5 Examples of Retail ACI Items ACI works well for many items in retail and C-store because menu dose not change very often PC Condiments Bottle Beverages Chips Ice-cream Grab-N-Go Candy Bars Coffee beans Milk for Espresso Cart
6 Why ACI? Helps users focus on high risk items during Forecasting and Precosting i.e. High cost items, perishables, or items that you want more control in terms of cost Helps users manage purchasing
7 What is an ACI Season? A specific ACI file that can be used for a different season of the year Used as part of differentiating weekly consumption of seasonal menu offerings Each season can have distinct menu items offering, meal usage periods, and consumption rates
8 Seasons ACI season 1 (fall/winter) includes marshmallows for hot chocolate ACI season 2 (spring/summer) includes lemon wedges for ice tea.
9 Seasons Even if the items do not vary from season to season, the Average Weekly Consumption might vary and seasons maybe useful You can name the season in 2.4

18 Average Weekly Consumption How much of an item a location go through in a typical week A.W.C. should be checked for accuracy regularly Especially when an inventory unit or portion unit of an ACI item has been modified
19 Production Department Determines which Storeroom Requisition the ACI will be printed Inventory items will print on a separate ACI Storeroom Requisition by entering Department 30, ACI Recipes will print on department responsible for the recipe
20 Issue Frequency By The Week (1) will have the ACI item only print once weekly on the Storeroom Requisition on the first meal of the first day of the production week By The Day (2) will have the ACI item printed only at the first open meal on the day required By The Meal (3) will cause it to be printed every meal where it is required None (0) = nothing will print
21 Issue Frequency Issue frequency also has an affect on how items are ordered If French Fries are set to issue By The Week, the system will order it once a week on the first day of Production Week Items set to By The Day, By The Meal, or None will spread out the ordering schedule through out the week.
22 Menu Category Determines which category the item will be listed in Precost reports By default, items are set to ACI menu category, 30 Use this to your advantage. Group items by station or concept will make it easier to Precost and Forecast
23 Optional Columns Selling Price Revenue derived from the sales of one inventory unit of the ACI item Examples: Single Serve Cream Cheese Inv. Unit = 50 ea/cs Selling Price per Inv. Unit = $25.00 Selling Price = $0.50 each The selling price of coffee which is inventories by the LB would be the average total revenue from the sale of all the coffee that one pound would make
24 Optional Columns Per Patron Consumption How much a person consumed in a week PPC: Based on Patron count, Average Weekly Consumption and Use Switches AWC PPC = Patron Count (*only for meals assigned)

26 How is ACI forecasted? When forecasting, the amount of product ordered is calculated in relationship to the average patron count for each meal ACI will be ordered based on Usage Switch for each meal period Formula: Per Patron Consumption x Patron Forecasted
27 How is ACI calculated?? Example: - Donuts are available for breakfast only, 5 days a week - Average Weekly Consumption is 10 Dozens - Patron Count for breakfast meals is around 1000 for the week FoodPro first calculates PPC for donuts AWC / Patron Count = 10/1000 = 0.01
28 How is ACI calculated?? When forecasting ACI, PPC is multiplied by the patrons forecasted for breakfast meal periods - Patrons forecasted for next week s breakfast = 2000 Per Patron Consumption x Patron Forecasted 0.01 (PPC) x 2000 (Patron Count) = 20 Dozens
