Fry untl goldn brown. --Aftr th fsh has bn pulld from th skn and sparatd, add to th fryng pan. If th fsh s ndd smokd, no cookng s rally ndd. --As th fsh bgns to warm, add gnrous amounts of frshly squzd lmon juc. Fry for 5 mnuts. --Turn hat to mdum and add th doubl cram. Whn th cram bgns to turn color, add salt and pppr. If th fsh has bn flavord wth blu chs or anothr sasonng, not much salt wll b ndd. Kp on low hat for 15 mnuts. --Rmov from hat and allow to cool a bt.
