The class will incorporate hands-on activity of both a la carte and banquet skills, as well as classroom study. SSA102 Certified Dining Room Associate (DRA) Prerequisite: None Class Time: 16 hours Workbook (English & Spanish) Created by the Federation of Dining Room Professionals, this course is a must for anyone who wants to validate their commitment to the industry. This class will give students in-depth knowledge of the dining room area. Upon completion of the online examination, the participant will hold a certification at the introductory level of the hospitality industry and will have the benchmark of using DRA after their name. SSA103 Associate Wine Steward Certification (WSA) Prerequisite: Completion of the DRA Course Class Time:16 hours Workbook (English & Spanish) This course will assist attendees to understand essential wine categories, organization, and principles of winemaking, as well as the main grapes, wine history and wine procedures and protocols. Graduates will be able to create an engaging experience for guests by acquiring knowledge in the arena of food and wine pairing, wine list handling, and wine recommendations. SSA104 Certified Dining Room Professional (CDP) Prerequisite: Three years on the dining room floor in the same establishment & the essentials course Class time: 16 hours Workbook: 446 Page Manual & PPT Handout (English only) This course will assist dedicated professionals to achieve a high standard in the food service industry. Graduates will attain the CDP after their name. Upon passing the online exam, they will be eligible to expand or create their own training program through collaboration with School for the Service Arts and the Federation of Dining Room Professionals.

Prerequisite: None Class Time: 16 hours PPT Handout: English This class will cover service skills for Front Desk employees and give them the tools to read the guest s needs while maintaining guest security. Students will learn to deal with the challenges that may occur and learn how to handle themselves in all situations allowing the student to exceed exceptional customer service as the first point of contact for the guests. The class will incorporate hands-on activity, role play as well as classroom study. SSA202 G.R.E.A.T.: Guest Room Exceptional Attendant Training WHO SHOULD ENROLL: Hotel, Resort and Motel Housekeeping and Room Attendant Staff; Hospitality Management Trainees and Housekeeping Supervisors; and those interested in a career path in hospitality. Prerequisite: None Class Time: 8 hours This class will cover service skills for Housekeeping and Room Attendant employees and give them the tools to provide quality service in all aspects of the guest s arrival and stay at the property. The class will cover the essentials of guest security and the proper interaction with the guest while covering the basics of cleanliness and room inventory. The class will incorporate hands-on activity, role play, as well as classroom study. SSA301 Event Catering and Hospitality Services for the Event Manager WHO SHOULD ENROLL? Event managers; dedicated catering and banquet professionals; venue managers; tent and rental professionals; event staff; food and beverage staff; or anyone in catering sales and marketing.
