4 Reposado The first definitive level of aging is termed reposado or rested and mandates that the tequila remain in wood for a period between two months and twelve months. This is a requirement of the Mexican government. Each distillery has its own preference for the type of barrel used in aging. 6 Añejo The next level of aging is the añejo tequilas. Añejo, which means old or mature, can only appear on bottles that contain tequila aged in oak barrels of up to 600 liters for at least one year. This is a requirement of the Mexican government. A year of resting in a cool bodega (warehouse) produces a smoother and more sophisticated taste. American whiskey barrels, French oak casks, or cognac barrels, are commonly used to age this tequila. Añejos are typically aged between one and two years. 8 Extra Añejo This is the newest classification or type of tequila. Ultra-aged or Extra Añejo tequila has been aged for a period of at least three years, without specifying the aging time on the label. 9 Mezcal Mezcal has multiple definitions: an all-encompassing name for all spirits distilled from the agave, and the name of a regional beverage that is similar to tequila, but made mostly in the state Oaxaca. Mezcal is not the same as Tequila but is similar to Tequila in that it can be distilled from blue agave, although it seldom is. Mezcal is distilled only once, unlike Tequila, which is distilled twice. Mezcal can be made from any species of the agave plant (most typically from El Moraleño, Espadín de Oaxaca, Bermejo and Zopilote) in any part of Mexico. Mezcal is often bottled with a worm and is native to the states of San Luis Potosi, Michoacan, Jalisco, Durango, Morelos, Nuevo Leon, Oaxaca, Tamaulipas and Zacatecas.
