7 Whole Fish. Vis / Fish While you re in the Cape you must enjoy a snoek braai and make it part of your holiday memories. One can purchase fish like Yellowtail at the harbour just after the fishing boats have returned from sea. Make sure you choose one with firm flesh and make sure the fish is gutted. Ingredients: Melt ½ a block of butter Add a small can of apricot jam 2 teaspoons of crushed garlic Method: Open fish and sprinkle with salt and pepper. Lavish the butter mixture on the flesh. Cover the braai grid with heavy duty tin foil and turn the corners up to make a ridge around the outside. Place the whole fish on the braai grid. Baste continually until the fish is cooked. There is no need to turn it. Serve with salads and bread.
8 Vis / Fish Struisbaai Stokvis Net reg vir 4 mense Bestandele: 800 g stokvis, gesny in blokkies 1 koppie broodkrummels 250 ml room 1 koppie gerasperde mozzarellakaas gerasperde skil van een suurlemoen handvol pietersielie sout en peper Metode: Smeer 'n glasbak met botter, en pak vis onderin. Strooi sout en peper, asook suurlemoenskil oor. Gooi die room oor die vis. Strooi die pietersielie oor. Meng broodkrummels en mozarella, en sprinkel dit oor dis. Bak teen 180 grade vir 30 minute.
9 Hawe Sardyne Vis / Fish Bedien 4 mense Bestandele: 1 koppie rou skulpienoedels 410 g blik sardyne in tamatiesous ½ ui, gerasper Kaas Wit Sous [sommer die pakkies] Visspeserye Rooi Peper Metode: Kook noedels gaar. Meng sardyne met ui en visspeserye. Maak 2 koppies witsous met gekapte pietersielie en rooi peper apart. Pak gaar noedels onder in vuurvaste bak, dan 'n laag vis, laag witsous, weer 'n laag noedels, en weer witsous met gerasperde kaas bo-op. Bak teen 180ºC, oop, vir 20 minute.
10 Vis / Fish Kreef oor die kole Bestandele: rou kreef suurlemoensap vars, gekapte pietersielie Bedruipsous: 250 ml botter, gesmelt 1 groot suurlemoen se sap 5 ml gemengde gedroogde kruie 5 ml gekapte knoffel Metode: Sny die krewe ruglangs oop sonder om dit deur te sny. Breek die kreef oop en druk dit plat. Verwyder die dermpie uit die stert. Meng die bestanddele vir die bedruipsous deeglik. Plaas die kreef op n rooster en bedruip die vleiskant mildelik met die sous en los dit vir 5 minute lank sodat die sous kan intrek. Plaas die rooster met die vleiskant na onder op n staander ongeveer 30 cm hoog en braai die kreef 3 minute lank oor matige kole. Draai dit om en bedruip dit weer mildelik met die sous en braai dit vir 'n verdere 5 tot 6 minute met die dop kant na onder. Bedruip dit weer voor bediening. Sprinkel die suurlemoensap oor en strooi die pietersielie oor.
11 Smoorsnoek Vis / Fish Dalk die vorige aand te veel snoek gebraai en nou is daar oor? Bestandele: 500 g snoek (Dit moet gaar wees en die vel en grate verwyder ) 2 e botter 2 uie, fyn gekap 2 tamaties, in blokkies gesny 2 e vars pietersielie, fyngekap 1 t sout 1 t swartpeper, varsgemaal 2 t suurlemoenskil, gerasper 4 aartappels, gaar en in blokkies gesny Metode: Vlok die vis met n vurk. Verhit die botter in n pan en soteer die uie tot deurskynend. Voeg die tamaties by en braai effens. Voeg die res van die bestanddele by en smoor dit n halfuur lank oor matige hitte en roer dit af en toe sodat dit nie aanbrand nie.
12 Vis / Fish Agulhas Tuna Tert Bedien 4 mense Bestandele: 1 blikkie tuna in olie, fyngemaak 1 gekapte ui 1 koppie gerasperde cheddarkaas 2 eiers 30 ml meel 1 teelepel sout 1 teelepel mosterd 200 ml melk Metode: Braai ui in die olie van die tuna. Laat afkoel en meng dan met tuna en kaas, en sit dit in tertbak. Meng 2 eiers met meel, sout, mosterd en melk. Gooi oor tuna en ui in bak. Bak vir 30 minute teen 180 grade. Heerlik met 'n groen slaai en vars broodjies!
13 Napier Viskoekies Vis / Fish Bedien 5 mense Bestandele: 4 gaar aartappels, in blokkies gesny 1 blik sardyne (pilchards) in tamatiesous 1 blik geroomde suikermielies 1 ui 3 eiers, geklits 250 ml bruismeel handvol pietersielie sout en peper na smaak Metode: Maak aartappels fyn, meng die hele lot, maak plat koekies, en bak in vlak olie tot gaar. Skeepswrak Variasie: Braai die gesnipperde uie tot bruin en dreineer Voeg twee snye droe brood, pietersielie en twee eiers by Meng alles goed. Voeg enige vis of vleis by. Bak in matige olie met sout en peper [of Maggy Fondor] na smaak.
14 Vis / Fish Crispy Beerbattered Hake 1 fillet of hake or other white fish, cut into 4 portions seasoned flour vegetable oil for deep-frying Batter: 1 C (250 ml) flour ¼ C (60 ml) cornflour 2 tsp (10 ml) baking powder about 1 C (250 ml) beer salt and freshly milled pepper Batter: Whisk the flour, corn flour, baking powder, beer and seasoning together until smooth. Keep to one side for at least 30 minutes. Heat a pot of oil. Coat each portion of fish with seasoned flour and dip into the batter, coating well. Gently submerge into the hot oil and deep-fry until golden (a maximum of 6 minutes). Place on paper towels to absorb excess oil and serve immediately with fried chips and Garlic and Herb Mayo. To make a Garlic and Herb Mayo: Mix ½ C (125 ml) mayonnaise with ½ tsp (2.5 ml) crushed garlic and 1Tbsp (15 ml) chopped parsley.
15 Doreen se vis gebak Vis / Fish Bestandele: 500 g Stokvisfillette 1 pakkie uiesop maak aan met 1½ koppie water 30g bees of kaas en uie skyfies (chips) - fyngemaak 250 ml room 1 koppie gerasperde kaas ½ koppie melk Metode: Smeer oondbak en plaas vis in bak. Meng uiesop, room, kaas en melk en gooi fyngemaakte skyfies by. Gooi die mengsel oor die vis. Bak in voorverhitte oond teen 180ºC vir 30 min. (oop) Bedien met kapokaartappels.
16 Vis / Fish Lighuis snoektert Genoeg vir 6 mense Witsous: Maak 500ml witsous en voeg een koppie gerasperde kaas by. Kors: 2 koppies meel 1 koppie botter 1 koppie gerasperde kaas Rasper die botter in meel en voeg die kaas by Vryf alles saam tot krummels en druk in bak met vingers om kors te vorm Vulsel: 1 gaar snoek gevlok Meng die witsous met gevlokte snoek Meng een geklitste eier en 'n halfkoppie melk en vou dit in die snoekmengsel Gooi in kors Strooi paprika bo-op en bak teen 180 vir min, oop.
17 Maklike potbrood. Brood / Bread Bestandele: 1 Kg Witbrood meel 1 pakkie kitsgis (10g) 2 tl suiker 2 tl sout Louwarm water om mee aan te maak Metode: Meng alles saam, maar moenie deeg te styf knie nie. Sorg net dat als goed deurgewerk is. Laat rus vir 20 min. Knie goed en sit in gesmeerde swartpot. Laat rys vir ± 1 uur. (Tot so helfte of driekwart van die pot se inhoud.) Bak by 160 C tot gaar. (± 1 uur)
18 Brood / Bread Mielie-Broodjie. Bestandele: 500 g bruismeel 5 ml sout 1 blik (410 g) blik ingedampte melk 1 blik (410 g) blik roomsoort mielies Metode: Voorverhit oond tot 180 Sif bruismeel en sout saam Voeg ingedampte melk en mielies by en meng goed Skep in gesmeerde broodpan en bak +/- 60 minute of tot gaar
19 Roosterkoek. Brood / Bread Make your own special bread with a braai. Spoonfuls are cooked on a clean grid over low coals. Ingredients: 500 ml flour 15 ml baking powder 2 ml salt 150 ml milk 1 egg, beaten Method: Mix together ingredients, place balls on clean grid, cook on one side until crisp, then turn and cook other side until they sound hollow when tapped.
20 Brood / Bread Stokbrood Hierdie broodjie sal die seunskinders geniet. Volgens die tydskrif Weg, kan jy ook die holtes vul met wors of appelkooskonfyt en kaas. Bestandele: (vir 2 brode) 1 kg (7 koppies) witbroodmeel (of gebruik helfte Nutty Wheat en helfte witbroodmeel) 2 teelepels suiker 1 teelepel sout 1 pakkie (10 g) kitsgis 1 eetlepel olie sowat 2 koppies louwarm water Metode: Meng die droë bestanddele en gooi genoeg louwarm water by om n hanteerbare deeg te vorm. Knie die deeg tot glad. Sit die deeg in n gesmeerde bak en bedek dit met kleefplastiek. Laat staan dit vir 15 minute op n warm plek totdat die deeg in volume verdubbel het. Dis nou reg vir gebruik. Stokbrood: Laat die deeg toe om die eerste keer te rys en knie dit dan af. Rol dit met n koekroller uit op n meelbestrooide oppervlak tot sowat 15mm dik en sny dit dan in repe. Draai die repe om stewige stokkies en braai dit dan oor matige, grys kole tot goudbruin en gaar. Draai dit deurentyd om. Sodra dit gaar is, sal die stokbrood maklik van die stokkies afskuif.
21 Traditional Vetkoek Brood / Bread Quick & Easy: Fill with mince, cheese or anything else that you like. Ingredients 250ml (1cup) cake flour 1 tsp baking powder 1/2 tsp salt 1 egg 125 milk 125 ml oil for frying Method Sift flour, baking powder and salt together. Beat the egg separately and add to flour. Add milk and mix until smooth. Heat the oil in a frying pan and drop a tablespoon of the mixture into oil. Don't make more than four at a time. Fry for two to three minutes on one side, then turn and fry for one minute on other. Serve hot.
22 Potjie Johan se hoenderpot. As daar nou een wenner is, is dit die hoenderpot wat ek jaarliks op ons vier-by-vier toer maak. Bestandele: Hoender dye Uie Olie Groente in growwe stukke gesny 1 liter 100% lemoensap 470 gram Mrs Balls Blatjang sout Metode: Braai die uie in olie in n swart pot tot lekker bruin. Skep die bruin gebraaide uie uit en braai dan die hoender dye bruin in die swart pot. Voeg die lemoensap en blatjang by en kook fluks vir twee ure of tot sag. Voeg die uie en dan die groente by. Kook vir ongeveer 1 uur stadig tot die groente sag is en die sous deur gekook het. Hou die pot nat. Vir n lang sous rasper so twee aartappels in wanneer die groente bygevoeg word. Sout na smaak.
23 Potjie Crayfish Pot Ingredients: 45ml Cooking oil 750ml Uncooked rice 1 Medium onion, chopped 1.5L Water 10ml Dried parsley 1 Garlic clove, crushed Juice of Lemon 150g Sliced mushroom 2 Tomatoes, peeled and diced 1 Packet white onion soup 6 Uncooked crayfish tails Salt to taste Method : Allow the parsley to soak in the water for 15 minutes. Heat the oil in the pot, add the onions, garlic and peppers and brown until soft. Add the parsley water and rice, cook for a 10 minutes. Add the rest of the ingredients except the crayfish. Sprinkle the salt over and cover with the lid. Allow the pot to simmer slowly for 30 minutes or until the rice is almost done. Now place the crayfish tails on top of the pot and allow it to simmer for 15 minutes. Don't cook the crayfish for too long as it could get soggy.
24 Potjie Paella Pot Ingredients : 60 ml Cooking oil 1 Large onion, chopped 500g Pork, cubed 5 ml saffron 4 Bay leaves 1 litre boiling water 2 Chicken stock cubes 5 Chicken thighs, halved 400g Frozen prawns 500g Uncooked rice 250g Frozen green peas Juice of 1 lemon 1 kg Kingklip fillets, cut in strips Salt and pepper to taste 3 Red sweet peppers (seeded and cut in strips) or a 400g tin pimento Method: Heat the oil in the pot. Lightly brown the pepper, onion, pork and chicken. Cover and simmer slowly for a hour or until the meat is nearly done. Add the saffron, bay leaves and chicken stock cubes to the boiling water and set aside. Place the fish and prawns on top of the meat, followed by the rice and peas. Season with salt and pepper to taste. Add the saffron water little by little as the rice boils dry. Simmer the potjie gently until the rice and peas are done and all the liquid has nearly boiled away. Paella should be loose and the rice should not be soggy. Simmer slowly to prevent rice from burning. Add the lemon juice just before serving and stir well.
25 Potjie Johan se lasagne-pot Maak hierdie lasange in 'n swartpot op die oop vuur. Die geheim is om stadig met n rooi wyntjie te begin, want jou hitte moet laag wees. Bedien 6 mense Beskrywing: Braai 2 gekapte uie, 1 pak vars sampioene en 1 pakkie gesnipperde spek saam. Braai 1 kg maalvleis tot pienk, en voeg die uiemengsel by. Pak lasagne bo-op die vleismengsel. [kan dit in twee lae ook doen] Gooi twee blikke fyngekapte tamaties by. Strooi 1 koppie cheddarkaas bo-op. Bedek met 750 ml medium dikte witsous. Strooi weer 'n koppie kaas oor. Sit deksel op. Laat staan vir 45 min eenkant, en kook vir dan 30 minute op lae hitte. Laat dan weer staan totdat die rooiwyn op is of vroulief begin dreig.
26 Potjie Wenner Oxtail Pot Bestandele: ± 2.5 kg Osstert 5 ml Fyn Kruie-Naeltjies (Cloves) 10 ml Worcestershire Sous 2 Groot uie 6 Medium Aartappels 3 Groot Wortels 1 x Chilli Beef Stock Cube Sout & Swart Peper 30 ml Kookolie 5ml sterk Kerrie poeier 15 ml Asyn 10 ml Braaivleis Speserye 2 Pakkies Brown Onion Gravy (Nie sop nie Kan ook een Brown Onion Gravy en een Roast Beef Gravy wees) Metode: In n warm pot, braai die vleis in die bietjie olie tot goed geseël. Terwyl braai, sprinkel naeltjies en Worcestersous oor. Voeg ±1 liter kookwater met die asyn en Bief blokkie by en kook teen hoë hitte vir ±twee uur met deksel op. Roer nou en dan. As water weggekook het voeg nog kookwater by Dis goed as dit paar keer kan droogkook tot braai (Gee kleur en braai van die vet weg Wees net versigtig vir brand). As vleis redelik sag is, voeg n laaste 500ml kookwater by met die die kerrie en braaivleisspeserye in. Verlaag hitte (Lig pot of krap kole uit). Roer goed deur en as dit weer kook sny uie in en daarna wortels en aartappels en prut vir omtrent een uur. Afhangende van hoeveelheid vog in pot en verlangde hoeveelheid sous (Ek hou van baie) Voeg Gravy poeier droog of aangemaak met bietjie koue water by en meng liggies in. Prut vir nog vyf na tien minute en sit voor met rys.
27 Sosaties. Meer vleis / More meat Sosaties are a well known favourite. Normally lamb is used but if you do not eat red meat substitute with chicken. Alternate threading meat/chicken cubes (Approximately 1 kg = 16 sosaties) with red pepper and onion slices. Place into marinade for a day. Ingredients: - Marinade: 2 large onions, chopped 125 ml white vinegar 375 ml dry wine 2 bay leaves 15 ml sugar 45 ml curry powder 30 ml coriander 10 ml salt 2 ml cinnamon 2 ml cumin Method: Heat all the ingredients in a pot, allow to cool. Pour over sosaties and leave to marinade for a minimum of 24 hrs. Braai over hot coals.
28 Meer vleis / More meat Johan se Bosveld Burger. Geen uitstappie is lekker sonder n Bosveld Burger nie. Bestandele: Wyn, lekker fris rump steaks, growwe sout, vars brood rolletjies en botter. Geen borde of slaaie nie, dis verbode! Metode: Smeer die brood rolletjies vooraf. Braai dan die steaks oor vinnige kole, selfs so tussen die vlamme deur. Seel die een kant goed, draai om en sout. Doen dan dieselfde met die ander kant. Probeer om die vleis so min as moontlik te draai. Haal die vleis af terwyl dit nog sag en buigsaam is, liewer te rou as te gaar. Plaas dit onmiddelik in die gebotterde rolletjies en eet dit staan, staan om die vuur. n Skitterende afwisseling is n Veld Hoender Burger. Vervang die rump steaks met dun gesnyde hoender filette. Braai net totdat die hoender gestol het en sy buigsaamheid verloor. Bedruip met een van jou gunsteling souse net voordat die hoender afgehaal word. Plaas dit onmiddelik in die gebotterde brood rolletjies en eet dit staan, staan om die vuur.
29 Boeta se seekos sop/sous Wat Johan darem nie alles vir Southern Staying sal doen nie. Hy het met n seer hart die geheim verklap. Maar ons het sy arm gedraai. Sop & Sous / Soup & Sause Bestandele: 2 fyngekapte uie 5 ml gemengde kruie 2 huisies knoffel, gekneus 50 ml botter melk 125 ml droë witwyn 2 pakkies ontwaterde sampioenroomsop 500 ml room Seekos [mossels, garnale, vis, fyngemaalde geblikte gerookte oesters of gemaalde perlemoen of sommer n mengsel van alles] Mielieblom indien nodig om te verdik. Braai uie bruin in pan en voeg kruie en knoffel by. Voeg dan botter, seekos en melk by om te bedek. Prut tot amper sag. Voeg wyn en soppoeier by en roer deeglik. Verhit tot kookpunt. Voeg room by. Hou die basiese beslag netso vir sop. Maak seker dat die seekos baie sag gekook is. Bedien met vars brood. Verduk die basiese beslag met mielieblom. Dis veral gepas as sous. Die seekos moet net gaar wees. n Wenner is om net 1 blikkie gerookte oesters fyngedruk by die sous / sop te voeg.
30 Sop & Sous / Soup & Sause Marie se Sheba Ook baie lekker as mildelik oor hoender dye gegooi word en in toe skottel in die oond gebak word tot gaar. Rooster dan tot lekker bruin en bedien met gebraaide aartappels en groente. Bestandele: 3 Groot bottels Tomango Tamatiesous 10 groot uie (gekap) 27 Eetlepels Worcesersous (250ml) 9 K water 250 gr margarine 1 K suiker 15 Eetlepels asyn (200ml) 4 hoogvol teelepels droë mosterd 2 pakkies bruin uiesop Metode: Braai uie in margarine. Voeg res van bestanddele by en kook tot gaar. Bottel en bêre op rak. (Nie nodig om in yskas te bêre) Geniet oor pap, roereiers of hotdogs.
31 Johan se Potjie-doepa Sop & Sous / Soup & Sause Potjie Doepa is n moet vir n Vier-by-vier toer of n vakansie by die see. Ek berei my doepa altyd tuis voor. Bestandele: 2 eetlepels Bisto 2 eetlepels bruin suiker 4 eetlepels blatjang 4 eetlepels asyn 2 eetlepels Worcestersous Metode: Gooi in n klein konfyt fles en seël goed. Gooi die doepa oor enige potjie net voor die inhoud gaar is. Kook deur en skep op.
32 Sop & Sous / Soup & Sause Aartappel sop. Bestandele: 6 Middelmatige aartappels 2 Wortels 2 Uie 1 Pakkie hoenderroom / sampioen / aartappelroom sop Sout & peper na smaak 1 Bakkie natuurlike yogurt 1 Bakkie plein smooth roomkaas 1 Bakkie room Bietjie pietersielie Wit wyn (addisioneel) Metode: Kap uie en soteer in botter (moenie braai) Sny groente fyn en kook tot sag. Maak alles goed fyn Voeg res van bestanddele by en laat goed deur kook.
33 Arina se Bobotie 4 Uie baie fyn gekap en gebraai in olyfolie & botter tot bruin. Warm kos / Warm food 500 g Lean Mince 2 TL (of bietjie meer) mild Kerrie poeier 1 TL Borrie Fyn Swart peper Sout na smaak (min) ½ TL asyn ½ K Chutney (Mrs Balls Fruity Mild) ½ K Appelkooskonfyt 1 handvol rosyntjies 6-8 snye witbrood & melk genoeg om die brood in te week. Braai uie tot bruin. Gooi mince en bogenoemde bestandele by. Braai deur. Nadat die brood geweek is tot sag in die melk, verkrummel die brood tussen jou vingers en voeg by die mince mengsel. Kook deur. Roer alles deurmekaar en gooi in oondvaste skottel. Maak kappokaartappels en smeer bo-oor. Bo-Laag: Meng 3 eiers, ½ K Mayonnaise en 1 K Melk Gooi bo-oor bobotie. Lourierblare kan bo-op geplaas word vir versiering. Sit in die oond teen 180 grade tot gaar. (± min.)
34 Warm kos / Warm food Kerrie.
