9 Strawberry Oat Muffins 9 Preparation Time: 15 min Bake Time: 20 minutes Makes: 12 muffins 1 cup Quick or old fashioned oats 1 cup Skim milk ¾ cup All purpose flour ⅓ cup Strawberry BiPro whey protein isolate 1½ tsp Baking powder ½ tsp Cinnamon ½ tsp Salt 1 Egg ⅔ cup Brown sugar, packed ¼ cup Butter, softened 1 tsp Vanilla 1 cup Strawberries, sliced chopped walnuts or pecans (optional) Directions: 1. Combine oats and milk and let sit 5-10 minutes. 2. In a separate bowl, mix together flour, BiPro Strawberry, baking powder, cinnamon and salt. Set aside. 3. In a large bowl, beat together egg, brown sugar, butter and vanilla. Add oat mixture and mix well. 4. Stir in flour mixture until just moistened. 5. Fold in strawberries. 6. 11 Strawberry Protein Pancakes with Filling 11 Preparation Time: 15 min Makes: 1 serving (2-4 pancakes depending on size) Filling ¼ cup Ricotta cheese 1 Tbsp Strawberry BiPro whey protein isolate 2 Tbsp Strawberries, mashed Pancakes ¼ cup Plain greek yogurt ⅓ cup Quick oats 2 Tbsp Strawberry BiPro whey protein isolate ¼ cup Strawberries, sliced 1 Egg ½ tsp Baking powder 2 Tbsp Water Directions: 1. To make filling, mix ricotta cheese with 1 Tbsp BiPro Strawberry and 2 Tbsp mashed strawberries. Sweeten to taste, if desired. Mix well and set aside. 2. Place remaining ingredients in blender and pulse until smooth. 3. Cook pancakes (2-4 depending on desired size) on a lightly greased griddle or frying pan on medium high heat. 4. Using a blender, puree olive oil, red wine vinegar, water, ½ cup strawberries, BiPro Strawberry, honey, Dijon mustard and salt until smooth. Stir in poppy seeds. 2. Toss together spinach, nuts, berries and feta. Divide onto 8 salad plates. Top each plate with 2-3 Tbsp of dressing. 25 Strawberry Almond Chocolate Chip Bars 25 Preparation Time: 15 min Total Time: 1 hour 20 min Makes: 12 bars ⅔ cup Almond butter ½ cup Honey or agave syrup 1⅓ cups Quick oats 6 scoops/ Strawberry BiPro packets whey protein isolate ½ cup ⅓ cup ⅓ cup Miniature chocolate chips Dried strawberries, chopped Sliced almonds Directions: 1. Combine almond butter and honey (or agave syrup) until smooth. 2. Add remaining ingredients. Mix well. 3. Press firmly into a lightly greased 8 inch or 9 inch pan. 4. Let stand 1 hour. Cut into 12 bars. Drizzle with melted chocolate if desired. Wrap individually for storage. 27 Strawberry Chocolate Chip Oatmeal Cookies 27 Preparation Time: 15 min Bake Time: 9 min Makes: about 4 dozen cookies 1¼ cups All purpose flour ⅓ cup Strawberry BiPro whey protein isolate 1 tsp Baking soda ½ tsp Salt 1 cup Brown sugar, packed ½ cup Sugar 1 cup Butter, softened (2 sticks) 2 tsp Vanilla extract 2 Eggs 3 cups Oats (quick or old fashioned) 1 cup Dried strawberries, chopped 1 cup Semisweet chocolate chips Directions: 1. Preheat oven to 350 F. 2. Combine flour, BiPro Strawberry, baking soda and salt in a small bowl. Set aside. 3. Beat brown sugar, granulated sugar, butter and vanilla extract in a bowl until creamy. Add eggs and beat well. Add flour mixture; mix well. 4. Fold in oats, dried strawberries and chocolate chips. 5. Drop by rounded tablespoon onto ungreased baking sheets. 6. Crush freeze dried strawberries to form a powder (about 1/3 cup). Place in food processor. 2. Add remaining ingredients and process until smooth and well mixed. 3. Form 1 inch balls (refrigerate mixture about 10 minutes if too soft) and place on wax paper lined baking sheet. Refrigerate until firm. 4. Coat as desired: a. Dust with cocoa powder. b. 35 Strawberry Mousse 35 Preparation Time: 10 min Refrigeration Time: 1 hour Makes: 6 servings 1 envelope Unflavored gelatin ¼ cup Water 2 cups Strawberries (fresh or frozen, thawed) ⅓ cup Strawberry BiPro whey protein isolate 2 Tbsp Sugar or equivalent sweetener of choice 2 cups Whipped topping Directions: 1. Sprinkle gelatin over water. Stir and let sit 1 minute. Heat over low heat until gelatin is dissolved. 2. Place berries, Strawberry BiPro, sugar and gelatin mixture in blender or food processor. Blend/ puree until smooth. 3. Fold in whipped topping. 4. Divide into 6 serving dishes. Refrigerate at least 1 hour before serving. 37 Strawberry Cheesecake Dessert 37 Preparation Time: 15 min Bake Time: 7 min Refrigeration Time: 4 hours Makes: 8 servings Crust 1 cup Graham cracker crumbs 2 Tbsp Sugar 3 Tbsp Butter, melted Filling 4 ounces Light cream cheese 1 Tbsp Sugar ¾ cup Strawberry BiPro whey protein isolate 1 pkg Sugar free white chocolate pudding ¾ cup Skim milk 1½ cup Whipped topping 2 cups Strawberries, sliced Directions: 1. Combine crust ingredients until well blended. Distribute evenly among 8 6-ounce custard cups (about 2-3 Tbsp per cup). Press mixture evenly into bottom and about half way up the sides of the cups. Place cups on a baking sheet and bake at 350 F for 7 minutes. Let cool. 2. Beat cream cheese with sugar. Stir together Strawberry BiPro and pudding mix. Add to cream cheese mixture with milk and mix on high speed until smooth. Stir in whipped topping. Fold in strawberries. 3. Spoon mixture into cooled cups. Cover with plastic or foil and refrigerate 4 hours. Serve with additional whipped topping and sliced strawberries, if desired. Note: Other flavors of pudding (vanilla, lemon or cheesecake) can be used depending on preference. Regular pudding mix (instant, but not sugar free) can also be used, but will change the nutrition facts.
