Sheffield Lake Parks and Recreation Director Brian Nelson last summer proposed involving students to assist in programming and problem solving. 20 w A Taste of By Kathy Germain, R.D. Food Sources of Calcium, The dairy industry's slogan used to be "you never outgrow ' your nesd' for milk." Though thisraay_havebeen seen by some as fust a sales pitch, kst week's article told,of the continued need for calcium throughout Ufa. Seventy-five percent of the calcium in the American diet comes from milk and milk products. There may, be several reasons why people choose to reduce theu intake of dairy products, which results in ilecrgased calcium intake, as they age. One of the most common reasons la a diminished ability for the, body to digest lactose or "milk, sugar". This can cause cramping 1, gas, and even diarrhea in some people., Others cad tolerate dairy products In small amounts without a problem. If you daii't digest lactose, but still want a good source of calcium, yogurt b a good choice. The bacteria used tn ' making yogurt has already digested the lactose and it should bo rbuch easier on your system. Other options are to buy low lactose mlu; or cottage cheese if available in your grocary store.,,, You can also buy lactase to treat milk. This is sold as Lact Aid and should be available at your pharmacy or a httahh food store. There arc still other people, who stop eating dairy products because they think of them as high in fat This is true if you choose whole milk or whole Tt*'-*V cheeses and ice creams. The Tact is that, cup for cup, skim milk [90 calories} has about hall the calories of whole milk (160 calorie*) and offers a bit more calcium, milligrams (mg) for skim milk and 288 mg Tor whole milk. The same holds,true for, ice cream (350 calories and 151 tug of calcium) and ice milk, (184 calorics and 17S mg of calcium) per cup. Similar comparisons can be found in whole, milk and skim milk cheeses. The following foods supply the body with about 300 mg of calcium: 8 oz. lowfat milk; 1 cup yogurt; 11/2 oz. cheese; 2 cups cottage cheese; 2 1/2 oz. canned sardines (with bones); 1 OL anned salmon (with bones); 8 oz. 'bfir or 4 pz. blanched almonds- Cream auc butter. even though dairy products, contain minimal calcium because it is not a fat soluable mineral. Calcium is also found Li some vegetables such as soybean. kale, spinach, broccoli, chard,, mid rhubarb. Salmon Loaf 1-15 oz. can salmon with bones 1/2 c. bread crumbs, 2 Tbsp. margarine, melted 2 egg whites 1 1/2 Tbsp. minced onion,. 2 tsp. parsley, minched 1 Tfasp. green popper, minced 1/4 tsp. Worcestershire sauce Dash of hcl pepper sauce Mustard sauce (recipe follows) Drain salmon. Grease 1 quart loat pan. Combine the fish, bread crumbs, margarine, egg whites, onlod. parsley, green pepper. Worcestershire, and hot pepper sauce. Mix well and press into loaf pan- Bako ai 350 degrees for 35 minutes. Serve with sauce. Mustard Sauce ZV dry mustc-d ' ;, 1 tsp. flour 1 c: 1% milk 1 egg yolk, 1 tsp. sugar 1/2 c vinegar, heated Blend the dry mustard, flour, and 1/4 cmilk. Put the remaining 3/4 c of milk in sauce pan. Heat, then stir in mustard mixturu. Ueal the eg«yolk in a small Uow\. Beat In 2 Tbsp. of hot mustard mixture, lhon stir the yolk-sauce mi*, lure into the saucepan. Add the sugar; and cook, stirring constantly, until '^ inicktmed. Stir in heated vinegar.
