This training is also an essential part of a due diligence defence. During food hygiene visits Environmental Health Officers check that there is always someone on site with at least a level 2 (or equivalent) qualification. They also ensure all staff working with food have a basic understanding of food hygiene. Their findings can affect the national Food Hygiene Rating Scheme score which is displayed to the public.
