Project duration: 4 years From: Jan- To: Dec Main objective(s): The main objective is to study the impact of relevant organic agricultural practises on the ability of plants to assimilate trace elements from the soil and to synthesise bioactive secondary metabolites and antioxidant vitamins with health promoting effects. Moreover, the possible improved bioactivity and health in humans and animal models from complete diets will be studied The specific main objectives are: 1. To characterise and optimise the content of trace elements and bioactive compounds in crop plants harvested from a well-defined organic cultivation system including realistic combinations of plant species, soil type, crop rotations and fertilizers. 2. To assess the bioavailability of the bioactive compounds in human intervention studies employing prepared diets based on the crops produced within the systems. 3. To characterise how biomarkers for health and well-being are affected by the dietary treatments using a rat-model and to study the development of the immune defence system according to the dietary treatments.

4 4 9. Project summary in Danish: Essentielle sporelementer (mineraler), bioaktive sekundære metabolitter og vitaminer hører til blandt de vigtigste kvalitetsparametre i kornprodukter og grønsager. Ikke desto mindre er der meget lidt viden om indholdet, biotilgængeligheden og sundhedseffekterne af disse stoffer i økologiske afgrøder. Hovedformålet med dette projekt er derfor at undersøge indflydelsen af forskellige økologiske dyrkningssystemer på afgrøders optagelse af mineraler fra jorden, og på deres evne til at danne biologisk aktive forbindelser med sundhedsforebyggende egenskaber (molekylære forbindelser af jern, zink, selen og svovl, samt sekundære metabolitter, antioxidative vitaminer C og E og fytat). Der vil blive gennemført flerårige markforsøg på 4 forskellige geografiske lokaliteter i Danmark, for på denne måde at inddrage hvorledes jordens fertilitet påvirker afgrøderne. Det systematiske eksperimentelle design, sammen med brug af moderne kemiske analyseteknikker, gør det muligt at drage konklusioner om variabilitet og optimalt indhold af de bioaktive forbindelser. Planterne, der produceres i markforsøgene vil blive benyttet til humane kostforsøg og i sundhedsstudier hvor rotter anvendes som modelsystem. I disse forsøg vil biotilgængeligheden i mennesker af mineralerne og de øvrige bioaktive forbindelser blive bestemt. Desuden vil plantekostens indflydelse på rotters sundhed og velfærd blive undersøgt. De mange resultater vil blive analyseret med såvel klassisk statistiske metoder som moderne multivariate statistiske metoder (kemometri) for at bestemme eventuelle systematiske forskelle i indholdsstofferne mellem de benyttede økologiske dyrkningssystemer. Endelig vil indflydelsen af de økologiske fødevarers kemiske sammensætning på biotilgængeligheden i kostforsøgene blive undersøgt og statistisk holdbare sammenhænge blive påvist. Den systematiske og multivariate tilgang repræsenterer en stor forbedring i forhold til tidligere gennemførte studier i hvilke økologiske og konventionelle produkter er blevet sammenlignet på baggrund af et snævert udvalg af indholdsstoffer og med begrænset information om dyrkningshistorie, hvor det ikke har været muligt at isolere effekten af de enkelte behandlinger. Fra et praktisk synspunkt, vil projektets systematiske og multivariate tilgang generere viden og metoder, der er værdifulde for entydig afgørelse af, om de valgte økologiske produktionsformer fører til produkter med en sundhedsmæssig fordelagtig sammensætning af bioaktive komponenter. Yderligere vil den ernæringsmæssige kvalitet af økologiske afgrøder kunne godtgøres i forhold til konventionelt dyrkede produkters, og dermed indgå i grundlaget for rådgivning vedrørende det statistiske grundlag for at adskille økologisk og konventionelt fremstillede fødevarer. 10.
