1 Organic sheep s milk cheese from Knuthenlund About Knuthenlund Milk and cheese is a daily treat for Scandinavians. Knuthenlund in the Southern region of Sealand in Denmark make organic milk and cheese and many other organic food items. Knuthenlund is owned by Susanne Hovmand-Simonsen, who is the fourth generation of her family to live at the estate. On July 1st 2007, Knuthenlund estate converted to organic production and thus became one of the biggest organic farms in Denmark. To ensure high-quality meat and milk, the animals are fed mostly with hay harvested on the estate. Fresh milk is processed at the estate dairy and used in the production of Knuthenlund s award winning cheeses. Original Danish breeds, biodiversity and old Danish plant varieties constitute an important part of Knuthenlund s production. Susanne s husband, Jesper Hovmand-Simonsen, who is also a dairyman, manages the dairy and the rest of the food production. In January 2016, Knuthenlund opened their own mill and now produce various old sorts ofr Danish grain and grind them to flour in their mill.
2 Organic sheep s milk cheese from Knuthenlund Organic handmade sheep s milk cheese, Herman s Heritage Brie The Herman s Heritage cheese is one of the prides of Knuthenlund. The cheese is developed with inspiration from the cheese with a white rind that the great grandfather of Susanne made and which won a prize in The texture is creamy, the flavour is mild, and it is excellent with biscuits, bread or breaded with a compote as a dessert. The Herman s Heritage itself has won gold medals in several competitions, e.g. in the Nordic Cheeses competition of 2010 and 2011, and Premio Roma in Italy in 2010 and In November 2015, it won a gold medal at the World Cheese Award in Birmingham, Great Britain. Organic white cheese in brine The organic white cheese in brine is made from milk from the estates own sheep and according to traditional artisan methods. The sheep s milk gives the cheese a particularly creamy texture. The cheese is excellent for all kinds of salads and cooking, e.g. grilled as a starter on salad, garnished with roasted nuts and a nice vinegar. This cheese has also won a gold medal at the World Cheese Award in Birmingham in November Firm cheese with a natural rind, Stenhoejmark This cheese is made from milk from Knuthenlund s own free range sheep. During the summer, the sheep graze on aromatic herbs and grasses to give the milk a unique taste. The cheese is hand kneaded and hand poured, and during the maturing process it is washed and brushed manually. Stenhøjmark is excellent with bread and biscuits, as a snack, diced in salads or grated on dishes such as pizzas or pies. Stenhøjmark is an award-winning cheese. Honey Hives are placed in different areas of the Knuthenlund estate, which include both forest and fields. This results in a fantastic selection of cold-pressed honey. In Denmark, bees fly freely, and as a result, honey cannot be certified as organic. However, the surroundings of Knuthenlund s bees are all organic.

6 Organic flour from Knuthenlund Organic rye flour All types of grains are harvested from the fields of Knuthenlund and grinded in the Knuthenlund mill, and the production is traceable from soil to table. The grinding happens in an old-fashioned mill of stone in which the ethereal oils and vitamins, minerals and antioxidants are preserved, contributing to the taste and nutritional value of the product. Organic spelt flour The type of spelt grown at Knuthenlund is of the variety called Oberkulmer Rotkorn. This sort has a lower yield than more modern types of spelt and it has an outer shell, which must be peeled before grinding. This makes the sort more expensive to produce. In return, the Oberkulmer Rotkorn is characterized by its high level of protein, vitamins, minerals and essential amino acids. The taste is mild with a light hazel aroma. Spelt flour is generally easy to work with but it has a less tight structure of gluten. The dough is similar to dough made from ordinary wheat flour but it should less firm and more sticky in order to get a moist bread. Organic Øland wheat flour Øland wheat in many ways resembles spelt flour but the grain has no outer shell and does not need to be peeled before grinding. Øland wheat is an old grain sort, and like the Oberkulmer Rotkorn it is characterized by its high level of proteins, vitamins, minerals and essential amino acids. Øland wheat has a slighty sweet, hazel taste. The dough should be kneaded longer than ordinary wheat and should be quite sticky and soft to the touch in order to get a moist bread. Organic rye flour Rye is a very hardy crop and is therefore well suited for cultivation in productions without fertilizers and liquid manure. A high level of diet fibers, vitamins and minerals and a high level of Omega-6 sebacic acids characterize rye. Rye has a very aromatic taste and a characteristic dark color.
