3 General Rev. 1. General Carefully read the instructions in this manual as they contain important information regarding proper, efficient and safe installation, use and maintenance of the appliance. Keep this manual in a safe place for eventual use by other operators of the appliance. The installation of this appliance must be carried out in accordance with the manufacturer s instructions and following local regulations. The connection of the appliance to the electric and water supply must be carried out by qualified persons only. Persons using this appliance should be specifically trained in its operation. Switch off the appliance in case of failure or malfunction. The periodical function checks requested in the manual must be carried out according to the instructions. Have the appliance serviced by a technically qualified person authorized by the manufacturer and using original spare parts. Not complying with the above may put the safety of the appliance in danger. 1.1 Symbols used on the appliance This symbol on a part informs about electrical terminals behind the part. The removal of the part must be carried out by qualified persons only. 1.2 Checking the relationship of the appliance and the manual The rating plate of the appliance indicates the serial number of the appliance. If the manuals are missing, it is possible to order new ones from the manufacturer or the local representative. When ordering new manuals it is essential to quote the serial number shown on the rating plate. 3

4 Functional description Rev. 2. Functional description 2.1 Intended use 2.2 Construction This appliance is a combination cabinet, designed for storage and proving of semi-finished products. The cabinet is fitted with refrigeration and heating as well as with humidity control. Cold storing temperature C, proving temperature max. +40 C. CPRi 1000 is a roll-in model for a baking plate size 520 x 535 x 1850 mm. NOTE. The C/P 700 cabinet is also suitable for 450 x 600 mm baking plates. Control panel 1. Timer 2.3 Taking the cabinet into use Keep the cabinet in its final location for about 3 hours before taking it into use. Connect the cabinet to the power supply with an earthed socket, using the plug supplied. Check that the local power supply corresponds to the voltage shown on the rating plate. Press the red main switch (4). The temperature of the cabinet will appear on the display of the electronic control unit (1). 4

5 Functional description Rev. 2.4 Timer functions Thermostat (refrigeration): label Set 1, adjust to +5 C. Thermostat (heating): label Set 2, adjust to +37 C. The switch (3) is connected with the water basin. When the water level drops under the minimum level, the heating element will switch off and the red signal lamp (2) will light up. The lamp goes off when the basin is filled with water. See attached instructions Monotron

6 Operating instructions Rev. 3. Operating instructions 3.1 Operation Place cold bakery products (buns etc.) into the cabinet at refrigerator temperature on the day preceding the baking. The timer starts the proving process automatically during the night. Humid air flows into the cabinet and temperature is maintained between +30 and +37 C. Air humidity is regulated by a humidity controller. After proving, the bakery products are ready for baking. If timer functions have been selected correctly, baking can start as soon as personnel arrive in the bakery. 6
