Tulum INTROD INTRODUCTION Tulum is one of the most visited and beautiful Mayan cities in Mexico; part of its charm is that it was built facing the ocean, on a cliff from where the turquoise shades of the Caribbean Ocean can be admired in all their splendor. This destination combines culture, history and one of the best beaches in all of Mexico. At the southern end of the archaeological zone is one of the most peaceful beaches in the Riviera. Here you will not find 500- room hotels or a large infrastructure; on the contrary, you can rent luxurious or rustic cabins, depending on your taste and your budget. Tulum is located about 43 miles to the south of Playa del Carmen. In Tulum, the cuisine is based on fish and seafood, freshly caught in the Caribbean Ocean. These marine dishes are prepared with Mayan ingredients and techniques, giving them a unique flavor. By necessity, they consider sustainability first and foremost in all their work and in every decision at the restaurant. Solar panels, power the lights and music and every other little thing that keeps the restaurant running. They ve broken down their waste with zero carbon footprints, creating 100 percent organic compost that is used in regenerating the mangrove environment and interior farming. All cooking is done by open fire within their hand made wood burning oven and grill. Every single ingredient that they touch is deeply rooted within Mundo Maya. All fish are properly hunted and spear caught within the Caribbean and the Lagoons of the Boca Paila. They harvest colorful, exotic produce from communal Mayan farms called Milpas where they work with the Mayan community in all aspects of their education of organic polifarming. Hartwood s Menu changes daily based on the sea and land that offer new harvests each day. Their main focus is steak, and their goal is to share the authentic traditions of perfectly grilled meat from their home in Argentina. The menu features homemade, simple and delicious Italian food using fresh vegetables, olive oil, a simple and tasty red sauce and local seafood all with careful preparation. They also have gluten free pasta and a nice selection of wines, beers and cocktails.
