2014-2015 C-CAP Program Overview Fuel Up to Play 60 (FUTP 60) is a unique in-school program that encourages the availability and consumption of nutrient-rich foods, along with at least 60 minutes of daily physical activity. The program was founded by National Dairy Council (NDC) and the National Football League (NFL), in collaboration with the United States Department of Agriculture (USDA), and is based on a mutual commitment to the health of the next generation. Because FUTP 60 aims at long-term, sustainable change, it requires ongoing support and participation at the grassroots level. Careers through Culinary Arts Program (C-CAP) works with public schools across the country to prepare underserved high school students for college and career opportunities in the restaurant and hospitality industry. C-CAP Arizona is part of this national program supporting culinary arts classes across the state. Dairy Council of Arizona (DCAZ) is helping to further FUTP 60 goals in local schools by offering funding for C-CAP teachers and the opportunity for a senior culinary student to win a scholarship: For C-CAP teachers: $500 to purchase nutrient rich foods for in-class culinary activities and costs associated with FUTP 60/C-CAP Scholarship Program. For Culinary students: Top award of $5,000 scholarship to an Arizona culinary school awarded to a senior culinary student. Second and third place awards will also be given. C-CAP chefs: C-CAP chefs will be available to assist in working with students to implement this program. Students become eligible for prizes in one of two ways: Develop healthy recipes for kids to be included in a FUTP 60 Recipe Book that will be distributed to kids at FUTP 60 events. Serve as a mentor to younger children in elementary or junior high school to educate children about the benefits of healthy eating and instruct them on how to improve their eating habits using the FUTP 60 Program. Background Fuel Up to Play 60/C-CAP Scholarship Program Today, child nutrition is more challenging than ever with epidemic rates of childhood overweight and obesity and the pervasive problem of nutrient deficiencies and sedentary behaviors in youth, which contribute to harmful effects in states of health as well as growth, development and cognition. Many health professional organizations and government agencies identify the school environment as critical for addressing this urgent issue. Meals and snacks consumed at school provide 35to 50 percent of a student s daily nutrition needs, and schools provide the ideal setting for teaching children and teens to adopt healthy eating and physical activity behaviors. Developed by NDC and the NFL, in collaboration with the U.S. Department of Agriculture, Fuel Up to Play 60 engages and rewards students for making a difference in their school environment and for their own health. Students and schools work together to increase sustainable access to nutrient-rich foods and physical activity in schools and create long-lasting behavior changes in youth. More than 70,000 schools in the U.S. are currently enrolled in FUTP 60. Dairy Council of Arizona (DCAZ) brings these national powerhouses to the local level and support C- CAP teachers and students who assist schools in Arizona with implementing Fuel Up to Play 60 during the 2014-2015 school year. The objective of this collaboration is to draw on the expertise of C-CAP teachers and students and the established and successful in-school FUTP 60 program by partnering C-CAP teachers and students with interested FUTP 60 schools with the shared vision of empowering students to eat healthy, moving Arizona one step closer to solving the problem of childhood obesity. Program Details The FUTP 60/C-CAP Scholarship Program is designed to benefit both C-CAP teachers and students, along with benefitting an elementary or junior high school chosen to implement the program. A C- CAP chef that has been trained in the Fuel Up To Play 60 lesson plans will be assigned to assist with this program. The C-CAP students will either develop recipes or provide guidance and education for younger school children. Funding Opportunities Fuel Up to Play 60/C-CAP Scholarship Program Dairy Council of Arizona will award C-CAP teachers $500 in funding to purchase nutrient-rich foods for their culinary-related activities in the classroom. Nutrient-rich foods are defined as fruits, vegetables, whole grains, lean meats and low-fat or fat-free dairy foods including milk, cheese and yogurt. These funds may also be utilized to cover costs associated with implementing this program, such as supplies, transportation or other program-affiliated costs. There are 2 ways to participate in this program. Implement a Healthy Eating Play in a lower grade level Funds received must be used to purchase nutrient rich foods (fruits, vegetables, whole grains, lean meats and low-fat or fat-free dairy foods including milk, cheese and yogurt) for use in any classroom culinary activities. Funds are not limited to be used in the Fuel Up to Play 60 Healthy Eating Play. Funds may also be used to cover costs associated with implementing the program, such as supplies and transportation. For each presentation conducted, students will receive 10 points on their scholarship application. Senior students will be eligible to apply for the $5,000 FUTP 60 Scholarship. Teachers participating at this level also have the option to work with students to submit recipes for the FUTP 60 Recipe Book. See below for responsibilities. Teachers participating at this level will be awarded a stipend of $100 after submission and approval of the Final Evaluation Report. Teacher Responsibilities: o Participate in one training session on FUTP 60 by DCAZ staff. o Coordinate with C-CAP chef to schedule training and implementation. o Work with C-CAP student(s) and chef to prepare at least one Healthy Eating Play(s) from the FUTP 60 Playbook or develop an appropriate alternative activity. o Submit Lesson Plan to DCAZ. o Work with the elementary/jr. high school s FUTP 60 Program Advisor to implement the Healthy Eating Play at the school. o Host 1 site visit of DCAZ staff to observe C-CAP program, schedules permitting. o Provide photos and/or video of implementation of the Healthy Eating Play. o Collect receipts of expenditures of classroom funding and include in Final Evaluation Report. Chef Responsibilities: o Coordinate with teacher to schedule training and implementation of plays. o Train students on healthy eating play. o Work with students on prep work. o Oversee the implementation of the play. o Work with teacher to complete Final Evaluation Report and submit to Dairy Council of Arizona. Student Responsibilities: o Work with C-CAP teacher and chef to prepare at least one of the Healthy Eating Plays from the FUTP 60 program or develop an appropriate alternative activity. o Under the direction of the C-CAP chef, implement the Healthy Eating Play(s) at a local elementary/jr. high school. o Serve as Healthy Eating mentor to younger children at a FUTP 60 school. o Complete Student Scholarship Application. Contribute recipes to a FUTP 60 Recipe Book For EACH qualified recipe submitted, students will receive 1 point on their scholarship application. Senior students will be eligible to apply for the $5000 FUTP 60/C-CAP Scholarship to attend an Arizona culinary school. Recipes must be analyzed to ensure they meet specified nutrient criteria www.papayahead.com/recipe_construction.php. All recipes submitted will be reviewed by a professional chef for appearance, taste and culinary feasibility. Teachers participating at this level will be awarded a stipend of $50 after submission and approval of the Final Evaluation Report. Teacher Responsibilities: o Participate in one training session on FUTP 60 by DCAZ staff. o Submit Plan of Action to DCAZ. o Coordinate with C-CAP chef to schedule training and implementation. o Collect receipts of expenditures of classroom funding and include in Final Evaluation Report. Chef responsibilities: o Coordinate with teacher to schedule class time. o Work with students to develop recipes, photograph and conduct taste test. o Work with teacher to complete Final Evaluation Report and submit to Dairy Council of Arizona. Student Responsibilities: o Under the direction of C-CAP teacher and C-CAP chef, develop recipes that meet specified nutrient criteria to be included in a FUTP 60 Recipe Book. o Conduct a taste test on recipes. o Conduct nutrient analysis on recipe to ensure it meets nutrient guidelines. o Take photo of prepared recipe with appropriate place setting to enhance presentation. o Receive teacher approval prior to submitting recipe. o Submit recipe and picture electronically to DCAZ. Student Awards Top Award $5,000 FUTP 60 Scholarship to an Arizona culinary school Eligibility: participating senior culinary arts students who will be attending an Arizona culinary school. Second Place Award $200 plus gift basket Eligibility: all participating culinary arts students Third Place Award $100 plus gift basket Eligibility: all participating culinary arts students All participating students must complete the Application Form to be eligible to receive awards. All awards will be announced at the C-CAP Annual Awards Banquet. Scholarship funds will be dispersed directly to selected culinary school through the established C-CAP Scholarship system.
