A mixture of pumpkin, beans and chicken marinated in our balsamic dressing, this salad is a complete meal Balsamic Chicken & Pumpkin Salad 3 skinless chicken breasts, sliced ¼ cup Edmonds Deli Style Balsamic Dressing ½ butternut pumpkin, peeled and cut into 2 cm cubes 100g rocket leaves 1 punnet cherry tomatoes, halved 200g tinned cannellini beans, drained and rinsed 100g green beans, trimmed, blanched and refreshed under cold water ¼ small red onion, sliced 1. Preheat oven to 200 C. 2. Pour Balsamic dressing into a bowl and add sliced chicken. Season with salt and pepper. 3. Toss the pumpkin pieces into olive oil, season and spread on a baking tray. Roast for 15-20 minutes until tender and golden brown. Remove and set aside to cool. 4. Heat a frying pan on high and cook marinated chicken breast slices until tender (4-6 minutes). 5. Toss rocket leaves, tomatoes, cannellini beans, green beans, onion and roast pumpkin with some extra Balsamic and Roasted Garlic dressing and check seasoning. Add chicken breast slices and serve. 35 4 6

Cheese, bacon and our creamy garlic dressing make these crispy potatoes a real treat Fully Loaded Hasselback Potatoes with Creamy Garlic Dressing 4 large potatoes olive oil 4 bacon rashers 100g Puhoi Valley Aged Cheddar, grated Edmonds Deli Style Creamy Roasted Garlic Dressing 2 spring onions, thinly sliced 1. Preheat oven to 200 C. 2. Cut ½ cm off one side of each potato so there is a flat side for the potato to rest on. Place a chopstick on either side of the potato and slice thinly crosswise down the full length. Place potatoes on a tray lined with baking paper. Drizzle with a little olive oil and season with salt and pepper. Roast in the oven until crisp on the outside and tender on the inside (about 1 hour). 3. Meanwhile fry or grill bacon until crispy. Drain, cool and chop into bite sized pieces. 4. When potatoes are done, stuff each slice with a little bacon and cheese and sprinkle a little cheese on top, return to the oven until cheese has melted. Serve with a generous dollop of Creamy Roasted Garlic dressing and spring onions. 60 4

Try this idea to serve beef tenderloin for a quick and delicious ploughman s lunch or the main course at dinner Beef with Rocket and Parmesan and Honey Dijon Dressing 600g whole beef tenderloin, uncut 3 tbsp fresh thyme leaves olive oil ½ cup Edmonds Deli Style Honey Dijon Dressing Extra Virgin Olive Oil 2 lemons 200g rocket leaves 100g shaved Puhoi Valley Parmesan ½ cup capers ¼ small red onion, finely sliced 1. Combine thyme leaves with salt and pepper. Rub a little olive oil on the beef and roll in the thyme seasoning. 2. In a small bowl, whisk together the Honey Dijon Dressing, a splash of extra virgin olive oil and a squeeze of lemon. Season to taste. 3. Heat olive oil in a frying pan until very hot and sear the beef on all sides until well browned. Set aside on some kitchen paper and allow to cool. Using a sharp knife, slice the beef thinly, arrange slices on a large plate. 4. Top beef with rocket leaves, onions, shaved parmesan, capers and drizzled with Honey & Dijon dressing. Serve with extra lemon wedges and crusty bread or croutons. 15 4

Serve these skewers at your next BBQ, but you ll have to be quick, they won t last long! Garlic Chicken Skewers with Avocado & Roast Garlic Dressing 1 lemon 4 garlic cloves, thinly sliced olive oil 4 chicken breast chopped coriander Edmonds Deli Style Avocado and Roasted Garlic Dressing 1. Squeeze the lemon into a large bowl, then slice remaining lemon and add. Add sliced garlic, salt and pepper and ¼ cup olive oil. 2. Butterfly chicken breast and cut into strips. Place in marinade and refrigerate for 45 minutes. Soak 12 bamboo skewers during this time, in cold water. 3. Thread the chicken strips onto the bamboo skewers and grill on a hot BBQ for 10 minutes, turning frequently. Drizzle generously with Avocado & Roasted Garlic dressing before serving. 60 4-6

Try this combination of quinoa with roasted vegetables and feta for a new way to use our French dressing Roasted cauliflower, mushroom and quinoa with French dressing ½ cauliflower, broken into large florets 200g button mushrooms, halved 1 tbsp fresh thyme leaves olive oil 1 cup quinoa, rinsed 2 cups vegetable stock (or water) ¼ cup walnuts, toasted 100g Puhoi Valley Goat s Milk Feta 1 spring onion, finely sliced ¼ cup Edmonds Deli Style French Dressing 1. Preheat oven to 200 degrees C. 2. Place cauliflower, mushrooms and thyme leaves in a single layer on a roasting dish. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 10 minutes, shake then roast for a further 15 minutes. 3. In a small pot add quinoa and stock, bring to boil then reduce heat to low. Cook covered until liquid is absorbed. Remove from heat and stand covered for 5 minutes. 4. In a large bowl, toss the quinoa, toasted walnuts, roasted cauliflower and mushrooms with French Dressing. Crumble over the feta cheese and sliced spring onions. Tip: Also perfect with Edmonds Deli Style Balsamic Dressing 30 4-6
