Competitors might dub it an intelligent rip-off. Some of these opinions are correct and others miss the mark completely and this confirms the genius of Stabilmix. Stabilmix is a product chosen by consumers worldwide for more than 45-years. At Montebianco its long lasting success was not enough and we set ourselves the goal of improving a product which was the jewel in our crown. This meant the risk of worrying those who have loved and used it for decades. In a world that chews up and spits out new products in one, or at the most two seasons having a product which is loved for decades is remarkable. Stabilmix s longevity is not by chance. Stabilmix created its own culture a simple, and at the same time professional way of making artisan gelato. Simple does not mean poor quality. Those who use the product understand that judgements made without having tried Stabilmix are meaningless. Stabilmix has a production philosophy allowing artisan gelato makers to guarantee their customers the highest quality product. The new Stabilmix formula, which was created for its 50th anniversary, is an exercise in excellence through which removes the older products shortcoming. Artisan gelato purists believed that the older formula created a slightly cold sensation on the palate. The new formula guarantees a gelato with a warm feel in the mouth and a soft sensation on the palate. Even the most demanding gelato artisans and consumers are satisfied. It is a product which is as easy as the traditional version to use, but has an improved mouth feel and is warmer on the palate. The changes involved using a different selection of structural ingredients using refined vegetable fats. We have also taken measures to make the finished gelato pure white. The result is a highly stable product being displayed which is in keeping with the times. It is the forerunner of the Complete Base Mixes, the product which set Montebianco apart for more than 45 years without needing any changes. It has built up such a cult following amongst our customers that they are positively dependant. It is the ideal solution for gelato artisans who have to manage largescale daily gelato production. Stabilmix allows them to develop customised recipes. Using a pasteuriser, the gelato artisan can mix multiple components, including those requiring pasteurisation, to create a unique formulation which sets them apart from other Stabilmix users.
