2 It s All About The Cocktail 6 or more guests, approximately 2 hours mixology 101 Classic & Seasonal Recipes for the Home Bartender This hands-on cocktail making class will be led by Estate Events Beverage Director Scott Beattie and cover the basic techniques for re-creating great drinks in your home bar. We ll discuss proper juicing, when to shake vs. when to stir, making hand-cut crystal clear ice cubes, stenciling bitters on egg white foam, and incorporating fresh herbs and edible flowers into your drinks. Eight stations will be set up, each one stocked with all of the liquor, mixers, garnishes and special equipment necessary to create a delicious cocktail. Scott will lead you through a brief Mixology 101 presentation then demonstrate the making of each of the eight drinks, each one designed to teach a specific and important technique. Quite to the contrary! Lowering the sweet (sugar) and raising the sour (citrus) in a drink will have the effect of amplifying all the wonderful flavors suspended in the glass. This class will focus on making drinks with lighter spirits; vodka, gin, 100 percent blue agave tequila and light rum. We will fuse these spirits with fresh squeezed citrus, herbs and vegetable juices, lighter mixers and low doses of all-natural sweeteners. These fresh ingredients make for more healthful versions of our favorite indulgences. Your afternoon will afford you the chance to tour the garden with Head Gardener Christine Kim, harvest the freshest ingredients, bring them back to Meadowood and work alongside Chef Daryl Muromoto as he leads you through several delicious, healthful recipes. This is a great opportunity to enjoy ingredients that are full of nutrients, each at its pinnacle of flavor, and picked in its prime season. Next, Scott Beattie will guide you through selected recipes from his groundbreaking book, Artisanal Cocktails, which the New York Times hailed as the indispensable cookbook of farm-to-glass cocktails. 5 cocktails & croquet Classic English Appetizers, Aperitif Cocktails, and California Golf Croquet There s no better way to spend an afternoon at Meadowood than dressed in white, sipping a Bay Laurel Pimm s Cup, snacking on tea sandwiches, and mentally preparing yourselves for a bit of serious competition on our croquet lawns. The afternoon will begin with a short cocktail demonstration with Scott Beattie. You will learn how to perfect the Pimm s Cup, Cucumber Collins and Meadowood Mule each one ideal for the afternoon s festivities. Chef Daryl Muromoto will show you how to build the tastiest cucumber-radish sandwich and how to achieve the perfect crust on puff pastry sausage rolls. Then the fun truly begins. Resident Croquet Professional Mike McDonnell will give you the essential rules of California Croquet and break everyone up into teams. The competition can be fierce, even between people who don t normally consider themselves to be competitive. They have been staunch proponents of the local heirloom bean movement and supply a variety of specialty products, beans being the main attraction. We will be focusing on proper cooking techniques while making pinto beans, refried black beans, scarlet runner beans in chili sauce, and Portuguese bean soup. You will also learn how to make hand-made tortillas from Rancho Gordo s corn masa. This class will explore making cocktails with the native spirits of Mexico, Chile and Peru. You will have the chance to sample a few of the better versions of these spirits neat after a brief primer on each spirit group.
