1 Sausage & bean casserole DINNER RECIPE
2 Sausage & bean casserole This recipe relies on good quality sausages instead of buying lots of cheap ones, buy 3 or 4 good meaty, herby ones. This dish makes 4 adult serves. Add mash and some green vegetables for a quick, nourishing and tasty weeknight dinner. Serves 4 people What you ll need: 3 good flavoursome sausages, with real meat and some herbs not meat flavoured 1 onion chopped 1 stalk celery chopped 2 big carrots chopped into small pieces approx 1 cm and microwaved or boiled till tender 1 x 400 grams can of baked beans 1 tbsp plain flour 1 cup beef stock made from 1 tsp stock powder and 1 cup hot water 1 tbsp Worcestershire sauce 1 tbsp brown sugar 1 tsp whole grain mustard Salt and pepper 45 How to make: Heat a frying pan till very hot, prick the sausages all over and fry them quickly until brown. Add the onion, celery and carrots and a splash of oil if needed and cook gently until the onion and celery are soft. Stir in the flour and then add the beef stock. Stir in the baked beans, Worcestershire sauce, brown sugar and whole grain mustard. Fish out the sausages, which should now be completely cooked through. Slice the sausages into chunks and return the sausage chunks to the pan, season with salt and pepper and simmer until sauce thickens. Cook's tips: Why include celery? Celery is umami, which means it gives a big savoury flavour when teamed with other ingredients. Even if you don t like it raw, add it to soups and stews it's pretty cheap, grows easily and adds flavour, vitamins and fibre to the meal. Use this stew to fill jacket potatoes, or roll it up in a flatbread or roti, top it with mashed potato like a cottage pie or serve it on rice. 4 Bacon & bean soup Canned chilli beans are healthy and filling and have loads of flavour, so they make a substantial base for this quick, hearty soup. Serves 4 people What you ll need: 1 tbsp oil 3 rashers bacon, rind removed, chopped 1 onion chopped 2 stalks celery chopped 2 cloves garlic crushed 1 x 400 grams can chopped tomatoes 1 approx 425 grams can chilli beans in sauce I use the hot one, but kids might prefer mild 2 cups chicken stock made from 2 tsp stock powder and 2 cups hot water 25? How to make: In a saucepan heat the oil and add the onion, garlic, celery and bacon and cook gently until the vegetables are soft. Process, blend or mash half the chilli beans with the canned tomatoes then add the mashed beans to the pan. Stir in the chicken stock and simmer for 5-10 minutes. 6 Lazy Sunday sausage ragu This recipe makes 4-5 sausages into a meal serving 4-6. The sausages need to be good herby ones though not, pre-cooked or beef flavoured. Look for packs when on special and freeze them. Serve with a salad or some green vegetables. Serves 4-6 people What you ll need: 5 good herby sausages approx 400 grams 1 red onion chopped 3 fat cloves garlic crushed ¼ tsp dried chilli flakes ½ tsp dried oregano 1 x 400 grams can chopped tomatoes 2 tbsp tomato paste ⅓ cup or 1 big handful chopped parsley 1½ tsp beef stock powder Salt and pepper 2 tbsp sour cream or fresh cream 1½ cups reserved pasta cooking water 500 grams pasta spirals or small shells How to make: Bring a large pan of salted water to the boil and cook the pasta according to the pack directions. When cooked scoop out 1 ½ cups of the starchy cooking water and keep it, then drain the pasta. Place a frying pan over a moderate heat and squeeze the sausage meat filling out of the sausages into the pan. Use a large fork or a potato masher to crumble the sausage meat as it cooks. When the sausage meat is all crumbled and cooked add the onion, garlic and chilli flakes and cook until the onion is soft. Stir in the tomato paste, canned tomatoes and the oregano and cook for 2-3 minutes. Mix the stock powder into the reserved starchy water and stir into the sausage mixture. Add the parsley, season with salt and pepper and when ready to serve stir in the cream or sour cream. Stir into the drained pasta and serve. Cook's tips: Parsley is one of the easiest things to grow: it's not just a decoration, it's an ingredient and a super food packed with antioxidants and phytochemicals.
