Course work includes detailed studies of food microbiology, food characteristics and properties, food chemistry, thermal and non-thermal processing and heat transfer, fluid flow, preservation technologies, fillers and packaging technology. Extensive hands-on experience with processing equipment is provided in a pilot laboratory setting. The skills and knowledge obtained by investigators through this course will provide a strong foundation in food safety inspections for manufactured foods. Objectives: Upon completion, participants will be able to: 1. Define food processing, its importance and public health risks 2. Identify food safety hazards and required controls for controlling food safety hazards within the manufacturing process, including the storage and packaging process

2 3. Identify food processing equipment, including process control monitoring equipment, and their function as they pertain to food processing 4. Assess the adequacy of equipment design and construction for food and non-food contact surfaces 5. Identify problematic areas of equipment cleaning and maintenance 6. Evaluate the condition of packaging materials and controls of food safety hazards as related to packaging materials 7. Review the integrity of food product packaging and evaluate the condition of the product within packaging Target Audience: This course is designed for FDA investigators, state inspectors, compliance officers, and supervisors who are actively engaged in the inspection of food manufacturing plants, or review or take compliance action on inspection reports. This course will become a prerequisite for advanced food courses and those seeking level II food certification. CEU: 3.4 PREREQUISITES: Prior to attending, nominees must: 1. Have completed their new hire training curriculum (FDA: Level I, including the audit, or completion of 6 month district training program (includes 3 week new hire program) if hired prior to Jan 1, 2002 and not Level I; State: Basic Food Inspection Training Curriculum as referenced in Standard 2, Manufactured Food Regulatory Program Standards 2. Food Microbiology Control web course series, MIC (States will have completed this web course series in their new hire training curriculum) 3. FDA - Pasteurization web course 4. FDA - Plumbing Controls for Commercial Food Establishments web course 5. Curing, Smoking, Drying of Meat, Poultry, and Fish and the Processing of Fermented Sausages web course 6. Reduced Oxygen Packaging (ROP) web course 7. Fermentation web course Prerequisites 3 and 4 may be accessed at Prerequisites 5, 6, and 7 may be accessed at Food Drug Administration/ Special Processes at Retail Series Courses are free of charge to regulators. The total estimated time of completion of prerequisites 3-7 is 6 hours. COURSE COMPLETION REQUIREMENTS: To successfully complete this course and receive a course certificate with Continuing Education Units* (CEUs), each participant will be required to: 1. Be on time and attend the entire course 2. Participate in class discussions, exercises, workshops and presentations 3. Pass the course assessment(s) Course Assessments/Exam Policy*

3 As an authorized provider of Continuing Education Units accredited through the International Association for Continuing Education and Training (IACET), DHRD courses are required to have an assessment(s) component (knowledge & application) to evaluate the effectiveness of the training presented and the participant s grasp of the material covered. TRANSPORTATION: Travelers must select an airport and flight that is most cost effective to the Government, in accordance with the Federal Travel Regulations. The two closest airports are the Indianapolis International Airport (IND) and Chicago O'Hare International Airport (ORD). The Indianapolis International Airport (IND) is approximately 70 miles (1 ½ hours) from the Purdue University campus in West Lafayette, IN. The Chicago O'Hare International Airport (ORD) is approximately 140 miles (2 1/2 hours) from the Purdue University campus in West Lafayette, IN. Taxis are NOT authorized. Rental cars are NOT authorized. The below airport shuttles are authorized. You must make your airport shuttle transportation reservations at the same time you make your airline reservation as the airport shuttles run on a fixed schedule. 5 Please ask for the Food and Drug Administration Training room block. There is no guarantee that a room will be available after the stated June 26, 2014 deadline. FDA participants do not make lodging reservations through Gov Trip. Please indicate the "room block" code on your Gov Trip travel information. Do not book lodging at any other hotel or facility. Arrangements to use this hotel are part of a FDA contract with Purdue University and failure to meet our obligation to fill the room block may preclude FDA from working with the university on future courses. Hotel Cancellation Policy: No later than 24 hours prior to your intended arrival date to avoid cancellation charges. If you cancel, please obtain a cancellation number from the hotel. Internet Fee for Official Duties: OFS requires preapproval for Internet Fee and must be included in the traveler s Travel Authorization (TA). Internet Fee no longer can be claimed thru a local voucher. DHRD will not reimburse Internet Fee for those travelers required to perform official duties for their office while attending a DHRD Training. The traveler s office is responsible for this expense. A second line of accounting codes must be entered into the TA using the traveler s office funding. COURSE LOCATION: Purdue University Department of Food Science Food Science Building 745 Agriculture Mall Drive West Lafayette, IN See Purdue University website for downloadable map. The Food Science Building is located one block south of West State Street on the east side of South University Drive (Bldg FS on map). The Purdue Union Hotel to Department of Food Science is a 5-block walk. Please bring good walking shoes. Attendees will be in the food pilot every day of the course and standing for long periods of time. Please wear comfortable closed toe shoes every day of the course. ACCOUNTING AND ADMINISTRATIVE INFORMATION When a participant fails to confirm a hotel reservation by the deadline and cannot obtain lodging at the negotiated rate, any additional cost must be paid by the nominee s district, unless the district obtains prior approval from DHRD. Approval requests should be forwarded to the Training Officer for a case by case review by DHRD management.

6 Employees should stay at the designated hotel with the negotiated room block. Travelers must indicate in the Trip Detail section of the Travel Authorization that there is a Hotel Reservation made thru a Room Block detailed within the ORAU Course Announcement. If the employee chooses to stay at a different hotel, the employee will be responsible for any costs incurred above and beyond what the expenses would have been if the employee stayed at the hotel with the negotiated room block. Reimbursement will be made at the negotiated rate. If the employee does not use the room block, the employee must use GovTrip to book the hotel. When accounting codes are released approximately 4 weeks prior to the course, the training officer will send a Travel Authorization Memo to ORA participants and FDA instructors. Indiana does not participate in the Federal Tax Exemption Program Rental cars are not authorized Civilian dress is business casual as defined by your district. Commissioned Corps Officers are required to be in uniform while attending training. Temperature may vary in the classroom and/or pilot lab. Please bring layers of appropriate clothing. Students will be in pilot lab every day of the course. Please dress appropriately. No high heels, sandals, open toe shoes, etc. allowed in the pilot plant. Students will be standing for long periods of time please wear comfortable shoes. Bring your FDA or other official government issued identification for identity verification. Please note: Due to budget constraints, DHRD will no longer pay for UPS return shipment of student manuals, etc. Request & justification to stay an additional night (if applicable): Requests need to be submitted to your Regional Training Officer (RTO) in advance via by the student s supervisor. One request can be provided for all students listed from the same District/Lab. Approval must be granted prior to the student traveling to the course and DHRD is unable to assist in reimbursement for after the fact. The RTO will forward requests to the DHRD Training Officer for review/approval. The request is to include: 1. Reason/justification for request to address factors such as: District policy indicating what is an unreasonable hour for travel (if citing undue hardship to the employee) Available flight times (contract and non-contract) Airports researched (if more than one in the area) Any related cost comparison (non-contract fare vs. staying the extra night) 2. Statement of supervisory concurrence If approved, your voucher needs to include a copy of the granting approval to stay the extra night. After the course, FDA participants should report their actual course time in the Miscellaneous Operations Accomplishment Hours screen in FACTS following all applicable guidance. The data entered should include the appropriate Operation Code {84 for participants} or {83 for instructors} and PAC {03R800}.
