Recently, I had a change of heart. nutrition know-how + FEEL GOOD First, I read Maria Rodale s book Organic Manifesto: How Organic Farming Can Heal Our Planet, Feed the World, and Keep Us Safe ($34.99, Rodale). In addition to being a passionate advocate for all things organic, Maria is also chairman and CEO of Rodale Inc., which publishes Prevention in the US. Then, I visited her family s organic farm in Pennsylvania. It was an eye-opening experience. Because the fertilisers and pesticides they employ are all natural, such as using certain types of beetles to protect the plants, I could just pick a tomato or lettuce leaf and eat it. For breakfast we had freshly laid eggs from their chickens. In fact, all the food I ate came from the family farm. I was ready to move in! With so much debate around organic, I sat down with Maria to run through some common consumer questions. Dr Arthur Agatston Many people agree organic food is better in principle, but say they can t afford it. Your thoughts? Maria Rodale The true cost of not buying organic is never factored into charts that compare, for example, the price of organic versus non-organic apples. That price needs to include the toll all the toxins used in conventional farming exact on your health. Moreover, the commercial agricultural techniques that are used for non-organics are very damaging to the environment, so we actually end up paying in other ways. Dr Arthur Agatston Such as? Maria Rodale Applying chemical fertilisers to soil is a short-term solution that creates long-term devastation to the soil. It is basically accelerating the desertification of our planet, whereas organic agricultural practices actually improve the soil over time. Organic production also requires 20% less fossil fuel than chemical production. That s another bonus. Dr Arthur Agatston Why should people care about the health of the soil? Maria Rodale Healthy, organic soil is alive with billions of living creatures. All those living creatures absorb water that can help prevent the type of catastrophic flooding we ve been seeing lately. They absorb so much water, in fact, that if you look at healthy soil under a microscope it looks like a sponge. But the massive application of agricultural chemicals in conventional farming kills off that microbial life. It s soil genocide, really. Just as too many antibiotics kill all the good and bad bacteria in your body, too many chemicals leave soil a dead, empty filter. It can t feed the plants, it can t protect the plants and it can t absorb water. Those are huge costs. Dr Arthur Agatston What about the immediate costs at the cash register? Maria Rodale There are plenty of ways to eat organic without blowing your budget. Farmers markets are a great place to find locally grown, often more reasonably priced organic food, and they re fun to visit. If you haven t looked recently, you may be very surprised by the variety of organic produce at local supermarkets. And many communities have thriving food co-ops that buy organic produce at significant discounts and also help sustain local farms. Dr Arthur Agatston Growing your own would be even cheaper, wouldn t it? Maria Rodale Yes, you can grow organic produce in your backyard or even in pots on the balcony. Many communities, especially in urban areas, have thriving community garden projects, too. Dr Arthur Agatston What about the I don t have time to cook excuse? Maria Rodale It s true that when you commit to cooking your meals at home it s not the same as pulling out a 10-dollar note and buying some takeaway. But if you buy fresh or frozen organic produce, you won t be buying processed or junk food and this will save you money. According to worldrenowned Buddhist teacher Sogyal Rinpoche, author of The Tibetan Book of Living and Dying ($29.95; Random House), you can make yourself happier using nothing more than the power of your mind. It s foolish to go looking for happiness outside yourself, because once you do, you have no control, says Rinpoche. Happiness and the causes of it are present in our mind and in our heart. And the fact is, most positive psychologists would agree august

Igor Morski graduated with honors from the Interior Architecture and Industrial Design Faculty at the State Higher School of Fine Art in Poznań (now the University of Arts). In the late 80 s and early 90 s he worked for public broadcasting company Polish Television creating set design for TV theatre, culture and commentary shows. In the early 90 s the artist pursued a career in press illustration, working for leading Polish titles includ- ing Wprost, Newsweek, Businesweek, Businesman Magazine, Manager Magazine, Charaktery, Psychologia dziś or recently Focus. So far, he has created about 1000 illustrations. His work also regularly appears in international magazines (American Deloitte Review, Australian Prevention, Money, ITB and Men s Health ). He is a winner of many prestigious awards including Communication Arts Excellence Award (2008, 2010) and Applied Arts Award (2010).
