" A PROFESSIONAL START TO A CREATIVE FUTURE " JANUARY 2016 PROSPECTUS In 1991, Kevin Warwick opened the doors of the Warwick's Chef School, in Onrust River, near Hermanus. (Approximately 120 kilometres outside Cape Town, on the Garden Route side.) The Hermanus area is known for it s wonderful beaches, whale watching, many different recreational and adventure activities and the fantastic Hemel-en-Aarde Wine Route. Students also enjoy the Hermanus nightlife and the regular festivals that the town has to offer. The Warwick s Chef School is situated in the Hemel-en-Aarde Village and has given hundreds of students the first stepping stone to successful careers in the hospitality industry. The Warwick s professional chef training course is aimed at enthusiastic people with a passion for fine cuisine, who are serious about pursuing a career as a chef, whether in a restaurant, guest house, hotel or industrial style catering, locally or abroad. Students are equipped with the knowledge and skills to be confident and competent in the chemistry of French Classic Cuisine, embracing the modern food trends and contemporary style cooking. Principal, Kevin Warwick, is supported by his full time and part time instructors and assessors,who share his passion for training students for the hospitality industry with a firm believe in the hands-on approach. Warwick s only accepts a limited number of students per intake. This ensures personal attention and a disciplined schooling environment. At Warwick s, the course is structured so that the students get enough hands-on experience on a daily basis through theory and practical lessons, conducted in the schools fully equipped training kitchen, pastry kitchen and function outlet. Certain lectures are done early mornings and others in the afternoon and evenings. These lectures, together with the catering of certain evening functions, weddings, breakfasts and cocktail parties done at the Class Room Venue, help to prepare the students for the demands, pressures and unusual hours of this exciting career. Warwick s Chef School is an approved centre to offer the CITY & GUILDS international qualifications: CERTIFICATE IN FOOD PREPARATION & COOKING (8060-01) DIPLOMA IN FOOD PREPARATION & CULINARY ARTS (8065-02) " Cheffing is not a job, it's a way of life "

ONE YEAR FULL TIME CHEF TRAINING PROGRAMME 2. In the one-year programme, students receive intensive practical & theoretical training on a daily basis during the first semester at the school. In the second semester, students are placed in three different establishments in the industry and receive one day per week extended training at the school. This industry placement is coordinated by the school and will further equip students with the necessary knowledge and experience for them to make the correct decisions when choosing the right direction in this industry. The progress of the students are continually monitored through tests and assessments throughout the course. The Warwick s 1-Year Full Time Chef Training Diploma covers the following curriculum: Practical cookery in all the food groups including: - Cold Food Presentation Theory of catering in all the food groups - Soups, Stock & Sauces Cooking methods & principals - Meat, Poultry & Offal Hospitality Studies & Catering Operations - Rice, Grains & Farinaceous Products French terminology - Fruit & Vegetables Menu compilation - Egg Dishes Kitchen structure & organization - Bakery Products Food cost control & kitchen accounting - Hot & Cold Desserts Wine studies and appreciation Cake baking and decorating Chocolate work Classical and traditional dishes Table lay-up and service Nutrition and Special Diets Food Safety Hygiene, Kitchen Safety and First Aid Fire Fighting On successful completion of the course, graduates receive a Warwick s Chef School Diploma. Graduates also receive the City & Guilds International Diploma in Food Preparation & Culinary Arts when successfully completing those examinations.

SIX MONTHS FULL TIME CHEF TRAINING COURSE 3. During the six-month full time chef training program, students receive daily intensive practical & theoretical training at the school focusing on the basic culinary fundamentals. We follow the City & Guilds Certificate in food preparation & cooking curriculum. Students progress are continually monitored by tests and assessments throughout the course. The final theory & practical examinations are conducted at the end of the course, and students also complete the City & Guilds International certificate examination. The Warwick s 6-Months Full Time Chef Training Diploma covers the following curriculum: Practical Cookery in all the food groups focusing on the cooking methods: Theory of Catering in all the food groups - Boiling, Poaching & Steaming Kitchen Structure and Organisation - Braising & Stewing French Terminology - Shallow frying & Deep frying Basic Kitchen Principals - Baking, Roasting & Grilling Basic Nutrition - Cold Food Preparation Hygiene, Kitchen Safety & First Aid Fire Fighting Wine Studies and Appreciation Table Lay-up and Service Basic Kitchen Accounting On successful completion of the course, graduates receive a Warwick s Chef School Certificate, as well as the City & Guilds International Certificate in Food Preparation & Cooking.

4. The school is proud to have many graduates working in some of the finest establishments in the country, as well as many who have succeeded in this industry abroad. Students build their careers in all aspects of the hospitality industry, including: restaurants / hotels / game lodges / guests houses / catering companies / cruise liners / yachts etc. As each field is suited to specific students, Warwick s helps to guide graduates in the right direction to build a career path by gaining the right experience along their journey through the culinary industry. At Warwick s, we value a high level of professional pride. Each member of our team of tutors is an expert in their own field and are eager to share their knowledge and expertise to mold young and upcoming chefs. We belief in teaching our students to work with accuracy while under pressure on a daily basis, when doing practical training and gaining experience at the school s onsite restaurant & function venue. This helps to prepare the students for the internship period that they will complete in the industry during the latter part of the diploma course. We encourage our students to be creative during their practical sessions and experiment with different techniques and trends. Our aim is to guide our students to have a solid knowledge of the cheffing field and to equip them with a wide range of perfected skills to ensure their success in the hospitality industry. APPLICATION FOR ADMISSION Warwick s Chef School has a an intake of students every January & July. To start the process of application, we invite you to complete the Warwick s Chef School Application form. This form can be completed online, or you can request it from our office. Once we have received your application, we will arrange for an interview to discuss your options regarding the different courses available and you will also have the opportunity to ask questions and will be shown around the school. The following must please be submitted before the interview: - a copy of your last school report / certificate - a copy of you Identity Document (Copy of passport for international students) - 3 colour I.D. size photographs - a short CV and a hand-written motivational letter - two written references - R150.00 application fee Once you have successfully completed all these steps, your application will be processed. All applicants are required to have a matric certificate or an equivalent thereof, and must be very enthusiastic about becoming a chef. Candidates with lesser qualifications will however be considered, based on an entry exam, interview and approval by the committee. Applicants must be able to read & speak English, have a healthy positive attitude. Once accepted, full payment will be due before the start of the course. It is the responsibility of international students to be in possession of a valid student visa /study permit before starting the course. We will assist all successful applicants to source comfortable accommodation in the nearby villages of Onrust River, Sandbaai and Vermont. Successful applicants will receive a full list of accommodation options, together with their acceptance letters. The fully furnished accommodation ranges from single flats to cottages that students can share while on course.

2016 COURSE FEE STRUCTURE The Course Fees includes the following: - Daily practical & theoretical training - The use of a fully equipped individual kitchen station - All ingredients for daily practical sessions, including those for examinations - Daily student luncheons - Cost of registration for examinations - Certification - Graduation Ceremony 1-YEAR FULL TIME TRAINING PROGRAMME consisting of: - First semester: Full time at the school with theory & practical training daily - Second semester: Industry placement, gaining experience in 3 different establishments Once a week tuition at the school.
