He is the highlight of the show when he s around, said Tanner Roberts, senior member of the Mascot Care Team. While Tech XXI lives with a family in Ruston when he s not participating in events on campus, the two-year-old bulldog, which is owned by Louisiana Tech University, is cared for by Roberts and 11 other pre-veterinary students, who normally work in pairs, when Tech is on campus. The team of students follows strict guidelines to ensure Tech s safety. I ve learned a lot about taking care of bulldogs in general, said sophomore Maggie Morgan. It s a challenging breed. 2 Page 2 November 13, 2014 Louisiana Agriculture & Forestry Today Plaquemines Parish Citrus Survey Begins The Louisiana Department of Agriculture and Forestry (LDAF) began surveying citrus trees in Plaquemines Parish. We re looking for 13 different citrus pests and diseases with a focus on citrus greening, citrus canker and the Asian citrus psyllid insect that carries citrus greening disease, said LDAF Commissioner Mike Strain, D.V.M. The insect and both diseases are known to occur in limited areas of the state. LDAF s focus on Plaquemines Parish is in response to the significant citrus nursery stock and citrus fruit production in that parish. Two full-time survey personnel will be conducting door-to-door inspections through next summer, looking for citrus trees. The survey will begin in the southernmost part of the parish and will move northward toward Belle Chasse. All residential and commercial properties in the parish will be checked for affected citrus. Surveyors will be easily identified, with a LDAF vehicle, ID badge and shirt. Citrus trees found on a property will be inspected. If any pests or diseases are suspected, then a plant sample will be collected, added Strain. If property owners with citrus trees are not at home, a door hanger will be left notifying the owner that the LDAF inspected accessible trees and collected a plant sample, if warranted. Trees that are not accessible will not be inspected but the property owner will be asked to contact the LDAF to arrange for an inspection of those trees. The goal of the survey is to determine whether these pest problems are present in the parish, posing a threat to the citrus industry. Citrus is approximately a $10 million industry in Louisiana. The LDAF established a quarantine effective November 24, 2013 which restricts movement of citrus trees, citrus nursery stock and citrus plant parts from parishes where plant diseases called citrus greening and citrus canker and the insect called Asian citrus psyllid have been confirmed. Quarantined areas for citrus greening include Orleans and Washington parishes. Quarantined areas for Asian citrus psyllid include the entire state of Louisiana for interstate movement of regulated materials unless properly treated. Quarantined areas for citrus canker include all of Orleans Parish and portions of Jefferson, Plaquemines and St. Charles parishes. LDAF horticulture officials say citrus greening renders the fruit unmarketable and ultimately causes the death of infested plants. Asian citrus psyllid insects move citrus greening from one plant to another. Citrus canker causes premature leaf and fruit drop, twig dieback and tree decline. It is spread by winddriven rain or through the movement of infected citrus plants. The disease can also be moved on contaminated yard equipment, tools and clothing. Fruit from affected trees does not pose a public health issue and is safe to eat. Mexican Velveeta cheese Tony Chachere s seasoning to taste Red pepper to taste 1 small cauliflower 1 small bunch broccoli 1½ cup milk ½ stick butter 2 tablespoons flour ¾ cup grated cheddar cheese Salt and pepper to taste Ritz crackers or cheesenips, crushed Cut cauliflower and broccoli and steam for two minutes. Place in a greased, 2 quart casserole. Melt butter and add flour. Stir until blended. Slowly add milk, stirring constantly. Add cheese, salt and pepper and bring to a boil. Pour over vegetables and add crushed crackers on top. Bake at 350 degrees for 20 to 25 minutes. Sweet Potato Pies Lee Ann Fields 6 Louisiana sweet potatoes, cooked & mashed 1½ cups butter 1½ cups white sugar 3 eggs 1 cup Half-N-Half milk 2 tsps. Cinnamon ½ tsp. salt Boil sweet potatoes in their jackets until cooked (a thin knife should be able to go through easily). Beat the eggs in a large bowl. Add butter and sugar and mix well. Cut the top and peel down, removing any stringiness from the potato with the skin, cut bottoms. Place hot, peeled potatoes on the butter in the bowl with sugar, crush together. Add beaten eggs. Stir in spices (to taste). Slowly fold in Half N Half milk do not stir vigorously just enough to blend in. Pour into 2 unbaked 9 inch pie crusts. Bake at 350 degrees for minutes, until brown. Number of servings: 12 Cook packages of spinach just enough to steam the spinach. In a large pan, melt 1 stick of butter and slowly stir in enough flour to make consistency of roux. Once it becomes thick, pour 1 pint whipping cream and continue to stir. Add green onions, finely chopped garlic, Tony s seasoning and pepper. Drain spinach when cooked. Add spinach to mixture above. Once it s mixed, add Mexican Velveeta cheese. Add a little nutmeg spice and red pepper not too much to overpower the taste. Mix all together until cheese is melted. Once cheese is completely melted, pour mixture into baking dish and bake in oven for about 20 minutes. Temperature: 350 degrees; Cooking time: 20 minutes; Number of servings: 6 Candied Yams Peel and cut four large sweet potatoes into slices. Cover with warm water and 1 tablespoons baking soda. Soak for 10 minutes. 1 ½ cups sugar 1 cup water ½ teaspoon salt 1 teaspoon cinnamon 4 tablespoons butter Combine sugar, water, salt and cinnamon in a skillet. Bring to a low boil and add raw, drained sweet potatoes and cook until syrup is thick and potatoes are done. Add butter. Serves 4 to 6 Breakfast Casserole 1 lb. hot pork sausage 5 eggs 6 slices bread 2 cups half & half Soft butter 1 tsp. salt 1/2 cup shredded sharp cheese 1 tsp. dry mustard Mix mustard and vinegar and soak overnight. (Photo by Johnny Morgan) By Johnny Morgan Marrero At-risk young people in the greater New Orleans area are gaining life skills from the LSU AgCenter in addition to culinary training provided by Café Hope, a farm-to-table restaurant. The program consists of 16 weeks of intensive training to prepare the young people for careers in the hospitality industry, according to Luis Arocha, executive director of Café Hope. The program is a full culinary training program that works with youth from ages 17-23, he said. The first four weeks, we concentrate on meeting their holistic needs. They don t go into the dining room, and they don t go into the kitchen. During this period the focus is totally on life skills, Arocha said. This is when our partner, the LSU AgCenter, comes in with lessons on horticulture, financial literacy and health. The young people learn about spiritually as well as just learning about themselves and the industry before they set foot into the restaurant. The first four weeks are what we call the Seeds of Success, he said. That s when we try to focus on them as a person. The next six weeks the young people learn every job in the dining room, and the last six weeks of the program they work with three professional chefs in the kitchen. Arocha said the partnership with the LSU AgCenter is huge for Café Hope, because the information the young people learn does not stay just with them. They are actually taking it home. Some of the students are already parents, so they are also passing the information on to the next generation, Arocha said. We are a seed to table restaurant, so we tell our donors we would stretch their dollar as far as we can. So we started a garden, and the AgCenter has been great working with us, he said. While most restaurants operate on a 30 to 35 percent food cost, last month Café Hope was at 19 percent, he said. During the classes, there is some lecture, but there is also a lot of hands-on learning, Navarro said. They need to be aware of things like heart-healthy foods and the importance of a low-sodium diet. All of these things are important for the profession they are entering. AgCenter horticulture agent Sarah Bertrand also teaches a weekly class during the life skills portion of the training. I come every Wednesday from 11 a.m. to 2 p.m., and we have some lecture and activities in a classroom setting, then we go into the garden, Bertrand said. When Bertrand started working with the students, they had been using the produce from the garden but had never been there. She teaches them to see the value in their food, such as how much it cost to buy a cucumber versus the price of growing one. I also teach them the importance of getting outside and working, and we look at the different types of soils and what is important about each, Bertrand said. We also talk about pests, diseases and other animals and how to manage them. Sidney McClendon, a 22-year-old from Marrero, said the program has helped her. I was somewhat of a troubled teen, she said. I dropped out of school when I was 18, and I tried other programs, but none of them were like Café Hope. McClendon is in her sixth week in the program and wants to join the John Besh s Chefs on the Move program and eventually open her own bakery. Arocha said 95 percent of these young people are from the westbank, and they are referred by their parents, churches or the legal side, such as probation officers. We began four and a half years ago as an affiliate of Catholic Charities, he said They were good enough to seed us and support us the first three years, and we became our own 501(c)(3)last July. Right now 85 percent of the kids who enter the program successfully complete it, Arocha said. It s sad, but some of them are just not ready to receive the message. We like to think of Café Hope as more than a restaurant, he said. We d rather think of it as just a community place for people to come. Café Hope operates on income from the restaurant and catering and fundraising. The restaurant is open to the public Tues. through Friday from 11 a.m. until 2 p.m. and Friday night from 6 to 9 p.m. Arocha said he tells his customers, when they come to Café Hope they not only feed their hunger, but they can feed their soul because every penny they spend is invested in the young people and back into the community. 20 Page 20 Arrests made in forestry equipment theft & damage Baton Rouge, (October 27, 2014) Louisiana Department of Agriculture and Forestry (LDAF) investigators say two Beauregard Parish men are charged with theft of forestry equipment and criminal property damage following a joint investigation with Evangeline Parish detectives. Ricky L. Cooley, 46, was arrested Oct. 15 at his residence in Beauregard Parish and Everette N. Miller, 68, was arrested Oct. 16 after turning himself into the Evangeline Parish Sheriff s Office. Investigators say the Evangeline Parish Sheriff s Office received a complaint that a Tigercat feller buncher was stolen from a logging site on Spring Prairie Road in Mamou, La. in December 2013 and other forestry equipment was damaged. Earlier this month, Evangeline Parish detectives received information that Cooley and Miller were in possession of the stolen equipment. As a result of this investigation between our LDAF enforcement agents and the Evangeline Parish Sheriff s Office, we were able to recover the stolen forestry equipment and secure arrest warrants for Cooley and Miller, said LDAF Commissioner Mike Strain, D.V.M. Both men have been released on $15,000 bond. If convicted of theft of more than $25,000, the suspects face a minimum of five years hard labor and a fine not to exceed $50,000 or both. If convicted of criminal property damage, the suspects face imprisonment with or without hard labor for at least two years and a fine not to exceed $1,000 or both. Law enforcement is requesting assistance from the community in solving similar crimes in the area. From late September to mid- October, the Allen and Vernon Parish Sheriff s Offices have received multiple complaints of forestry equipment thefts from logging sites. The majority of the thefts are occurring in the West Bay Wildlife Management area of Allen Parish. Investigators report hundreds of gallons of diesel fuel, radios, and various other items have been taken from logging operations. The Louisiana Forestry Association is offering rewards up to $2,000 for information leading to the arrest and conviction of anyone responsible for committing theft and or vandalism of forestry equipment. Law enforcement will also accept anonymous tips. The members of NASFMID are leaders from each of the twenty seven states that maintain state meat inspection programs. The association is a representative of the member states to the United States Department of Agriculture s (USDA) Office of Field Operations, Food Safety and Inspection Service. This segment of USDA is responsible for meat and poultry inspection in the United States. Jim is a graduate of Southeastern Louisiana University with a Bachelor of Science degree in Animal Science. When he chuffs at you or rubs his head against the habitat cage, that s him showing you affection. On game day, Mike only makes an appearance on the field in his trailer if he feels like getting into the trailer. He is never forced or coaxed. I ve learned so much about tigers through this experience, but what is so interesting to me is that he acts just like a household cat. Mike eats a formulated diet specifically made for zoo cats 25 pounds of raw, lean meat, fish, soy, vitamins and minerals. He gets a supplement of an ox tail once a week as a treat. He s very spoiled. If you don t get him his treat fast enough, he ll throw a little tantrum, Davis laughed. Besides caring for the tiger, Davis said he and his caretaker partner are responsible for answering questions from the public. They often ask why he paces so much in his habitat, but he is not pacing out of anxiety. Tigers are extremely active and patrol their territory. It s just his nature. Davis added that Mike recognizes all of his previous caretakers and often recognizes people who frequent his habitat on a regular basis.
