Where you require help with design, we have developed a range of Proven Packages - combinations of our temporary kitchens and support facilities linked together - which can be viewed in the next section, on pages 8-5. To make it easy for you to specify a kitchen equipment layout that suits your menu requirements, we have produced a range of Favoured Footprints - combinations of catering equipment that fit along the production side of our temporary kitchens - which are illustrated on pages 5-57. Once you have chosen a kitchen size that suits your needs, all you need to do is specify the Favoured Footprint that you would like inside it and give us a call. Alternatively, if your cooking requirements are a little more specific, we have a range of 9,000 items of catering equipment from which you can create your own bespoke kitchen design. Temporary Kitchen Features Inside Your Temporary Kitchen All of our kitchens are manufactured to the highest standards and incorporate the latest health and safety features. All units are quality checked prior to each hire, ensuring they reach you in the very best condition. Light Levels All portable kitchens have LUX levels of between 00 and 500 to ensure a safe food preparation environment. Climate Control Portable kitchens are supplied with an easy clean, stainless steel, high powered ventilation system that guarantees 0 changes of air per hour. Optional temperature controlled kitchen preparation and storage units are also available. IP Rated Sockets Our kitchens are supplied with additional IP rated amp sockets, enabling you to plug in extra equipment or other electronic devices as required. Hygiene Stations Kitchens are supplied with hygiene stations which includes a hand wash sink, towel dispenser and a soap dispenser. Floors The floors in PKL portable kitchens comply with BS7976 and achieve a friction coefficient of 6 or higher in order to achieve a low slip potential. All units have a 5kN floor loading, ensuring minimum deflection, and are solid underfoot, able to withstand the rigours of the commercial catering environment. Coved Flooring The use of coved flooring in our kitchens makes them robust and easy to clean. It also stops the build up of food waste and ingress of water. Gas Interlock Ventilation is supplied in accordance with industry guidance DW7 and BS67. A gas interlock system is supplied, which stops gas from entering the facility in the event of a loss of ventilation. All installations and testing are undertaken by Gas Safe registered engineers. Full Length Extraction Canopy All of our temporary production kitchens are supplied with a full length extraction canopy as standard. Fire Suppression All of our production kitchens are supplied with built in wet chemical fire suppression system as standard. Structural Steel Construction Kitchens are built utilising a robust steel frame construction. Self Levelling Facilities All units are equipped with extendable and adjustable levelling posts located on the corners of the unit.this ensures a level working environment, even where units have been sited on an uneven or sloping surface. Wall Construction The wall panels are a composite sandwich panel construction, lined internally with a powder coated foodsafe steel skin providing a wipe clean finish. The wall is externally lined with a PVC plastisol coated steel skin. The core of the panel is comprised of 60mm dense rockwool insulation. The panel is non-combustible and CFC free. Dual Fuel Capabilities PKL portable kitchens are supplied with either gas or electric equipment, or a combination of both. Carbon Dioxide and Monoxide Testing PKL test portable kitchens and catering equipment as part of the commissioning and testing process to ensure a safe level of carbon monoxide and carbon dioxide in accordance with BS7967. Open Plan Kitchens Favoured Footprints Temporary Kitchens Design and Operational Considerations for Open Plan Kitchens Due to the size and longer term requirements of open plan temporary facilities, we can incorporate a number of specialist design features, based on our experience of designing and delivering large scale kitchens over the last 5 years. Preventative Maintenance Visits As our open plan facilities are usually specified for a number of months or years, we can provide a programme of preventative maintenance visits to ensure the smooth operation of the kitchen and reduce the risk of equipment breakdown. Links to Existing Buildings If the kitchen is being used to service an existing building or dining hall, we can provide a link corridor from the kitchen to this area. This ensures easy access to and from the kitchen and makes it easier to transport food to the dining area, without the need to take it outside. Raised Plant Room For large open plan facilities, we provide a separate plant unit located on the roof above the canopies in the production kitchen area. This helps to warm the input air (see tempered air below), eliminate the chance of leaking ductwork and ingress of water into the kitchen, makes it safer and easier to maintain by reducing working at heights risks, and helps to prevent access by birds. The motors which run the extraction system can also be housed in the raised plant room, significantly reducing noise in the kitchen. Optional Porches Over Kitchen Entrances To prevent water gathering on the unit floor around entrance areas which could lead to a slip hazard, we can install porches to prevent rainwater pooling immediately outside doors and being walked or blown inside. Office, WC and Shower Facilities Our open plan facilities are usually specified during large scale refurbishment projects, which also incorporate works to other buildings on site. In addition, due to the size of the kitchen, there is usually a large number of staff involved in its operation. We can therefore include office areas, WC facilities and showers as part of your kitchen facility. We can also include provisions for data points and Wi-Fi if required. Open Plan Kitchens Catering Equipment Tempered Air PKL has developed the technology to offer a tempered air supply in open plan kitchen facilities. The mechanical make up air for the extraction system is passed through a heater matrix powered by a gas-fired boiler, heating up the external air before it is drawn into the building. The key benefit of a tempered air system can be found in establishments where it is the practice to leave extraction running overnight to remove the need to relight the pilot lights on the gas appliances every morning. In Kit Heaven, each item of catering equipment undergoes a rigorous cleaning, maintenance, testing and commissioning programme before a final 0 point QA inspection.. Catering equipment arrives in Kit Heaven and is logged in using its unique barcode. All of our catering equipment is barcoded, allowing us to track its location and full service history.. Catering equipment is moved to one of our specialist bays for cleaning. All loose parts are stripped from the item of equipment and are cleaned separately. With loose items removed the carcass is left, allowing for thorough access and comprehensive cleaning. The carcass is cleaned by hand with the aid of steam cleaning facilities. We have a specialist sandblasting room for items that require more attention.. Once logged in, each item of equipment is moved to a holding area where the level of cleaning and maintenance required is assessed. 4. Catering equipment is moved to one of Kit Heaven s specialist commissioning zones. There are individual facilities to cover gas, refrigeration and electrical equipment. We also have a specialist hot room where refrigeration equipment is tested to ensure that it can withstand operating in high temperatures, replicating a working kitchen environment. Catering Equipment 5. Catering equipment is sent to the Quality Assurance zone for a final pre-delivery inspection to ensure that it is completely working and clean. To ensure a thorough assessment, each item of equipment has its own specialist test. If an item fails the QA test it is sent back to the commissioning bay. 6. On leaving Kit Heaven, catering equipment is moved to Kit World, our in-house storage facility, where it is held ready to be dispatched as an individual item or installed into a portable kitchen.
