MMS AG Main Dairy Applications Milk Cheese Whey Water Cold sterilization for Extended Shelf Life (ESL) milk (MF) Milk concentration (UF and RO) Protein standardization (UF) Casein Whey protein fractionation (MF) Milk pre-concentration for soft cheese and quark (Lactose standardization, protein standardization) Whey concentration Whey protein concentrate production Whey de-salting Whey protein micro-particulation Brine water clarification Production of RO water Recovery of condensate water

Bacteria MMS Milk Sterilization The Microfiltraion(MF) systems enable 99.9% reduction of bacteria Retentate (bacteria & fat) MF membrane Applications Production of Extended Shelf Life (ESL) milk Permeate (protein, lactose and salts) Production of high purity Milk Protein Concentrate (MPC90) Production of cheese with silage milk Benefits Physical retention of bacteria 99.9% reduction of bacteria Extremely low fat content in skim milk Low operating temperatures Long membrane lifespan Cheese production without the need for Lysozymeor nitrate

MMS Milk Protein Standardization The Ultrafiltration(UF) systems enables selective removal of lactose and salts in order to standardize the protein content in milk Skim milk feed Protein 30 g/l Standardized milk Protein 28.5 g/l Application Production of drinking milk with standardized protein content By-pass stream Lactose, salts and water (5%) Benefits Recovery of excess milk proteins for yogurt, cheese or powder applications Payback within 1 year Simple system to incorporate Milk protein concentrate TS ~ 12-15%

MMS Milk Concentration with Reverse Osmosis Milk can be concentrated up to 30% totals solids with Reverse Osmosis membrane system Applications Pre-concentration prior to yogurt production Concentration prior to transport costs Pre-concentration prior to evaporation and spray dryer Benefits Whole milk concentration up to 25% TS with RO Skim milk concentration up to 30% TS with RO Low energy costs Low operating temperatures Allows for yogurt production with no powder addition Reduces energy costs for powder factories Reduces milk transport costs

Casein MMS Casein enrichment The Microfiltration(MF) systems enables selective retention of Casein. Benefits Selective retention of Casein Produces enriched casein fraction and a native whey fraction MMS have developed solutions with polymer and ceramic modules

MMS Milk Protein Concentration The Ultrafiltration(UF) systems enables the concentration of whole milk or skim milk Applications Pre-concentration prior to cheese and yogurt production Production of Milk Protein Concentrate (MPC50-90) Benefits Whole milk concentration up to 25% TS Skim milk concentration to 25% TS (MPC 50-90) Allows for lactose standardization Allows for protein standardization

MMS Whey Concentration The Reverse Osmosis(RO) systems enables the concentration of whey up to 18% TS converting waste to value Applications Concentration of whey to reduce transport costs and waste Concentration of whey for animal feed Pre-concentration prior to evaporation and spray-drying Benefits Concentration of sweetor acidwhey up to 18% TS Reduction of transport costs by a factor of 3 Reduces energy cost for powder plants by a factor of 3 Various pre-treatment operations available Clarification/Separation Rotary de-duster Rotating screen filter

MMS Whey Protein Micro-Particulation The MMS_DNSsystem enables the reuse of whey proteins into cheese or yogurt Whey UF Heat denaturing step Holding time Shearing step WPC particulates Cheese Quark Yogurt WPC Ricotta Converts whey protein concentrate to micro-particulatedprotein Heat denaturing with controlled temperature Variable shearing conditions through multiple passes at variablepressures. Splits denaturing step from shearing step in order to control each step independently.

MMS Brine Water Recovery The Microfiltration(MF) systems enables the clarification of brine water Screen filter Brine bath Benefits Concentrates whey up to 24% TS Removes up to 50% of salts from whey Allows for the conversion of acid whey to sweet whey Microfiltration

MMS Concentration with Reverse Osmosis - I Reverse Osmosis can concentrate milk products prior to evaporation in order to reduce energy costs Evaporator -Advantages Well established process in the dairy and food industry Increase of TS by removing water through evaporation Condensed vapour generally is of suitable quality for re-use Evaporator Disadvantages High operating cost due to the steam requirements Rising costs of energy TVR or MVR increases energy efficiency at the cost of hardware costs Requires additional costs in utility infrastructure (steam boiler and cooling)

MMS Concentration with Reverse Osmosis - II Reverse Osmosis can concentrate milk products prior to evaporation in order to reduce energy costs Reverse Osmosis -Advantages Successfully used in the food industry Pre-concentration of whey to 18% and skim milk to 30% TS prior to evaporation Equipment installation cost is substantially less than evaporation equipment due to the compact foot print. RO permeate water can be re-used for CIP of system Substantially lower energy and hence operating costs Reverse Osmosis Disadvantages Limited in concentration level due to osmotic pressure Skim milk ~30% TS Whey ~18 % TS Requires membrane replacements every 1.5-2 years (depending on application)
