1 What s New This Year? NEW MANAGEMENT TEAM University of Evansville Dining is ready to go to a new level! Ken Boyer has been in the Hospitality Business since he was 16 years old working in Fast Food with Marriott. He worked in the Maryland area and attained the position of District Manager supervising 6 locations. He then crossed over to the Hotel Industry with Marriott and worked in various positions in Food and Beverage that included Catering Sales, Food Production Manager as well as Director of Restaurants. Ken then became the Food and Beverage Director of the J.W. Marriott in Cancun Mexico and aided the Hotel in earning the coveted AAA Five Diamond Award. He then worked in other Hotels in the same capacity including Caracas, St. Kitts, Aruba and finally in San Juan Puerto Rico. In 2012 Ken accepted the position of General Manager for the Food Services at the FBI/DEA Academies in Quantico Virginia. In this role he was able to build a lasting relationship with the FBI and DEA representatives as well as advancing the program as it related to Guest Surveys, Associate Satisfaction, overall sales and profitability. Ken looks forward to working with the team at Evansville in order to create successful partnerships with all of our customers on a day to day basis. Please know that he is dedicated to delivering the highest level of Service, Food Quality, Sanitation and Client Satisfaction. Meet Ken Boyer James joins the team as Executive Chef with Sodexo, bringing a fresh approach to the culinary program at the University of Evansville. He began his career working in restaurants as a line cook, where the passion for cooking would soon flourish. After graduating with an Associates degree in Culinary Arts from the California Culinary Academy in San Francisco in 2001, James was able to use his talents and progress his career through various Hotels and Resorts. His career has taken him from one coast to another including Virginia, Florida, Tennessee, Missouri, Arizona, Illinois and California. Meet James Weflen Currently James is responsible for the Dining and Catering Operations at the University of Evansville and is excited to be a part of the team with Sodexo. His diverse culinary background and passion for food, paired with the current leadership team will set the table for a great dining experience.
2 MINDFUL KICK-OFF Mindful allows students to eat healthier options throughout the year We understand the importance of providing balanced and nutritious choices in the dining hall and retail locations. Mindful is a program that makes choosing the healthy choice, the easy choice. Mindful foods balance nutrition with enticing flavors to create an indulgent way to enjoy a healthy lifestyle. Look for the logo which identifies the Mindful choices on campus. Mindful meals follow the USDA s plate design and include a vegetable, protein and wholesome carbohydrate such as whole grain. They also meet certain nutritional criteria: < 600 calories < 35% of calories from fat < 10% of calories from saturated fat < 100mg cholesterol
3 IDENTIFYING NUTRITIONAL INFORMATION Easy to read icons help identify foods University of Evansville Dining identifies all nutritional information at each food platform in the dining hall. You may now view the easy to read icons to help you when making food decisions. All of our nutritional information is displayed on our new digital signage system for easy viewing. Every item we serve also includes a barcode that you may scan from your smartphone that links directly into the myfitnesspal app. All Sodexo recipes are listed in the app and you may search Sodexo Recipes if you would like to add other items on a daily basis.
4 New Food Items at Grill 155 You heard...we listened! We are very excited to start the semester off with some suggestions and changes for Grill 155 that came directly from the students: 1. We will now feature Chicken Nuggets every day as an option. 2. In addition, we will also have a loaded Hot Dog station where you can choose your favorite toppings for your Hot Dog. 3. The grill will also have Made-to-Order items on a daily basis so they are hot and fresh when you receive them. Revised Menus in the Café Court We take great pride in our food program at the University of Evansville. This year we have revised all of our menu selections at each station so that we may serve more of your favorite food items. Innovation and trends have been key when developing these menus. We can t wait to see everyone s feedback for the new options.
