forgotten flavours. Planting and tending a vegetable patch is simple, healthy and fun. At Castiglion del Bosco, our ortolano, or market gardener, will help you to discover the secrets of the soil, how best to sow and how and when to water, the lore of the seasons.
