Low acid foods must be canned under pressure. 4. Dried products should be wrapped in clear plastic or sealed in jars. 5. An exhibit consists of one jar for freezing, two standard jars for canning, one container for drying, except for jerky (six strips) and dried fruit (six sections). 6. LIMIT: An exhibitor may NOT enter more than 20 entries total. Each entry must be a different item. Example you can entry a peach jam and peach jelly but you can not enter two peach jams. Labels MUST list type of product, the date, and process (i.e: apricot jam, pectin method; apricot halves water bath processed; frozen green beans, blanched one minute, to be used within three months). 7. Use of paraffin or use of other than Ball or Kerr jars will disqualify exhibit. New screw rings must be used. 4. Entries must be labeled with product name, date of preparation, processing method and processing time. 5. If opened jars are not called for, the contents will be disposed of. youth who excel at the art of home canning. Ball & Kerr Home Canning is offering First Award honoring Youth Categories. To be considered for Jarden Home Brands special awards, exhibitor must state on entry form brand name of jars used. Judges will select the best entries submitted by a youth in fruit, vegetable, pickle and soft spread categories canned in Ball jars sealed with dome lids or canned in Kerr jars and sealed with Kerr lids. In addition, selections of the two best entries submitted by adults in the Soft Spreads category will be limited to entries prepared using one of the Ball Jell Pectin: regular, no sugar needed or liquid. The UCP from the Ball Fruit Jell package must accompany the entry as proof of purchase.
