9 ORGANIC & BIODYNAMIC WINES Organic and biodynamic are very similar; both are grown without chemicals and GMOs. However, biodynamic goes one step further. While organic agriculture will focus on replacing chemicals by natural products, Biodynamic will use preparations to nurture the soil that will help the plant produce its own energizing forces. By increasing bacteria life in the soil, the winemaker provides the best possible environment for the plant to strengthen its vital energy which is one of the most important feature in a wine, not the alcohol degree. 14 FRANCE WINEGROWING REGIONS Did You Know? (Wine Facts): The French consume 60 litres of wine per year which is more than any other country in the world. A third of all French wine produced is exported - is worth more than 10 billion euros a year and is increasing especially from Asian (including Australia) demand. 72% of the adult French population finds it difficult to understand French wine labels. Wine has been produced in France since about 600 BC when Greeks from Phocaea founded Massallia (today known as Marseille) and introduced winemaking. 14

15 ALSACE - Andlau Domaine Marc Kreydenweiss was established in Alsace, in 1650 and has been in the same family for thirteen generations more than three and a half centries. In 1971, at age 23, Marc Kreydenweiss took over the family winery. Among his first innovations were a switch to organic farming and yield reduction through extensive pruning. Most importantly, in 1984, he began focusing on planting specific varietals matched to specific terroirs to capture the truest expression of each grape variety. Domaine Marc Kreydenweiss L âme de la terre Over the years, Marc s love for the soil grew into a love for the earth, and he began to champion the well-being of the planet and preservation of its natural resources. He found himself drawn to biodynamic viticulture, and the domaine began embracing biodynamic practices in By 1990, Marc had converted the estate to 100% biodynamic farming, a distinction shared by a small group of wineries worldwide. With biodynamics, the grapes are organically cultivated, without pesticides or commercial fertilizers, and vineyard work is timed to the cycles of the sun, moon and stars. The vines are pruned very short to control yields and are cleaned of all extra shoots to allow good aeration and exposure to the sun. Pruning also ensures even spacing of grape bunches on each vine. 16 BORDEAUX - Medoc Château La Tour de By - Built in 1825 over the ruins of a former wind-mill, By s lighthouse became the guardian angel of the fishermen and sailors sailing in the dark or in the fog on the estuary. It stands on a hillock, 300 meters away from the Gironde and 15 meters above the water level. Among the significant owners of that vineyard were Pierre Tizon,the seigneur of the fief, then the Comte de Grammont, M. de Lignac and his son-in-law, M. Rubichon who built today s Château La Tour de By. At the beginning of the XXth century, M. Julien Damoy, a successful delicatessen-grocer in Paris, bought this wine-estate which he used to visit very regularly. His son-in-law, Mr Chaumont, Burgundian by birth, then gets in charge of the vineyard until he sold it in 1961 to M. Kaskoreff, a member of Parliament. Four years later, a handful of men repatriated from North Africa, MM, Lapalu, Cailloux and Pagès, looking for an attractive in potential and price estate, discovered La Tour de By and acquired it. They then regenerated this estate of the northern Medoc until 1999, when Marc Pages, an agricultural engineer from Tunis, and his children, became its owner. Over fourty years, this former pupil of the Ecole Coloniale of Agriculture in Tunis, drove this Cru Bourgeois into the very exclusive Union des Grands Crus. 17 BORDEAUX - Medoc Clos Manou - Nothing but perfection could be their motto: Stephane and Francoise Dief have been producing since 1998 a sophisticated and intense wine, close to their cellars in Saint Christoly Medoc. They make high octane Médocs, working at the same caliber as those who tend classified crus. The Diefs built their domaine over time, gradually acquiring parcels of vines in the region of Saint Christoly, particularly those located on gravel and those capable of high density plantings. The vines are meticulously maintained in order to produce low yields of super-healthy berries. The harvest is manual and the grapes are sorted and destemmed by hand. Clos Manou is a selection of the best juice from one third of the property, and its élevage is done in new barrels. Cabernet Sauvignon makes up roughly half of the vineyard s 13 hectares; the other 40% is Merlot, with 10% of Petit Verdot and Cabernet Franc. 18 BORDEAUX - Bordeaux Beau Mayne - At one time, it was necessary to wait again several years to taste Bordeaux wines in good conditions. Dourthe created Beau Mayne in 1979, a round, nicely-balanced Bordeaux with the emphasis on lovely ripe fruit. Beau Mayne is the result of an increasingly strict selection process conducted by our oenologists who all have perfect knowledge of the Bordeaux terroirs. From several hundred batches, only the best are selected, those whose supple tannins and rich fruit render them worthy of a place in the Beau Mayne cuvée. The blend then made to strike the right balance between rich, complex fruit and particularly mellow tannins before the wine is matured in vats and then bottles to put the finishing touch to it. Dourthe s involvement at each step of its creation is truly pioneering. Created in 1988 from the unison of Dourthe and its most skilled partner winemakers and grape growers, Dourthe N 1 has rapidly carved its niche as a shining example of great Bordeaux wine. Dourthe N 1 Blanc 2013 Sauvignon Blanc Dourthe N 1 Rouge 2012 Merlot, Cabernet Sauvignon, Petit Verdot S$ (75cl) S$ (75cl) BORDEAUX - Bordeaux Superieur Chateau Pey La Tour - Since Dourthe acquired the property in 1990, which benefits from one of the finest terroirs in Bordeaux, the vineyards have been extensively remodelled, and rigorous viticultural techniques combined with exemplary vinification have been introduced. These investments in the vineyard and winery alike, have earned Château Pey La Tour a reputation far beyond its appellation as a shining example of a fine wine. - Patrick Jestin (CEO of Dourthe) Examples of English horse armour dating back to the 14th century discovered near the ruins of the tower that is still visible today in the heart of the vines, bear witness to the history of this noble estate. Viticulture developed in the 18th century and the Château was constantly featured as one of the region most prominent wine estates in the famous Féret wine guide, since its third edition in 1874, it was known at the time as Château de La Tour and remained such until Réserve du Château 2008 Merlot, Cabernet Sauvignon, Cabernet Franc, Petit Verdot S$ (75cl) 18 * on allocation / limited quantity. 19 BORDEAUX - Haut-Medoc Chateau Belgrave - Since 1979, we have been extremely privileged to manage this large, classic estate, which is amongst the finest in Medoc. This significant responsibility, continued source of investment and tireless, never truly assuaged quest for perfection, brings with it the immense satisfaction of in someway expressing the character of the soils and revealing in our wines the refinement, depth and personality of this outstanding terroir. - Patrick Jestin (CEO of Dourthe) Situated at the extremities of the St-Julien appellation, separated from its neighbour Château Lagrange by only a stream, Château Belgrave is one of the oldest Cru vineyards in the Médoc. In 1855 it was classified as a 5th growth because of the exceptional quality of its deep gravel soils. The soils at Château Belgrave show remarkable diversity. Two hillocks made up of gravel and pebbles deposited thousands of years ago by the Garonne river, overlying a bed of clay, rise to 23 and 26 metres. This type of soil is favourable to late-ripening grape varieties such as Cabernet Sauvignon, Cabernet Franc and also Petit-Verdot, which now covers 3% of the surface area following remodelling of the vineyard. The gravel thins towards the foot of the hillocks, where the soil is a combination of gravel and sand offering good drainage, and clay outcrops, which are particularly adapted to the cultivation of Merlot. Grand Cru Classé Haut-Médoc 2010 Cabernet Sauvignon, Merlot, Petit Verdot S$ (75cl) BORDEAUX - Saint-Estephe Château Le Boscq - Since 1995 we have been passionately dedicated to renovating this little gem of a property in Saint-Estephe and restoring it to its former glory. Located on a magnificent terroir, right next to the Gironde estuary and overlooked by a majestic residence, with its rich and ancient history, the Château Le Boscq vineyards today produce highly distinctive wines, which elegantly combine the powerful character of Saint-Estèphe with extraordinary finesse. - Patrick Jestin (CEO of Dourthe) Château Le Boscq s reputation dates back to the conquest for the Medoc vineyard, when in 1749, Thomas Barton took over the tenancy at Château Le Boscq. For more than 30 years he dedicated his life to making wine of a quality repeatedly recognised, sometimes even at Cru Classé level, within the different classifications established in the 18th century by the courtiers and négociants in Bordeaux. At the end of the 19th century, Jean Grazilhon, whose grandfather was the estate s steward working under Thomas Barton, become owner of the estate. He had the chateau built in 1891, a majestic residence enjoying views overlooking the Gironde estuary. For more than 30 years, he strived to produce high quality wines, paving the way for Château Le Boscq to be awarded Cru Bourgeois status in Château Le Boscq Cru Bourgeois Saint-Estèphe 2008 Merlot, Cabernet Sauvignon, Petit Verdot S$ (75cl) * on allocation / limited quantity. 20 BORDEAUX - Bordeaux Essence de Dourthe - Once consumed by the taste and passion for wine, the desire to always do better and ultimately to achieve the ideal becomes an obsession. Here at Dourthe, we often dreamt of this ideal wine, made from the best grapes from the finest terroirs in Bordeaux the Art of Blending in its most ultimate form. - Patrick Jestin (CEO of Dourthe) While vines have always played an important role in Dourthe s history, our real foray in viticulture began in 1979, when we took over Château Belgrave. Activity intensified in the early 90s with the further addition of Château La Garde, followed by Château le Boscq in 1995 and Château Grand Barrail Lamarzelle Figeac in In addition to these four major properties, Vignobles Dourthe currently comprises nine châteaux in Bordeaux. Over the course of time, we have acquired an increasingly in-depth knowledge of the terroir on each estate, and our research has highlighted a number of extremely high quality plots, capable of producing exceptional wines. From the nine estates which make up the Dourthe vineyards in Bordeaux, four prestigious châteaux located within Bordeaux s most iconic terroirs also play their part in the creation of Essence de Dourthe. 21 BORDEAUX - Pessac-Leognan Château la Garde - We bought Château la Garde in June 1990, totally seduced by the exceptional quality of the terroir, which is quite possibly one of the finest gravel outcrops in the Pessac-Léognan appellation. Motivated by this ambitious project, worthy of this magnificent terroir, considerable time and finances have been invested and have been rewarded with the increasingly frequent production of delicate, elegant and appealing fine Pessac-Léognan wines. - Patrick Jestin (CEO of Dourthe) The origins of the Château date back to the 18th century, when Domaine de Lagarde already featured on the carte de Cassini, the first general map of France drawn by the Cassini family in The picturesque Charterhouse, built in 1732, was at that time surrounded by valleys and woods. Château La Garde was one of the first properties to embrace integrated agriculture, the production of premium quality grapes with total respect for the environment and for mankind. Château la Garde Blanc 2009 Sauvignon Blanc, Sauvignon Gris S$ (75cl) Château la Garde Rouge 2007 Merlot, Cabernet Sauvignon, Cabernet Franc, Petit Verdot S$ (75cl) Château la Garde Rouge 2009 Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot S$ (75cl) BORDEAUX - Saint-Emilion Château Grand Barrail Lamarzelle Figeac - Château Grand Barrail Lamarzelle Figeac is situated on stony clay-flint terraces known locally as Graves de Saint-Emilion (Saint-Emilion stones), which stretch from the north-west of the village towards the communes of Libourne and Pomerol. Historically, and ever since, this region has been recognised for the high quality of its extremely delicate and elegant wines. We were extremely proud to take over the management of this jewel in the Saint-Emilion crown in Patrick Jestin (CEO of Dourthe) The cross featuring on the wine label is a reference to Saint-Emilion s religious background. This medieval town founded by a monk in the 7th century is famous for its monuments constructed over the centuries by various religious orders. The cross also symbolises the property s complex history. Known at the end of the 19th century as Château Lamarzelle Figeac, the estate was rebuilt entirely in 1895, by a manufacturer from the North of France, a certain Mr. Bouchard. The chateau is the fusion of the ancient small holdings of Clos Lamarzelle Grand Barrail and Lamarzelle- Figeac, which were separated from Château Figeac in the second half of the 19th century. 26 BURGUNDY - Cotes de Nuits / Cotes de Beaune Decelle-Villa - Olivier Decelle was made famous in the wine world for building one of the most visible and appreciated brands of Roussillon wines, Mas Amiel and also for bringing back life to Chateau Jean Faure, the neighbour to Cheval Blanc in St Emilion. Pierre-Jean Villa, is the man who helped develop les Vins de Vienne s a boutique rhône négociant- reputation around the world. He s also a young but gifted winemaker in the northern Rhône. When Olivier Decelle met Pierre-Jean Villa, they immediately understood that they were on the same wave length. 28 BURGUNDY - Cotes de Nuits / Cotes de Beaune Domaine Chevalier Père & Fils - The Chevalier s Estate, was first created by Emile Dubois in 1850, and received great awards back in those days from the Concours Agricoles and the Exposition Universelle. Marcelle Dubois, his daughter, and his Son-in-Law Emile Chevalier inherited the estate just after the First World War and took full responsibility. Conscientious and meticulous, Emile Chevalier, just after the difficult years of phylloxera crisis, spent years of hard work perfecting the quality of the vines in the farm, and his son Georges, with his paternal experience, took succession and began to enlarge and valorize the Estate, first by establishing the planting of three hectares in Gamay. Georges Chevalier learned quickly, not only by the love of his work, but with his serious dedication to make remarkable wines. In 1959, he decided to bottle totally all the harvests. The result was that since 1969, all wines sold to his customers were sold in bottles. 29 BURGUNDY - Cotes de Nuits Domaine Dupont Tisserandot This 23 hectare domaine based in Gevrey-Chambertin was for many years a prime destination for the best négociant houses, who were looking to buy top drawer wine from prestigious appellations (Maison Leroy were a regular customer for the Mazis-Chambertin). Selling off the production in barrel ended in the 1990s, and since Didier Chevillon took over the reins in 1999 almost everything has been domaine bottled and sold under their own label. The style of the wines is a delicate combination of purity of fruit and expression of terroir. The preference is for elegance rather than power, although the wines still have excellent mouthfeel and are very expressive. The fruit is always destemmed, prolonged cold-soaking takes place and indigenous yeasts are used in an attempt to reflect the character of each individual terroir. It seems to be working, as the critics have raved about Dupont-Tisserandot over the last few vintages, with Wine Spectator scoring the 2002 Charmes-Chambertin a massive 98 points! Saint Romain is a small appellation in Burgundy, with only 100 hectares of vineyards, where excellent Chardonnay and Pinot Noir are produced. Alain Gras has been working passionately since 1979, with a great respect for the land. 31 BURGUNDY - Maconnais Domaine de la Bongran consists of 15 hectares spread throughout the foot of the Quintaine hills in the Maconnais. A family estate since at least the 15th century, its vineyards, devoted essentially to Chardonnay, have been passed on from generation to generation to vinegrowers and stone masons. The name of the area Bongran originally comes from bongrain (a wine with good origins comes from a good grain). 36 LANGUEDOC ROUSSILLON - Faugeres Domaine Léon Barral - After founding the domaine in 1993, which he named after his grandfather, Didier Barral decided fairly quickly that biodynamic practices were the best choice for farming his vineyards. Deep in the heart of the Languedoc, in the Faugères appellation just outside the hamlet of Lenthéric, Domaine Léon Barral is a beacon of revolutionary winegrowing. Didier farms thirty hectares of vineyards, and this is no small feat. Incorporating biodynamic practices into a vineyard means working the soil rigorously, and with so much land to farm, it is fortunate that he has so much help. His workers of choice? A team of twenty cows, horses, and pigs that graze the cover crops in and around the vineyards. The simple act of grazing cultivates healthy microbiotic activity in the soil, bringing mushrooms, ants, ladybugs, earthworms, and other essential life forms, which add important nutrients while aerating the soil. 37 LANGUEDOC ROUSSILLON - Saint Chinian Domaine Canet Valette is run by Marc Valette, a young vigneron who made his first vintage in Marc s passion for his wine grew, and in 1998 he invested a considerable amount of money in building his own winery and cellar, equipped with stainless steel for fermentation on the upper level, the wine being run to the lower barrel cellar by gravity. In the meantime, the domaine has grown in size to 18 hectares on argilo-calcaire soil just outside the village of Cessenon. Practices at Domaine Canet Valette lean toward the artisanal. The carefully tended Carignan, Cinsaut, Grenache, Syrah and Mourvèdre are picked later than other producers, with yields between 18 and 30 Hl/Ha. They are fermented with extended cuvaison, sometimes for months, and with repeated pigeage, and it s not unknown for a bare-skinned Valette to jump into the vat and achieve this with his own foot. First planted to vine in the 11th century AD, Ollieux Romanis actually came into existence as a farm producing grains, olives, and mutton in Roman times, some eight centuries earlier. It was the Durban-Latreille family who saw its potential and began planting it to vine. Through the Middle Ages, Les Ollieux became part of the Abbey of Fontfroide and then subsequently changed hands many times. Today it is owned and maintained by the Bories family, who settled at Les Ollieux some 200 years ago. Pierre Bories is assisted by winemaker Jean-Pierre Amiques. There are some very interesting and unusual terroirs featured at the domaine, including Mediterranean red clay, sandstone, and puddingstone. Les Ollieux is currently working its way to fully-organic status having dispensed with herbicides and pesticides in the late 1990 s. 38 LOIRE VALLEY - Pouilly-Fume Domaine Alain Cailbourdin was created in 1980 by Alain Cailbourdin and today it is comprised of 20 hectares (approximately 40 acres) of vines planted in some of the best Pouilly-Fumé slopes. About half of the vines are vieilles vignes or old vines; the other half are vines planted since Grapes grown on the different slopes are vinified separately, thus permitting the production of four different cuvees, each representing a distinctive terroir and aromatic expression. Their constant concern for quality is evident throughout the entire winemaking process, from the vineyard to the cellar.
