Recipes Page 10 SIMPLE SYRUP To make one gallon, dissolve 5 lbs. of sugar into 2-1/2 quarts of water. Warm water may be used to accelerate the dissolving of the sugar, however, it is not necessary to boil your Simple Syrup or heat the water. The warmer the water, the longer the syrup must cool before using. Simple Syrup can be made in a large quantity, efficiently, and with no mess by using a Mixing Container. Mixing containers come in 10, 20 and 32 gallon sizes, complete with lid and pouring spigot. Add the proper amount of water to the container, then slowly pour in the sugar while stirring with the paddle. Sugar will be very difficult to stir up from the bottom if added before the water. Sodium Benzoate should be added at this time. Stir occasionally until the mixture is clear, about 20 minutes. Add the Citric Acid once the simple syrup is mixed well and is clear. FLAVORS SHAKE ALL FLAVORING CONCENTRATES WELL BEFORE USING. To mix flavors, measure 4 oz. of the desired flavoring concentrate and pour into a plastic gallon jug. Fill with Simple Syrup from the spigot of the mixing container, cap and shake well. PRESERVATIVES Shelf life of SnoWizard flavoring concentrates, when stored properly, is from 24 to 36 months. The shelf life of mixed flavors is approximately 7 to 14 days. To preserve flavors for months, add 1 oz. of SODIUM BENZOATE and 1/4 oz. of CITRIC ACID, per gallon to the SIMPLE SYRUP when mixing. Add each ingredient separately and mix well. CAUTION! Do not combine or pour together the Citric Acid and Sodium Benzoate, as they will solidify. CITRIC ACID To enhance your fruit flavors and give them more zing, add 1/4 to 1 oz. of Citric Acid to each gallon of mixed flavor. Suggested flavors are marked with a T on page 3 of this catalog. Name these flavors Sour Grape or Sour Cherry.

Page 11 Recipes Flavoring concentrates give you the ability to make your own line of uniquely flavored syrups to create whatever kind of flavored shaved ice you wish to sell, essentially increasing your sales and your profits. BASIC SYRUP RECIPE VARIATIONS CMC POWDERED GUM can be added to your syrups to improve the way it adheres to the snow. It achieves this by causing the syrup to gel slightly when it is cooled by the snow. This is especially beneficial if you make your syrup using a reduced amount of sugar. Use one rounded teaspoon of CMC to a gallon of finished syrup. The trick is to mix the CMC in without it forming one big glob. We recommend that you mix a rounded teaspoon of CMC in 1 to 2 pints of hot tap water in a high speed blender, then add this as part of the hot water to top off your finished gallon of syrup. The CMC can also be dry blended with the sugar. To do this, first place the sugar in the jug. If the jug is moist inside, cap and shake, the sugar will absorb the moisture. Add one rounded teaspoon of CMC, then cap and shake the jug to dispense the CMC uniformly throughout the sugar. Now, add hot water, shake and proceed with the other ingredients. COLADA SYRUP RECIPES Any of our flavoring concentrates can be used to make Colada flavored syrup. To make, add 2 fluid oz. of Coconut or Pina Colada flavoring concentrate and 2 fluid oz. of the desired flavoring concentrate to a gallon of finished syrup. Mix as described above. NOTE: We suggest that you limit the amount of Fruit Acid to no more than 1/2 fluid oz. to a gallon of finished syrup, since you usually want Colada flavors to be sweeter. CREAMY TROPICAL SYRUPS Mix syrups as described above, except add one to three 12 fluid oz. cans of evaporated milk along with the hot tap water in the final filling of your finished gallon of syrup. Combining the evaporated milk with the Colada Recipe above, you can make outstanding exotic syrups. CREAMY DELIGHTS WITH SIMPLE SYRUP Cream Flavors can also be made by adding evaporated milk or Vanilla Ice Milk mix to simple syrup and your regular flavors. To make one quart, combine 4 oz. evaporated milk with 1 oz. flavor concentrate, then fill the rest of the bottle with Simple Syrup. Shake well and refrigerate. To make one gallon, combine 20-24 oz. evaporated milk with 4 oz. flavor concentrate, then fill the rest of the gallon jug with Simple Syrup. Shake well and refrigerate TIPS ON USING EVAPORATED MILK IN RECIPES When using evaporated milk to make your cream flavors, we recommend the use of a quality brand name milk, such as Pet or Carnation. Generic or store brands may be of lesser quality and have a tendency to curdle easily, especially in certain flavors with a citric acid content. Milk will compliment certain flavors while not being suited for others. Citrus flavors with high acid content are not recommended with milk as the acid may cause the milk to curdle. We always recommend using preservatives, and never using Fruit Acid when adding evaporated milk to your syrups. All syrups containing evaporated milk or any dairy products should be refrigerated at all times when they are not in use.
