4 SANITIZING After cleaning, rinsing and inspecting of room and equipment surfaces, sanitizing is an important last step to keep food areas free of bacteria. Proper sanitizing leaves a no-rinse-required level of sanitizing that remains on the surface to inhibit the growth of microorganisms.
