Delta Oscillys Destemmer at pendulum swing Page 1
Definition Destemming : Destemming is the action of separating berries from stems and pedicel which structures and supports the bunches. Page 2
Data Berry weight (1 to 3 gr) Separation strength grape/pedicel (1 to 5 N = 100 to 500 gr) Page 3
Solution Increase berry weight with by inertia. Setting the bunch in motion Separation on slotted surface Page 4

Delta Oscillys advantages Preservation of berries integrity for almost all grapes varieties. Limitation of juice production. No oxydation before tank storage = less vegetal tastes. Simple product. Page 17
Delta Oscillys advantages Hand-picked and mechanical harvest Easy to adjust : Speed with wire control, cages type Easy to clean : 30 mn (Oscillys 200) Maximum flow rate : up to 20 T/h according to grapes varieties (Oscillys 200) Page 18

Delta Vistalys Vistalys is meant to wineries that are willing to : Valorize their crop thanks to accurate, repeating sorting parameters. Constitute qualitative batches (example: sorting of thrown berries on first separation). Better control crop conditions (ensured qualitative sorting). Productivity gains. To take advantage of the flexibility of a tool available 24 hours a day, 7 days per week (ensured efficiency all day long) Page 39
Clients references in the world Page 40
Harvest Used on a big variety of vine on several continents (Pinot noir, Gamay, Syrah, Carignan, Cabernet Sauvignon, Cabernet Franc, Cabernet Franc, Cinsault, Sangiovese, Barolo, Merlot) Programs adapted for the manual grape harvest or the machine Handling facilitated by the auto-learning The flows allowed by the optical sorting give: A bigger flexibility at the level of the contributions The possibility of making several qualities of batches Page 41
Harvest Clients testimonies: Speed Easy to use High precision Sorting regularity Better utilisation of staff skills for other functions Page 42

Inertys process Page 44
What to do with? For the users, that is used to work out white and rosé wines adapted to the new consumers needs : fresh, fruity, aromatic, easy to drink, colour stable (rosé) wines Page 45
How it works? Inertys makes it possible to completely avoid the contact between oxygen and the grape or musts throughout all pressing. Inertys preserves the grape flavour precursors and makes it possible the winemaker to reveal 100% of the potential of its type of vine Page 46
Bucher XPlus Inertys Page 47
Bucher XPert Inertys Page 48
Competitive advantages Inertys is patented Only system able to provide neutral gas to the press with a sufficient instantaneous flow 100 % of the musts are protected Low consumption of neutral gas Page 49
Harvest feedback Customers testimonies «Valorization of last pressing juices which makes profitable the installation more quickly» «Rosé and white wines adapted to export sales» «A great aromatic richness» «Colour stable rosés» «Global winemaking process in reductive conditions» During the blind-tests tasting, the Inertys method is systematically recognized The users are convinced of the benefit of Inertys technology and became our best ambassadors Page 50

Presentation context This presentation was given as part of a workshop on grape and juice processing equipment convened by the Australian Wine Research Institute (AWRI) at the 15 th Australian Wine Industry Technical Conference in July 2013. The main intention of the workshop was to provide attendees with information on equipment that is new or unusual or that has not been widely used in Australia. This and the other presentations given were prepared by equipment suppliers, not by AWRI, and AWRI does not necessarily endorse the views presented. Before the purchase of any major winery equipment, AWRI recommends appropriate background investigations being undertaken; including visits to facilities already using similar equipment, consultation with independent experts and the performing of in-house trials. AWRI received no payment from suppliers for the inclusion of their equipment in the workshop. For any further details on the workshop please contact AWRI Senior Engineer, Dr Simon Nordestgaard, by email at simon.nordestgaard@awri.com.au.
