1 Judging Beef Cattle 101 By Cindy A. Kinder and Denise Mavencamp Animal Selection Terms & Transitions Note Taking Oral Reasons Format Sponsored by

Beef Animal Selection Besides industry goals, there are five main criteria to consider when selecting beef cattle. 1. Growth and Frame, Skeletal Size The Beef Industry has ideal final weights and carcass weights of lbs and lbs. Market ready animals can be too small (less than 1000 lbs) and cost the industry more per pound to process or too large (1400 lbs) for processing facilities and the cuts of meat are too large for consumers. Indicators of size are: Market Beef Industry Goals length of body, height at the hip, and length and size of cannon bone. Below is a picture of a large, medium and small Age at market: months frame steer. 2. Muscling Muscling is important to the meat animal industry. Heavy muscled animals produce more meat and less fat. Consumers are very conscious of fat and prefer beef with less fat. You can see indications of muscling: in the hind quarters, width of stifle, and over an animal s top. Look at the side and rear views of a light muscled (black steer) and medium (yellow steer) muscled steer.

3 2. Volume, Performance The volume of an animal indicates how well the animal may perform. You want a deep bodied animal, that can consume large amounts of feed to allow it to grow and reach market weight or maturity faster. Indicators of capacity and performance are ribcage: length, depth and shape (spring), and depth of flank, width of chest floor. Compare the volume difference between these two shorthorns. Also, see the width of chest floor differences between the Hereford and Angus steers. Trimness, Condition The amount of trimness and condition (fat) an animal has also relates to its performance. Depending on the type of animal you have (market or breeding) you want an animal that is not too fat or too thin. You can see indications of fat in the brisket, over the ribs, in the flank, on the pin bones and in the cod / udder region. Look at the pictures. Can you see differences in these two steers? They were born the same week and were on a finishing ration at the same time. 3. Structure, Soundness, Balance Strong bone and correct skeletal structure is important and essential for any animal traveling to feed and water. You can observe structure in: the angle of the shoulder, levelness of top line and hip, pastern angle, and movement. Balance is the overall attractiveness of the animal. Animals should be evenly balanced from the front to the rear. Graphic from Ohio State Extension

4 Note Taking Presenting oral reasons is the most valuable experience you will encounter in livestock judging. No matter what career you choose, to communicate effectively is a must to be successful. Success starts with note taking. In contests, several classes are judged in a short time, and oral reasons are given later; therefore it is necessary to take notes on what you see about the animals in each class. Study the notes before giving oral reasons to a judge. A good set of notes should help you remember the class in your mind. A 5 x8 steno notebook is suggested for use in taking notes. Only take notes on classes that have been assigned as a reasons class. Once animals are evaluated and placed notes are to be taken. The format for notes is broken down into three sections: 1. Top Pair (of animals) 2. Middle Pair (of animals) 3. Bottom Pair (of animals) Each section can then be further broken down into three pieces: Grant is to list one good quality of the lower placed animal in a pair Criticize is to list the bad qualities, one or two things, of the higher placed animal in the pair. Compare is to list two or three good qualities of the higher placed animal in the pair. Below is what a blank note page should look like. You should be able to remember the animals, not your notes.

5 Below is what should be listed in your note page. Top Pair yellow highlighted sections are to be said for the top pair. Middle Pair underlined sections are to be said for the middle pair. Bottom Pair bold and blue highlighted sections are to be said for the bottom pair. # of Animal Grant (Good) Criticize (Bad) Compare (Good) and ID Opening statement say why 1 st place animal wins the class Say any bad qualities of the 1 st place animal. (optional) Say why 1 st place animal beats 2nd place animal by saying the good qualities of 1 st place animal Say the good qualities of the 2nd place animal over the 1 st place animal List why the 2 nd place animal does not win the class. (bad qualities) Say why 2 nd place animal beats 3 rd place animal by saying the good qualities of the 2 nd place animal Say the good qualities of the 3 rd place animal Say why the 3 rd place animal is 3 rd. (bad qualities) List why 3 rd place animal beats 4 th place animal by saying the good qualities of the 3 rd place animal Say the good qualities of the 4 th place animal over the 3 rd place animal Say why the 4 th place animal is last Tips for effective note taking and reasons. 1. Don t start taking notes until you have placed the class and marked your card. 2. Try to be general in the terms that you use to describe the animal in each box, but write as much as possible to describe the animal. You will have time to use terms when you prepare to deliver your oral reasons. 3. Don t forget to write down an ID point and sex, if needed, for each animal. 4. Be sure to use the correct sex of the animal in classes that are of mixed sex and use your ID points when describing the animals. 5. Use the time during non reasons classes to look back at your notes and prepare your reasons or complete your notes.

Coarse and straight shouldered Roaches in top when on the move Wider Chested Bolder Ribbed Shape to top and hip Deeper 3 Highly fit Longer Fronted Leveler Hipped More Attractive Shallowest Bodied Narrowest Chested Also Straight Shouldered Higher Quality Longer, thinner necked, flatter shouldered, more parallel in her lines 2 Most udder development Deepest bodied and easiest fleshing Lowest quality, poorest balanced, flattest ribbed Using these notes, here is an example set of reasons. The words that are highlighted in green are transition phrases that are to be used in every set of reasons. These transition phrases help you move from box to box in your notes. I placed the Senior Yearling Angus Heifers I started with the high quality, highly fit attractive heifer. When compared to 1 the most youthful appearing heifer is nicer balanced, more feminine fronted and sounder structured. She is longer strided on the walk. 1 is the most like the class winner from a standpoint of rib and muscle. But the early maturing heifer is coarse and straight in a shoulder, she roaches in her top when on the move. So she s second. In a closer middle pair of heifers that are similar in their movement I used 1. She is a wider chested bolder ribbed heifer that has more shape to her top and hip. Plus, she s deeper in her rib and flank. The other highly fit heifer is longer fronted, leveler pinned and more attractive from the side. However, she is the shallowest bodied, narrowest chested heifer that s also too straight in her shoulder. She s third. Quality places 3 over 2 in the bottom pair. She is longer and thinner necked and flatter shouldered. She is stronger topped and more parallel in her lines and heavier muscled. The heifer with the most udder development is deeper bodied and the easiest fleshing, but she is the lowest quality, poorest balanced heifer, flattest ribbed heifer in class. So I left her last.
