1 Star Career Academy New York City, New York Addendum to Catalog effective July, 2014, Volume 7 April 24, 2015 The following replaces the New York Cancellation and Refund Policy on page 82: Priority of Refunds In the event the school has received an excess of funds on the student s account, the school will give priority to refunds as follows: 1. Unsubsidized Federal Direct Loan 2. Subsidized Federal Direct Loan 3. Direct Plus Loan 4. Federal PELL Grant 5. Other Federal, State, private or institutional sources of aid 6. The student The student will be billed if a balance is due to the school after the refunds have been calculated. Any remaining cash balance is due and may be subject to attorney s fees and collection costs. Please note: Examples of Refund Calculations are available in the Financial Aid Office. The following replaces the first paragraph of the General Admission Requirements and Procedures on page 11: In order to be considered for admission into a Star Career Academy school, an applicant must: 1. Be a high school graduate, G.E.D. holder, or demonstrate the ability to benefit from the program of study. 2. Be beyond the age of compulsory education and must not be concurrently enrolled in high school. 3. Undergo an admissions interview to demonstrate an understanding of and interest in the program of study, and be able to benefit from the training provided. 4. Meet any special requirement for the program of study (see below). The remainder of the section on page 11 remains the same. 1 Page
2 The following replaces the Imagine America Scholarship on page 17: IMAGINE AMERICA SCHOLARSHIP Star Career Academy s New York and Syosset Campuses are approved and participate in the Imagine America Scholarship program Twenty-five, one-time admissions based scholarships of $1,000 are awarded each calendar year (January 1 to December 31) at each campus. Scholarships are awarded to qualified high school graduates, adult non-traditional students, and military members who meet program admission requirements at each campus. Those who are interested in applying must do so on-line at Applicants must choose the school and campus to which they are applying and complete the application on-line. The school will be notified of the student s application once it is completed and submitted electronically. Applicants must also provide the documentation as requested below for the type of scholarship they are seeking to the Scholarship Committee at the school. Criteria used to determine scholarship recipients: A. High School Scholarship requirements: a. Applicants must be eligible for Admission to the school based on the entrance requirements in the school catalog b. Applicants must be a High School graduate from the same year in which the student enrolls c. Applicants must have a High School GPA of 2.5 or higher d. Applicants must demonstrate financial need (must complete FASFA) e. Applicants must demonstrate voluntary community service during their senior year in high school f. Applicants must submit a 2-3 page essay on Why do you deserve the scholarship and how will Star Career Academy help you in your current and future endeavors? g. Maintain a GPA of 2.0 for all courses B. Adult Education Scholarship requirements: a. Applicants must be eligible for Admission to the school based on the entrance requirements in the school catalog b. Applicants must be 19 years of age and have a high school diploma or GED c. Applicants may not be a previous recipient of any other Imagine America Foundation scholarship/awards d. Applicants must demonstrate financial need (must complete FASFA) e. Applicants must submit a 2-3 page essay on Why do you deserve the scholarship and how will Star Career Academy help you in your current and future endeavors? f. Maintain a GPA of 2.0 for all courses C. Military Scholarship requirements: a. Applicants must be eligible for Admission to the school based on the entrance requirements in the school catalog 2 Page
3 b. Applicants must be Active duty, reservist, honorably discharged or retiree veteran of the United States Military c. Not a previous recipient of any other Imagine America Foundation scholarship/awards d. Applicants must demonstrate financial need (must complete FASFA) e. Applicants must submit a 2-3 page essay on Why do you deserve the scholarship and how will Star Career Academy help you in your current and future endeavors? f. Maintain a GPA of 2.0 for all courses The number of scholarship applicants often exceeds the number of scholarships available at each campus (25), and as such, recipients are chosen by the Scholarship Committee (Campus President and Financial Aid Director) based on the merits of the student s application. Star Career Academy determines to whom the scholarships are awarded. Students will be informed by mail and electronic communication of the school s decision to award the scholarship. Star Career Academy funds the Imagine America Scholarship and recipients of the scholarship are packaged with the award during their Financial Aid appointment. The scholarship will be prorated and awarded based on the payment periods within the student s academic year. As an example, students in the Medical Assistant program are one academic year or 900 hours. The academic year is scheduled for two Title IV disbursements. The first disbursement of the Imagine America Scholarship would be $500 due 30 days after the first day of class. The second disbursement would be $500 due after successfully completing 450 scheduled hours. Students must maintain a 2.0 minimum GPA for all courses and meet the graduation requirements as outlined in the school s catalog. Scholarship funds for which a student is no longer eligible will be returned to Star Career Academy s pool of available funds for use in awarding scholarships to other applicants. Scholarship recipients who withdraw from Star Career Academy will be subject to the school s cancellation and refund policy and the scholarship funds will be prorated. He/she will learn the basic foundation and technical skill sets required for entry level employment. The student will learn most aspects of a business enterprise and be able to develop, edit and format business documents. Study basic computer functions and programs, including proficiency with keyboarding, word processing and spreadsheet applications. They will develop ways to improve customer satisfaction; strategies for office management, organization and communication; and professional skills appropriate for a workplace environment. Business Office Administration provides the training to work in a number of different career fields, because business is business; only the product or service you re involved with changes. This program will help the student hone basic business instincts and pursue career opportunities in any field where people with sharp business skills are required.

7 BUSINESS OFFICE ADMINISTRATION Course Descriptions CS100 Career Success This course will provide students with basic professionalism and customer service skills to succeed in any workplace environment. Students will learn how to interact with other employees in an appropriate fashion. Students will be introduced to basic computer skills needed for today s market. Students will learn the etiquette of interviewing as well as social media. Students will be introduced to long term career building strategies. Prerequisite: None BOA111 Office Administration This course will introduce students to business office operations. The student will learn about workplace teams, workplace behaviors, and ethical theories. Written and verbal communication skills will be taught. The student will learn about managing physical and electronic records, meeting and event planning, travel arrangements and office mail. The student will use Microsoft Word to create and edit various documents including business letters, templates and newsletters, perform mail merges and use tables. Prerequisite: None BOA112 Business Basics This course will provide an overview of the functions of business in today s society as well as the history of business in America. Students will learn the different types of business ownership and gain and understanding of the impact of the business environment on the overall success of the company. This course will provide an understanding of basic economic concepts and be exposed to the dynamic differences between a free market and planned economies. Students will also learn all of the functions and powerful features of Microsoft Excel. Prerequisite: None BOA113 Accounting Principles This course will provide an overview of basic accounting functions and principles. Students will learn the key elements of the major financial statements including the general ledger, income statements, etc. Students will also learn all functions and features of Intuit QuickBooks. This course will provide instruction in working with all aspects of this application. Prerequisite: None BOA114 Introduction to Marketing This course will provide an overview of marketing concepts including target markets, strategic planning and public relations. Students will learn about product classification and differentiation, and promotion. Students will also work with Microsoft PowerPoint to create effective presentations. They will also be introduced to Microsoft Access to create relational databases, queries, forms and reports. Prerequisite: None. BOA115 Office and Administrative Management This course will provide an overview of the role of management and its importance to organizational success. Students will also be introduced to strategic tactical and operational planning. This course will cover key organizing considerations, centralization, and departmentalization. Students will learn strategies for office management and communication. This course will also provide an overview of human resource concepts and Microsoft Outlook. Prerequisite: None.
8 Professional Cooking Certificate Program 900 Clock Hours Star Career Academy New York, New York Professional Cooking Program Outline Number of Weeks: Day = 36 Course Titles Clock Hours CS100 Career Success 100 PCA100 PCA101 Basic Skills Development Food Preparation PCA104 Restaurant Operations 100 PCA102 Baking and Cake Decoration 100 PCA103 Catering 100 PCA105 PCX200 International and Regional Cuisine Externship Total: 900 Program Description and Objectives The Professional Cooking program prepares students for entry-level kitchen employment in a wide variety of commercial foodservice establishment. Jobs include, but are not limited to, prep cook, line cook, assistant baker, garde manger, or sous chef. Establishments range from large to small, franchise or multi-unit, to independently owned; they include, but are not limited to, restaurants, corporate dining rooms, hospitals, hotels, cruise ships, on and off premise catering companies, retail food outlets, health care institutions or bakeries. This program emphasizes learning by doing with special attention given to the practical side of professional food preparation. Method and techniques are stressed as a foundation. Students learn the fundamentals of knife skills, stocks, soups, sauces, starches, vegetables, meat and fish preparation; pastry arts, quantity food production and service, themed catering, presentation styles, food purchasing, food handler s sanitation, recipe conversion, menu development and restaurant operations. Skills are delivered through technical lessons, instructor demonstrations and practical, performance-based training in industry standard kitchens, as well as simulated dining areas. Students completing in-school training will gain real-time experience through a field externship.
9 Course Descriptions PCA104 Restaurant Operations 100 Hours This course is designed to introduce the student to the occupational and educational goals of the Culinary Arts Program. The student will explore the cooking profession, the range of culinary careers, basic culinary vocabulary, principles of professionalism, personal hygiene, and general kitchen safety. The course will introduce the student to various herbs, spices, fruits and vegetables, and the sensory world of food. Students on the Syosset campus will study the National Restaurant Association s ServSafe Essentials curriculum and take its certification examination. Students on the New York City campus will study for the New York City Department of Health and Mental Hygiene s Food Protection Course and take its certification examination. Prerequisite: None. production. Students will get hands-on experience without the pressure of kitchen deadlines. PCA101 Food Preparation 100 Hours Students are taught the ABC s of the commercial kitchen including equipment and procedures used in professional food establishments. This course provides mastery of the skills of selection, handling, cooking and displaying prepared food in an attractive manner. Prerequisite: Skills Development PCA102 Baking and Cake Decoration 100 Hours Students learn the elements of baking breads, rolls, cakes, pies, and pastries along with the art of decorating cakes and presenting attractive desserts using color and form effectively. Prerequisite: Skills Development PCA101 Basic Skills Development 100 Hours This course provides an introduction to the professional kitchen environment. Safety, sanitation and standards of commercial kitchen etiquette are stressed. Basic knife skills are followed by, organizational practices in conjunction with the methods and techniques of stock, sauce and soup
10 The following is an addition to the General Information located on page 7 in Star Career Academy s 2014 Catalog. In September 2015 Star Career Academy acquired Servfast Computers. ServFast Computers, located in Toms River, New Jersey, has been in business since 1992 and offers state-of-the-art hands-on computer-based training to prepare students for quick entry into the workforce. The campus offers programs focused on IT, Medical Billing, Legal, and Business. Servfast is a private vocational school approved by the New Jersey Department of Education and the New Jersey Department of Labor & Workforce Development and is an unaccredited branch of Star Career Academy, Syosset, NY. Programs offered are approved by the New Jersey State Department of Military and Veterans Affairs. In addition, Servfast is an approved Prometric testing center.
11 PCA103 Catering 100 Hours Students learn how to plan, prepare and present for professionally catered affairs including parties, receptions, and business conferences. Prerequisite: Skills Development PCA105 International and Regional Cuisine 100 Hours Students learn planning, cooking for, and serving a wide variety restaurant-quality cuisines to large numbers of people while controlling food quality and quantity. Students learn to work as a team in a busy kitchen. This course module includes real life experience operating our simulated restaurant. Prerequisite: Skills Development PCX200 Externship 200 Hours An important aspect of training in the culinary field is the experience of applying textbook and lab principles to an actual professional setting. Externships meet the need for practical experience and serves as the capstone. Students are placed in supervised positions best suited to their training. Supervisors report weekly on student attendance, skill competencies, comportment and professionalism.
