Dear Whisky Fringer Welcome to the 10th Whisky Fringe. Who d have thought it has been 10 years since my former colleague Robin Torrie half-convinced me that this mad idea of a whisky event during the festival wasn t quite as mad as it seemed. So here we are holding the 10th Whisky Fringe and I m still to be fully convinced that it s not a mad idea! It s a year of anniversaries here at Royal Mile Whiskies, with the 10th Anniversary of Whisky Fringe coinciding with the 20th Anniversary of Royal Mile Whiskies itself. The shop on the Royal Mile was founded back in 1991 by Ian & Ken Taylor of The Cashmere Store, our then next door neighbour. I first worked for them in 1993, but didn t take over until 1997. On top of these anniversaries, we re also very excited about a new shop that we opened last month in Pitlochry. Drinkmonger combines our current areas of expertise in Whisky, spirits and cigars with an extensive range of wines to suit most tastes and budgets. Both Stuart Smith (our Retail Manager) and myself worked with wine in Oddbins heyday in the early nineties and have had lots of fun refreshing our knowledge and putting together a wine list that we re pretty proud of. We ve been assisted in this task by Jonathan Wilson who joins as Manager of the new shop, and who brings a more up-to-date wine knowledge from his previous job as manager of various Majestic branches. He is assisted in Pitlochry by Kimmo Karjalainen who moves north from RMW Edinburgh and also by Stuart Campbell, who also previously worked with us in Edinburgh. please pop in and say hello next time you re heading up the A9. I hope that you enjoy Whisky Fringe. Thanks for coming along and also to all who have attended over the past decade. The event wouldn t happen if it weren t for all you whisky enthusiasts who attend, and in this I include the enthusiasts who give up their weekend to work at the event, pouring and talking about their own whiskies. - Welcome to our 10th annual Whisky Fringe - As always there is a plethora of whiskies (and rums) available to be sampled. Please pace yourselves and make use of both the water stations to constantly rehydrate and the spittoons to discard any excess (both of which are situated throughout the hall). Although 4 hours may not seem like a long time, it is more than enough for you to have your fill. When sampling, take note of the alcoholic strength of each product as listed in this guide; 40% abv is the industry standard strength of most spirits, but as you will see there are plenty of whiskies that are bottled well above this mark. They will need to be treated with due caution and respect. We are not trying to teach you to suck eggs; we simply want you to have a pleasurable day. Temptation is all around, but it is simply not possible to sample everything; so take a moment, select what you think you would like or take advice from any of the actual exhibitors themselves and then give yourself time to fully appreciate the wonder of whisky (and rum). Enjoy! Almost all of these fine drinks are available to purchase from our shop on the Royal Mile, some at a big discount if using your 10 off voucher (terms & conditions apply, see reverse of your ticket). The shop will be open until 8pm this evening and for the entire duration of the Edinburgh Festival. You can also place an order with any member of Royal Mile Whiskies event staff and your bottles can be sent to you (please see RMW staff at the front entrance for assistance). Alternatively all whiskies can be ordered at your leisure from our website: www.royalmilewhiskies.com - Guidance - If you are relatively new to Whisky here is our brief guide to a sensible way to discover the enormous variety of whiskies that are available. It is recommended that you should aim to sample no more than 5 or 6 drams (be aware that some drams may be Cask Strength and above the standard 40% ABV). Always remember to keep yourself hydrated in-between drams. Below is a key to helping you choose a whisky. The idea is to start with a Light (number 1) and work your way towards the Heavily full-bodied (number 5) (1) Light; aperitif-style, sweet (2) Moderate; fruity, floral (3) Medium; robust, light spice, some smoke (4) Full bodied; rich, dried fruits, sherried (5) Heavy; peaty, smoky
- Nosing and tasting - Appreciating a whisky involves nosing it just as much as actually tasting it; the Snifter glass provided is the best glass for this purpose. First gently nose the dram. What aromas can you distinguish? There may be any number of the following and more; Phenols (- peat and smoke) Esters (- fruity or solvent) Floral (- grass and flowers) Cereal (- malty, yeasty) Wine (- sherry and nutty) Woody (- vanilla and toast) Sulphur (- gas and rubber) Feints (- tobacco and leather). Next, add a drop of water. It s worth trying a little without water first to see how it tastes, but the strength of the alcohol might not allow too much flavour to be tasted so a little water will help to make the drink less fierce and stop the strength of the whisky anaesthetizing your senses and reducing the taste you will enjoy. Add a little water at a time to get the right dilution. Individual tastes will vary so experiment with what you prefer some whiskies will be best without water. Take a little sip into your mouth, swirl it around and concentrate on the sensations. There are three elements to look out for if you really want to evaluate the whisky. The taste itself is perhaps the most obvious element - does the whisky taste sweet, bitter, salty or sour? The two other elements are the mouth feel, which occurs before the whisky is swallowed - is the whisky astringent, drying, fizzy, mouth watering? Finally there is the finish of the whisky - does it leave an aftertaste; how long does the flavour last for? Take a bit of time before moving onto a new whisky, to allow your taste buds to recover. There is water available throughout the hall, as well as oatcakes on all stands to help you cleanse your palate. To ensure maximum enjoyment of your day; Don t drink on an empty stomach Pace your sampling Drink plenty of water (refresh your palate, stay hydrated) Use the spitoons provided Retain your ticket it is also a 10 off voucher Remember Whisky is at least 40% alcohol by volume, 4x the strength of wine and 10x the strength of beer!
- The Half Time Orange/Whistle - Listen out for the Half Time whistle today, due at 4.00 pm (5pm on Friday). It is the signal to commence pouring on a few, very select drams, A variety (but not all) of our exhibitors have agreed to bring along one single bottle of something special for you to try today, at no extra charge. Details of what will be available will only be revealed once doors open on each day. This is a one off special, exclusively organised by Whisky Fringe and stocks are severely limited. The exhibitors are under strict instruction to have their special bottle available only from 4.00 pm for just a short window of time (approx. 15 minutes) or for simply as long as the bottle lasts. You may select only one of these prestigous whiskies to sample and must present your ticket to be stamped/marked and have your glass both empty and ready to receive your measure at the relevant stand. (A menu of the selection of Half Time whiskies available will be situated in the centre of the main hall, on a flip chart stand).
