Add crushed tomatoes, next 2 and salt and pepper to taste. Bring to a boil over high heat. Reduce heat to medium and cook 5 minutes, uncovered, until thickened. Stir in parsley. Return egg mixture to saucepan and stir gently over low heat, until soup is thickened and creamy. Season with salt and pepper to taste.
