Olive Oil Division PIERALISI DIVISIONS Pieralisi revolutionized the process of olive oil extraction at the very beginning of Sixties and has become a worldwide leader in the construction of continuous cycle machinery (70% of the global market). Separation Solutions Division Pieralisi has conquered the most important world markets with its centrifuges for industrial applications. Pieralisi is indeed capable of resolving any technological problem regarding the separation of solids from liquids and liquids from liquids. The olive oil content in polyphenols is lower when it comes to the 3-phase olive oil extraction system due to the high quantities of the added water. Last but not least, the olive oil produced by the 2-phase treatment way is more in quantity (1%), of higher quality and stable to oxidation. 8

What is the 2-phase olive kernel? Description The 2-phase olive kernel is the byproduct produced from the olive oil mills that employ the 2-phase olive oil extraction method, that means no water is added and no liquid effluents are produced. The 2-phase olive kernel is the 80% of the olives treated in the olive oil mill. Composition 65% water content 32% solids content 3% oil content 10

Treatment stages Kern separation The 2-phase olive kernel is transferred to a centrifugal kern separator, which extracts the wooden part of the olive kernel. The quantity extracted constitutes the 10% of the initial product. The calorific value of the kernel wood is appr. 4.200Kcal/kg 14
