2 Dietetics Internship PROGRAM DESCRIPTION Mayo School of Health Sciences (MSHS) offers a six-month Dietetics Internship at Mayo Clinic in Jacksonville, Fla., providing comprehensive clinical knowledge and skills that enable practitioners to provide complete nutrition services. The program prepares you with the skills and competencies necessary to practice as an entry-level generalist dietitian and to determine your niche within the broad field of dietetics. ACCREDITATION The Dietetics Internship offered by Mayo Clinic in Jacksonville is accredited by the Commission on Accreditation for Dietetics Education of The American Dietetic Association. St. Luke s Hospital is a modern 289-bed facility with 19 surgical suites; an ICU; a bone marrow transplant unit; kidney, heart, liver, lung and pancreas transplant programs; an epilepsy unit; two cardiac catheterization laboratories; and a stereotactic neurosurgery suite. More than 14,000 patients are admitted to St. Luke s each year. The emergency room treats nearly 34,000 patients per year. The current facility was completed in 1985, but St. Luke s Hospital is the oldest hospital in Florida. This hospital has been a Mayo Clinic facility since

3 GRADUATION AND CERTIFICATION Upon successful completion of the Dietetics Internship, you will receive a Certificate of Completion from Mayo School of Health Sciences. Graduates are eligible to take the professional registration examination given by the American Dietetic Association. HOURS For the majority of the internship, your learning schedule will include Monday through Friday with occasional weekends. Hours will vary with rotation. CLASS SIZE Each year, Mayo School of Health Sciences admits nine students to its Dietetics Internship Program at Mayo Clinic in Jacksonville. This ensures you will receive close one-on-one instruction and a comprehensive educational experience. Curriculum The Mayo School of Health Sciences Dietetic Internship Program prepares individuals for professional practice in hospitals, clinics, public health agencies and food service management. During the program, learning experiences are provided to allow the intern to: Assess the nutritional status of patients with complex medical conditions, and design and implement medical nutrition therapy plans. Manage normal nutritional needs of individuals across the life span. Integrate pathophysiology into medical nutrition therapy recommendations. Provide and supervise nutrition education to patients for healthy lifestyle changes. Participate in patient-care rounds, functioning as a member of a multidisciplinary health-care team. Supervise the production of food that meets specified criteria for nutrients, cost and patient acceptance. Supervise aspects of a continuous improvement program, which includes data collection and analysis, as well as system review and development. Assist in supervising the food service at catered events, in cafeterias and inpatient service (traditional and room service). 2

4 Supervise the collection and processing of key financial and productivity indicators, and use the information to monitor the progress of a food service operation. Participate in managing human resources essential to food and nutrition service operation. Manage safety and sanitation issues related to food service. Develop, conduct, supervise and evaluate a community-based program. Provide nutritional care in community-based settings. ROTATIONS This Dietetics Internship incorporates food service, clinical and community experiences throughout north Florida. You will rotate to other facilities for experiences in: Inpatient/outpatient pediatrics Community and inner-city hospital Homeless shelter Food bank Women, Infants and Children (WIC) clinics Correctional facilities Senior services Rehabilitation hospital Long-term care facility Dialysis clinic Corporate wellness Our interns also present nutrition programs to community audiences, thereby increasing their skills in public speaking and working with community groups. GRADING OR EVALUATION Mayo School of Health Sciences uses evaluative tools that include: Written examination Demonstration of skills Self-assessment exercises Faculty reviews 3

5 Our system of evaluation provides students and faculty with a comprehensive look at individual performance, allowing students who are experiencing academic difficulty to be directed to appropriate support resources, including tutoring programs and counseling opportunities. Faculty TEACHING FACULTY The Mayo School of Health Sciences Dietetics Internship program is coordinated and taught by the medical and dietetic staffs of St. Luke s Hospital, Mayo Clinic in Jacksonville and dietetic professionals in the community. They are chosen for their commitment to teaching as well as clinical practice and/or research. Many have published and lectured extensively and are highly regarded in their field. VISITING PROFESSORS/LECTURERS A hallmark of higher education excellence is the breadth and depth of information and experience provided students by the faculty and visiting experts. Many prominent professors visit Mayo Clinic to lecture on their areas of medical and scientific expertise each year. As a student of Mayo School of Health Sciences, you are encouraged to attend all conferences, lectures and seminars prepared for students, residents, fellows and consulting staff. Admissions PREREQUISITES To be eligible to apply for the Dietetics Internship Program in Jacksonville, applicants must have: A bachelor s or advanced degree from an accredited college or university, with a major in nutrition and food science or dietetics which meets the Commission on Accreditation for Dietetics Education approved course work requirements established by the American Dietetic Association. A verification statement completed by the program director. A minimum GPA of 3.0 (4.0 scale). Applicants are selected based on grades, work and volunteer experiences, leadership qualities, and representation of personal qualities and skills in a personal letter. 4

6 POLICIES AND RESPONSIBILITIES The following Mayo School of Health Sciences policies affect applications and admissions to its programs: English fluency Fluency in written and spoken English is essential to succeed in the program and to ensure patient safety. If English is a second language, you must be able to demonstrate fluency. Satisfactory performance on the Test of English as a Foreign Language examination or the Michigan Test of English Language Proficiency must be documented as proof of fluency. Your test results must be less than two years old. Immunization record For the protection of patients, students and employees, and in compliance with state regulations, Mayo Clinic requires students to be properly immunized: Tuberculin test Varicella, rubella and rubeola immunity Hepatitis B vaccination, signed declination, or immunity lab test Documentation of vaccinations must be provided to Mayo Employee Health Service prior to the start of class. Health status Prospective students will undergo a physical examination or nurse s review at Mayo Clinic and will have the opportunity to update or receive the required tests and immunizations cited above. More information about the physical exam will be provided after you have been offered a program appointment. Appointment to the program depends upon successful completion of the physical examination. Medical insurance Students must have their own health insurance. Evidence of medical coverage must be provided when your educational program begins. Background check Prospective students must pass a criminal background check and/or drug screening required by state laws, prior to enrollment to Mayo School of Health Sciences. Student responsibilities Mayo School of Health Sciences students are expected to attend all scheduled classes, examinations and assigned clinical rotations unless absence is approved. Students are required to exhibit professional and ethical conduct at all times. 5

7 Technical Standards Mayo School of Health Sciences accepts students who are highly qualified for its programs. To be considered for admittance you should exhibit strong qualifications for the health profession you wish to pursue. Applicants to programs must possess the following general qualities: Critical thinking skills Sound judgment Emotional stability and maturity Empathy for others Physical and mental stamina Ability to learn and function in a variety of settings You must be able to perform the essential functions of the profession and meet the standards of the curriculum. Application Process POSITIONS Nine candidates are selected each year for the Dietetics Internship Program at Mayo Clinic in Jacksonville on a competitive basis. The internships begin in January, April and July. APPLY To apply to the program, please submit: 1. A completed American Dietetic Association application form. 2. An official transcript of all colleges and/or university credits. 3. A signed Declaration of Intent to Complete Degree and Academic Requirements (Verification Statement for graduates). 4. A nonrefundable $25 application fee. Mayo School of Health Sciences Dietetic Internship Program participates in the American Dietetic Association computer matching process to select interns. The association contracts with D&D Digital 6

8 Systems to facilitate computer matching. Prospective interns must register with D&D Digital Systems to compete in the dietetic internship matching process. D&D Digital Systems must receive your registration by their September deadline to compete in the November match to begin the program in January or April. 9 Tuition & Financial Aid PROGRAM COSTS A $25 nonrefundable application fee is due upon submission of the application documents. Tuition for Dietetic Internship Program in Jacksonville is $2,400. You also must purchase a professional liability insurance policy for $35 when you begin the program. Other expenses include lab jackets, books, program lapel pins, field trips and meetings. These costs are subject to change. It is necessary to have an insured vehicle at all times throughout the program. Jacksonville is geographically the largest city in the United States, 800 square miles. Rotations occur throughout the Jacksonville area and surrounding counties. You are responsible for providing your living accommodations. You may hold outside employment during the program, if it does not conflict with your program responsibilities. Dietetics Career Overview FIELD DESCRIPTION Dietitians promote health, prevent disease and shape the food choices and dietary habits of patients and the public. They combine extensive scientific knowledge of food, nutrition, biochemistry, physiology and management with the behavioral and social sciences to perform their work. Dietitians work in clinical and community settings, performing nutrition screenings and assessing patients needs. They also provide counseling and regular follow-up to patients to reinforce behavioral changes.
