Sky Harvest is a social enterprise that brings agriculture to underutilized spaces in urban environments and drives sustainable positive change in the food system. Company founder Aaron Quesnel engaged the consulting team to create a business plan for a rooftop greenhouse that will provide restaurants with fresh produce. The students undertook extensive market research, interviewed stakeholders and conducted surveys to collect relevant data. The team s work reflected their passion for sustainability, says Aaron. The market research has been extremely valuable in terms of gaining insights into suppliers, logistics and delivery processes. 3
